Balsamic Roasted Pork Loin
I just finished our meal with this recipe and it was a hit! I had a 4lb pork loin so I doubled everything. It marinated 20 hours. The sliced onion bed for the roast should have been doubled since those caramelized onions were divine on top of the sliced pork. I did not baste the meat while it roasted. The only problem I had was the cooking temperature - it roasted about 2 hours to get to 145 on my instant read thermometer. I tented foil over the roast but after 30 min. it only rose to 153. The confusion over whether the roast was done or not is the only reason I gave it 4 stars. We will enjoy the leftovers too.

Hash Brown and Egg Casserole
I spread the hash browns into a 9x13" pan sprayed with PAM the day before I plan to use. Then I bake those potatoes in the oven at 350 for 20 minutes. Meanwhile I brown the sausage and onion. Once the pan comes out of the oven I top the potatoes with the sausage and cheese. When cooled I cover and refrigerate until the morning. Set the pan out to warm a little before I pour on the egg mixture - then bake as recipe directs. Sometimes to take this recipe over the top I add crisp,crumbled bacon,too. It's a 2 meat treat! You have an almost make ahead brunch casserole that is super delicious.

Grilled Whole Turkey
I really liked this recipe. Our turkey was 12.8lbs. I stuffed the cavity with 3 huge branches of rosemary, an orange cut in half, and half of an onion. I doubled the seasoning and mixed it with a bottle of white wine. Then poured it all over the bird in an aluminum foil pan. Plugged my instant read thermometer into one thigh with the breast side down. We added additional charcoal after an hour and meant to do it again an hour later but forgot. And then it was done. Took about 2.5 hours. The thermometer read 220 so checked another spot too. It rested on the counter for 20-30 min. before we could start carving. Best way to have more oven space. It is a 2 person job adding charcoal and lifting bird in pan off the grill. I hope to use this recipe again.
