Butter Bean Burgers

My husband is a vegetarian, but I am not and we both love these burgers. I try to make them pretty thin (about 3/4 of an inch or so) so they'll have a crispier outside (and not such a soft, thick inside). I also add more jalapeno since we love spicy things. Just a great, easily tweaked recipe! These are wonderful served just like a regular hambuger! Thank you!

Honey Cornbread

Good 100% Whole Wheat Bread

This is a fool-proof awesome recipe for wheat bread. It's light and very tasty. In a pinch, I've used 2 cups of whole wheat flour plus 1 cup of bread flour and it's also turned out well. Forgiving and easy!

Mouth-Watering Stuffed Mushrooms

These were a hit at my last party - very tasty and vegetarian friendly. I kept mine warm in the crockpot on low, but be warned you will have to drain the water out occasionally. These guys give off a lot of juice. If you have a large enough crock pot, you could put a cookie-cooling rack in the bottom, then put the mushrooms on top to avoid them drowning. Otherwise, good straight from the oven or even room temp.

Double Tomato Bruschetta

I omitted the sundried tomatoes and the mozarella cheese and stuck with just the fresh ingredients room temp atop the toasted bread slices. Husband and I ate this up! When done this way, it's VERY close the the Stonewood restaurant's bruschetta recipe. Healthy and YUMMY!

Mock Tuna Salad

OK as a sandwich spread, but I probably won't make this again. The vegetarian husband didn't like this and I wasn't nuts about it. It would be better as a spread if you added other things to your sandwich.

Connie's Zucchini "Crab" Cakes

My vegetarian husband loved these - even ate them as leftovers (!). I followed other reviewers' advice and added more Old Bay seasoning, but they were a little too salty for me. Next time I'll add more onion, maybe some shredded carrot and the normal amount of Old Bay. I also baked them - much healthier and just as yummy!

Addictive Sweet Potato Burritos

Good, but it's hard to get over the sweet potato. My husband LOVES any kind of tex-mex food and he agreed that these were good, but we'll stick with regular refried beans next time.

Absolutely Fabulous Portobello Mushroom Tortellini

Loved this. I don't like jarred alfredo sauces, so I took another reviewer's advice and, after sauteeing the mushrooms in the white wine, I added a TBSP of flour (or so) and let that cook a little. Then I added skim milk and a few TBSPs of half-and-half and let that thicken. MUCH lighter than alfredo and ABSOLUTELY YUMMY. Will definitely make this again!

Vegan Brownies

My non-egg- and meat-eating friend alike made these brownies disappear at a work function. I DEFINITELY recommend cutting the oil to 1/4 cup and adding 3/4 cup applesauce. It makes these MUCH more brownie-like. Also, I added some chocolate chips and a VERY SCANT layer of icing to the top (not vegan, because it was milk chocolate), and it got rave reviews. Also kept them a bit more moist. If you add the applesauce, you do not need to overbake. 25-30 mins is just fine. YUMMY!

Asparagus Cashew Rice Pilaf

This is a great dish. Recipe works well; I added 1/4 C chopped mushrooms and it was great. May add carrots next time, too - will definitely make again! Husband wanted a little soy sauce in it, but I thought it was good as is. Pretty buttery. Next time, I'll healthy it up a bit and reduce butter. Could add a tad white wine when sauteeing, too. YUM!

Blueberry Monkey Bread

This got rave reviews at my office. Here's what I did: I used 2 cans (12oz each) of the biscuits. All other quantities werre the same. I compiled it the night before and popped it in the oven in the morning so it would be hot to take to work. I only used half of the sauce (other reviewers said there was too much sauce), but due to the overnight refrigeration, I could have used more. It wasn't as gooey as others described when I baked it, but more moist with blueberry sauce. Was great and can be modified to fit almost any taste. Could also use frozen rolls and compile it the night before - just stick it in a cold oven overnight, and turn the oven on when you get up!
