Amazing Apple Cake

Very good recipe if you like a strong cinnamon taste (which we do). I chopped up 4 small apples and that seemed to do the job. I was lazy to measure the apples but 5 c. + seemed a lot to me. Moist and yummy!

Hillary Clinton's Chocolate Chip Cookies

Used 1/2 c unsalted butter and 1/2 c butter flavored shortening and lessened chips to 1 c. I would've given it a 5 star rating but I made some changes so it gets a 4. My two kids (2 & 5) loved these cookies.

Banana Crumb Muffins

Followed exact recipe and muffins turned out great. I just used a fork to mix up batter -- it's that easy! Yielded 15 muffins and not 10. My two kids (5 & 2) loved them.

Orange Cake

Still had that "boxed" cake taste but was still very good and EASY. Made this 2x -- first using yellow cake mix and then lemon cake mix. Preferred lemon cake mix for more citrus taste. Also added more lemon extract and orange zest to cake mix and glaze.

Banana Oatmeal Crumb Cake

Omitted nuts due to my kid's allergies -- still turned out great! Moist cake and crumbly topping. Thanks for other feedback. Mine was done in 35 mins. Five more mins would have burned it.

Buster Bar Ice Cream Dessert

Yummy. I served it with a variety of nuts and marshmallows and let my guests put what they wanted. I have a daughter who is allergic to nuts and wanted her to enjoy this dessert so she had it with marshmallows and enjoy it, she did.

Eggplant Parmesan II

Used 3 small eggplants and did not need to salt, 1 egg plus a little water, and half of all other ingredients which was just right for a square pyrex. I followed advice of others and baked eggplants 10 mins each side. This was so good. My two kids (2 & 5) dubbed the dish "eggplant pasta."

Fish Fillets Italiano

Awesome and Easy Creamy Corn Casserole

Easy recipe and pretty good but needs a little umph. Used muffin mix instead of corn bread mix. Got a bit confused when I wrote my shopping list as description says muffin mix but recipe calls for corn bread mix? My two little kids did not like it but my husband and I did.

Amazing Corn Cake

I was looking for a BASIC recipe that I could put corn in and found this so I left out 3 ingredients -- cinnamon, raisins and walnuts (due to allergies) -- and still came out great. I did add 1/2 cup of cooked corn I had on hand. There is a slight after taste (hence 4 stars) -- I think it must be canned cream corn or the oil? As suggested by a reviewer, I also put cream cheese frosting. I think I'll try a basic buttercream frosting next time. This cake is something different and a welcome addition to my recipe box.

Super Duper Zucchini Muffins

I didn't have enough zucchini to yield 1 1/2 c. so I added grated carrots. I lessened the nutmeg to 1/2 tsp. The batter seemed thick but in the end, the muffins came out great. It yielded 18 and not 12. Most important to me -- my 2 kids (2 and 4)loved them.

Bacon Mushroom Chicken

I used boneless thighs (they were the only chicken pieces I had on hand), and did season the sauce as it was quite bland when I tasted it. My husband thought the dish was a bit "rich" but my kids liked it.

Chicken or Turkey Tetrazzini

I added the pasta slowly to the sauce to avoid "dryness." I did have some left over pasta. This dish is good but very rich. Next time, I will make this with just one can of soup and use non-fat evaporated milk in lieu of the second can.

I followed the suggestions of the others -- used 1/2 cup white wine (instead of the 1 cup as written in recipe), and added fresh cilantro and scallions. Came out pretty good.

Baked Fried Eggplant

My family thought this recipe was just "okay." As per advice from someone else who rated this recipe, I prepared a marinara sauce to go with it. Without the sauce, 3 stars is all I can give it. My 2-year old ate a lot of it though.

Sour Cream Chocolate Chip Cake I

This cake has a sponge cake like texture -- very light. I used a square 9" pan, baked it for 30 mins, used 1/2 c. mini choc chips as I didn't have the reg chips on hand, made it plain (no cinn-sugar topping) and the cake came out great.
