Chicken Paprikash I

I wasn't going to review this because I made so many adjustments to it, but after tasting how it came out when I made it, I had to. First, I'm on a very strict diet, so I can't have a lot of fat. I used boneless, skinless chicken breast cutlets and pounded them to about a quarter inch. Then I browned them in olive oil. Removed from the skillet and followed the recipe as stated with the onions, paprika, wine and broth except I doubled them because I love sauces. Then I returned the chicken breast cutlets and simmered until they were done. I did not add the sour cream because of my diet, but I just poured some of the thickened sauce on top of my chicken and it was AWESOME. Full of flavor and what a great flavor it was! I had it with asparagus and I dipped my spears in the sauce on my plate. I can only imagine how good and flavorful this is when made the RIGHT way. Awesome recipe!

White Chocolate Orange Cookies

I do not like orange zest so I used 3 tsp of orange extract (I really wanted to taste the flavor) and I melted the butter before creaming it with the sugars. That's just a technique that I prefer. I also used both baking soda and powder for a fluffier cookie. Again just another technique I prefer. The dough is amazing, and these are some really yummy cookies! I will be making them again and again. The only downfall to this recipe is that it only made about 4 dozen and I'm sure I could've eaten MANY more! :) Oh yes, I also left out the nuts because I don't like them in cookies. :)

Hot 'n' Spicy Buffalo Chicken Salad

Very good! I'd give the dressing a 5 overall, but the salad only gets 4 because it didn't really remind me of chicken wings which is what I was really craving. I wish I could give it 4.5. :)

Sweet And Sour Chicken Meatballs

I'm so glad this site has reviews because I knew what to expect. I too thought that the chicken mixture was runny so I formed meatballs and put them in a pan and baked @ 375 for 25 minutes. Then I let them simmer in the sauce for 10 minutes while the rice was cooking. I let the sauce simmer the whole time. Before stirring in the rice I removed the meatballs and thickened the sauce a little with some cornstarch and water. All in all it turned out very tasty. I think it would be great with cubed chicken breast also but I eat so much of them already that the meatballs are a nice way to change it up! :)

Balsamic-Glazed Salmon Fillets

I don't like salmon. But we are trying to eat healthier so I decided to try it since I love balsamic vinegar. This turned out really, really good. It took longer than 15 minutes to cook, but my salmon was very thick. Another 10 minutes did the trick. I only used 2 salmon filets and marinated them in the mixture for a half hour while I cleaned some veggies and let the oven heat up. I also used marsala wine because that's all I had. Very flavorful and not "fishy" at all, My husband didn't even want to try it because he doesn't like salmon either, but he ended up eating his entire (huge) piece! Very good! Will make again.

Dried Beef Cheese Ball

I only gave this 4 stars because if I wouldn't have read the reviews of other similar recipes before hand I would have also added the onion salt and it would have been too salty. I also omitted the MSG because it's just not needed. I've made this before but just checked the recipe to ensure I had all ingredients right. Its too salty for sure if you add the onion salt, so I just omit it. You can't tell the difference. Sometimes I just add a few more onions to the mixture. It's important to use room temperature cream cheese in order to be able to mix it easily. Easy recipe, great taste!

Uglies

It's really cold outside right now (-20 with windchill) and I didn't want to take my 3 children under 7 out in the cold. My cupboards are bare so I did a recipe search for ground beef because I knew I had some. I stumbled across this recipe and thought, "those just sound weird..." about 10 minutes later I thought, "hey, I'll try it...." I only had flaky biscuits, which kind of worried me, but they turned out great. These are really easy to make and I didn't think they were ugly at all. Actually I thought they were cute. My kids asked what we were having and I told them, "ugly muffins" which they thought was funny. My 6 year old ate 2 of them and my 4 year old at 3! My fiance wasn't home so he didn't get to try them, but I thought they were really tasty for how simple they were. I didn't roll out the dough, I just pressed it flat. I also just eyeballed the BBQ sauce, just enough to moisten. I look forward to making these again for my kids and trying the idea of making them with eggs and sausage! Definetly a very cool little recipe!

