Oregon Salmon Patties

The ratio of salmon to cracker crumbs and mustard is just right, but I changed the recipe alot. I'm giving it 5 stars because it's hard to get the right ratio of crumb to salmon and egg so it doesn't fall apart when you fry so I give this recipe 5 stars for that. Changes I made: no salmon juice, no parsley, only one egg, sauteed finely diced celery, and green onions instead of regular (not sauteed, just put them in fresh). Seasoned with Old Bay, garlic powder and pepper. Fried in canola oil not crisco. Also CHILL the patties first and they'll hold together much better.

Smoked Salmon Mousse

It was pretty good, but I think I have made better salmon mousse. Sort of blah. Don't add salt, I only added a little and it was too salty. Maybe it was the smoked salmon I bought? I bought Scottish smoked salmon.

Red Cabbage Slaw

I made this tonight as an accompaniment to tri-tip steak from Costco. It was excellent. The flavors went really well with the steak believe it or not. I was skeptical when my husband decided this was what he wanted, but the steak the slaw were perfect together. I made some home-made dinner rolls also. The combination of fluffy soft fresh rolls, tangy sweet cole slaw and carmelized steak was AWESOME. Thanks for sharing the recipe.

Fluffy Pancakes

The best I have ever made and I've been making them from scratch for years. I used buttermilk instead of the milk soured with vinegar. Wound up using more than 3/4 cup, more like 1 cup. I also dribbled a little bit of the melted butter into the batter. Followed the rest of the instructions as written. Result: Tall fluffy light delicious pancakes. Yum.

Grilled Garlic and Herb Shrimp

I liked the seasonings and marinade. I only had time to marinate the shrimp a half hour and they were still wonderful. Will make this again, next time, however, I think I'm going to use smoked paprika.. it needed just a wee bit of zip.
