Thai Peanut Noodle Stir-Fry

Surprisingly fast and tasty! Followed other's advice and cut down brown sugar and honey to 1 Tbs each or less. Added in peas and tofu.

Vegetarian Korma

I'm of South Indian origin and korma is a common dish, albeit a somewhat difficult one. This recipe provides a nice version, which is a mix between sambar and real korma. Used yogurt instead of cream and added dried coconut as well as coconut milk.

Zucchini-Chocolate Chip Muffins

These are great! Light, fluffy, moist and the right amount of sweetness as well. Reduced the oil just a bit and increased the zucchini a bit to compensate. Also cut down the cinnamon by half. Delicious! And very quick to prepare (30 min total, even with shredding the zuc by hand).

French Veggie Loaf

This is good - needs a decent amount of salt added, though (1 1/2 tsp. I would say). I threw in some herbs as well for added flavour. Cooks well in 45 mins, could even take it out at 40. Used 4 eggs and no added oil.

Blueberry Sour Cream Coffee Cake

Made this for a dinner party last night - everyone loved it! Almost all had seconds (or thirds!) and asked for the recipe. Reduced white sugar to 1.5c as recommended, increased berries to 1.5c. Could cut down on brown sugar as well.

Quinoa Salad with Mint, Almonds and Cranberries

This was great, especially for a hot summer meal. I added in lentils, extra spice, more herbs and used lettuce instead of kale. Used regular onions as I didn't have any shallots.

Hazelnut-Mushroom Pilaf

Very simple and tasty. No extra salt is needed if a bullion cube is used for the broth. Doubled the amount of mushrooms and even more could be used (including other veggies).

Vegetarian Chickpea Curry with Turnips

Didn't have any turnips (and not a big fan), so I used a whole red pepper and spinach instead. Turned out very nicely! Also used basil tomato sauce since I was out of plain sauce.

Downeast Maine Pumpkin Bread

Excellent! Used 1/2 c. oil and 1/2 c. applesauce, reduced sugar to 2 c., added 1/2 c. chocolate chips for each loaf. Reduced heat a bit and baked for 65 mins.

Better Brownies

This recipe was quick and easy, but that's about it. Wasn't very tasty and certainly did not resemble brownies. Might be good for vegans, but I would assume there are better vegan brownies out there.

Grandma McAndrews' Irish Soda Bread

Fast, easy and delicious! It is a bit messy though - the dough is wetter than I expected, which sticks to the counter a lot. Baked in 40 mins. I used 1/3 c. sugar.

Streusel Apple Coffeecake

This is tasty, but quite a bit of work - particularly if you do the streusel by hand, as I did. I used four apples (could have used even more), and half the streusel, which was enough. Thought it was a bit on the dry side; the batter could have used some extra milk/liquid.

Roasted Butternut Squash Soup

A great recipe, though I did make some modifications. I stuck the pumpkin in the microwave instead of roasting it; didn't have any celery; added extra carrots; used vegetable bullion instead of chicken broth, and added a bit of cumin. I don't think cream or anything like that is at all necessary. The cinnamon stick adds wonderful flavour.
