This is SOOO good! My mom and I have been craving a creamy rich dessert for a while now, but since we're following a low-carb plan, we can't enjoy most desserts. I found this recipe, switched the sugar for no-calorie sweetener (Splenda) and enjoyed a very rich, creamy, rice pudding. The creaminess overpowers and masks the sweetener's yucky aftertaste, so this recipe was quite luxuriant for us carb watcher's. Thanks, sooo good, can't say it enough.