Hot Artichoke and Spinach Dip II

I made this recipe for the Ohio State/Michigan game where we had a big potluck. Everyone loved it! I made it the night before in my crockpots inner pan and put that pan in the fridge overnight. The next morning I put it in my crockpot on keep warm for a few hours before the party. It worked perfectly! You have to be careful that your crockpot doesn't get too hot though because the edges did start to brown a little bit. Other than that - it was perfect! I doubled the recipe and since I had about 3/4 cup of sour cream left over from my cheesy potatos that I made I went ahead and threw that in too. It was great, easy to make and I'm getting ready to make it again right now!

Potato Casserole IV

This turned out really good. I thawed the hashbrowns in the microwave and only used cream of chicken (2 cans) because I don't like mushroom soup. I baked it at 325 for an hour because I was cooking a ham and it turned out perfect. I did have one request (out of 8 people eating it) to cut the onions in smaller peices, but everyone else said they were fine. I added a couple dashes of pepper and used a couple dashes of sea salt instead of the regular amount of salt it called for. I'm making it again today!

Elaine's Sweet and Tangy Loose Beef BBQ

I made this recipe this weekend for the Ohio State / Indiana game. I put 4 pounds of chuck/pot roast in the crock pot and covered with water and French onion soup. I had to cook it for about 4 hours before it was done enough to shred. I then saved ¾ cup of the broth in case I needed it (which I did). I used all of the ingredients as listed and did not adjust since I made 3 pounds less than what the recipe called for. I then poured in the ¾ cup of broth and let it cook in the crock pot over night. The beef was very tender and the flavor was really good. We ate probably about 15 sandwiches at least and I still have some left. I only had white wine vinegar so that is what I used, next time I think I will make sure I have straight white vinegar to kick up the tang a bit. Otherwise, REALLY good!

Hard Rock Candy

Very good recipe. I used extracts you buy at the store and made a batch of banana, peppermint, orange, strawberry, vanilla nut, raspberry and butter rum. I don't have a candy thermometer so if you boil on medium heat until you can take a small spoon of the mixture and drop it into a bowl of cold water and it instantly hardens - that's a good temperature. Make sure you use a lot of powdered sugar on the foil so it doesn't stick. It takes about an hour or 2 to harden all the way, but you know you did it right if you can touch it and it's hard after a half hour or so. I made half recipes instead of what is above in case one of them didn't turn out, plus it made a lot.

Bar-B-Q Baked Beans

I was looking for a good bean dish that was easy to make to serve as a side dish for a party with sloppy joes, potato salad, chips, etc. This turned out good. I liked it so much I had 4 servings. I left out the bacon just because I don't like the added fat, but I am sure it would be good with it too. Next time I may dice some onions and toss them in. Yummy!

Fire and Ice Salad

Excellent. This turned out so good. I made it the night before and let it marinate overnight, cutting up the cucumbers and adding them about 20 minutes before. It's so tangy and the dressing would be AWESOME served on a salad. I had 3 people ask me for the recipe for this today when I served it at my sons birthday party. I used orange and yellow peppers instead of green because I love the flavor of them so much more.

Ultimate Maple Snickerdoodles

Awesome cookies! I made these because my chocolate chip cookies are famous at work. A co-worker asked if I could make Snickerdoodles as well as I could chocolate chip. I have never made them, so I searched and found this recipe. They melt in your mouth with a satisfyingly crunchy outside. I did not have maple sugar so I used a mix of white sugar, brown sugar and a small amount on cinnamon to roll them in. I also stirred about 1 tsp of pure maple syrup into the sugar mixture. Not sure if it helped, but it worked! Also, I do NOT use margarine for anything, so I just used the same amount of melted butter. I always use melted butter in recipes - it's the secret to soft cookies! Awesome! I will definetly make these again!

Grandma Ople's Apple Pie

Awesome! I sprinkled a little cinnamon and vanilla between the layers of apples because I love the flavor of both. This is a VERY good apple pie! Side note - do NOT overfill the dish with the butter/sugar mixture. If it drips onto the bottom of your oven - it WILL burn quickly.

Cabbage on the Grill

Awesome! I added a bit of seasoning salt instead of plain salt and used coarse black pepper. You can also add a tsp or so of Olive Oil to the packet and it seems to help it cook a little faster. I make this quite often in the summer!

Pretty good. I don't think they are as good as the restaurants, but my hubby liked them a lot. The recipe makes quite a big batch, halve it if you only have two people eating like I did!
