Pad See Ew (Thai Noodles with Beef and Broccoli)

This was very tasty. I decided to grill the steak and slice it thin, then, add to the vegetable and sauce mixture. I used additional vegetables (pea pods, carrots and broccoli). I had udon noodles on hand. I will definitely make again!

Rhubarb Dream Bars

I pressed the crust into muffin cup tins; I put the filling on top. I served it with a scoop of pineapple coconut icecream (and a strawberry garnish). It was a pretty desert to bring to a neighbor's house for dinner! We all enjoyed it. (PS did not use coconut in the rhubarb bars because I didn't have any),

Apple Peanut Spinach Salad

Wanted to use up ingredients on hand, so I made this with spinach, cashews, red grapes, cantaloupe chunks. We also added a little bit of chicken breast. It was excellent! The dressing was especially good.

French Toast Bake

Used french bread (1 day old) and a few hamburger buns because I ran out of other. Added fresh fruit (rasberries and blackberries) last 10 min. Turned out great. Also made the overnight french toast and others liked the "praline" sauce on top of this as well.

Zesty Turkey Burgers

Suprisingly good, even though it looked dry, it was great -- I used red pepper, because thats what I had on hand, and sharp cheddar cheese. Served on a slice of toasted rye bread. The cheese, mustard pretzels & rye bread flavors blended together really well. Grilled for about 7 min, each side.

Italian-Style Round Steak

Really tasty. Did not dredge in flour, but browned it before work at 6:30 am, added garlic & water. My 18 yo son took it out of the refrig where it was stored in a covered casserole. He put it in the oven at 300 for 2 hours. I came home & finished it on the stove per recipe and brought it to the neighbor's for a home warming meal with bread & whole wheat noodles. Could make it a little healthier by adding any more vegs. Neighbors seemed to really like it.

Grilled Tuna with Pineapple Salsa

Very tasty; I did not take the time to chill the salsa down entirely. I also sprinkled Penzey's Northwood's Fire on the tuna. I placed it on a bed of romaine and added some fresh sunflower sprouts and a few crushed baked tortilla chips.

Cambodian Chicken Soup

This was excellent. It would be good with seafood, too. (I often order a soup called "Fusion" at a local Thai restaurant. It tastes somewhat like this, but is a little more red in color and is slightly sweeter.

Chicken Veronica

My entire family liked this -- but made these changes: Used 1/2 sm can of drained tomatoes instead of dried. Ommitted egg yolk. Added Penzey's Northwoods seasoning & capers. Flavor was delicious! Seraved over thin whole wheat spaghetti. yum.
