Strawberry and Feta Salad

Reviewed: May 16, 2010
This was absolutely delicious. I used extra virgin olive oil in place of the vegetable oil and I used whole roasted almonds instead of using the slivers b/c the whole almonds are so much less expensive. I started to sliver the almonds myself, but quickly got tired of that and just added them whole and they were wonderful. We really loved this salad. Thank you for the recipe!

Simple Scones

Reviewed: May 6, 2010
These were delicious! I made them by hand as the recipe suggested and did not think they were difficult to work with at all. I don't think dirtying up the food processor is worth it, it's very easy to work by hand and it reminds me of my grandmother baking before all the fancy gadgets were around. I replaced the sour cream with Greek yogurt and I used 1/2 white chocolate chips and 1/2 semisweet chunks. I also used a pizza cutter to cut the scones out. I dipped the pizza cutter in water and stuck it in my sugar bowl and it worked beautifully. I love this recipe and will make it again and again - I can't wait to try other goodies in the scones! Update : I made another batch using butterscotch chips - my favorite so far!

Scott Ure's Clams And Garlic

Reviewed: Apr. 29, 2010
I ended up overcooking mine just a bit because my young children were going to eat them with us and I was worried about undercooking, so they were a little chewy, but even considering that, the flavor was wonderful. The sauce was plentiful and delicious, I will make this again, and I won't cook them so long. My husband was so impressed, it's the first time I cooked clams and it was a big hit!

Corned Beef and Cabbage I

Reviewed: Mar. 20, 2010
This was my first attempt at corned beef and cabbage and it was EXCELLENT. I followed the suggestions of reviewer COOKER476 and added a can of beer to the boiling water, in addition to the spice pace and some garlic. I also made her horseradish cream which I adjusted a little to taste, but I thought it was wonderful on the corned beef. This is my husband's new favorite meal. We really loved it!

Fluffy Peanut Butter Frosting

Reviewed: Mar. 7, 2010
This frosting is very easy and delicious. I used heavy cream instead of milk, just because I had some I needed to use up. I didn't measure the cream, I just poured it in little by little until the frosting was nice and light. As another reviewer pointed out, the butter should be softened, not just at room temperature and it comes out great and spread easily. It's thicker than buttercream, but very easy to spread if you've made it by the directions. My kids and husband just got to lick the leftovers off the beater and loved it too. Great recipe as is...no need to make changes.

Best Spinach Dip Ever

Reviewed: Feb. 9, 2010
I had a friend who used to make this dip for all parties. I knew basically what was in the recipe, but didn't know quantities, etc. I'm so glad to have this. The only thing I did differently was that I put in the whole box of spinach. Delicious.

Meatball Orzo Soup

Reviewed: Feb. 6, 2010
I thought this was great and I took some liberties with it. I had leftover homemade turkey meatballs and Italian sausage from spaghetti that I was tired of eating, so there was still some tomato sauce on my meat and it had some sauted onions, etc, but I just dumped it all in there and I used spinach instead of zucchini. I also increased the amount of orzo - didn't measure, but probably doubled it. It was so good. I almost feel silly rating the recipe with all these changes I made, but I never would have known about using the lemon juice and eggs to thicken and just never would have dared to try this without this recipe as a starting point. Thank you - I would make this again as I did or using the recipe. But it really is a great way to use up leftover spaghetti sauce with meatballs. The tomato sauce changes it a bit, but I liked it and even my 5 year old gobbled it up!

Jam Kolaches

Reviewed: Dec. 15, 2009
These are my new favorite cookie. I cannot get them to consistently stay closed so I gave up and started making them like thumbprint cookies. I made the with peach preserves, fig preserves and raspberry jam. All were delicious, but the fig preserves were too runny - the jam/preserves you use definately make a difference. These taste like the raspberry cookies that Pepperidge farm makes. They are so delicious. I think mine didn't roll properly b/c I didn't make them big enough, but regardless, I love them and plan to use some of them for cookie plates for neighbors and teachers.

Eileen's Spicy Gingerbread Men

Reviewed: Dec. 15, 2009
I love these cookies - I think the spice is just right! I iced these and they are so tasty. This is the first scratch gingerbread recipe I've used and I won't even bother trying others. They are soft, but not too soft - really perfect...thank you so much for the recipe. I am on batch 4 as I am giving plates away to friends and neighbors...yum!

Sweet Potato Rolls

Reviewed: Nov. 27, 2009
I did not do a good job of following the directions on this and they still turned out great. I had so much going on that I let the dough rise overnight and then after I rolled it into balls it sat so long that they way more than doubled in side and I kept trying to "punch them down" to keep them from completely blowing up. The dough was also really sticky and I was really not counting on much...they baked beautifully though and we loved them. My kids (3 and 5) really love them. If I did that much wrong and the still tasted good, I'm impressed! Thank you!

Slow Cooker Stuffing

Reviewed: Nov. 27, 2009
This is so good! I used fairly fresh bread, so I didn't need anywhere near the amount of broth the recipe called for and then I stuffed the turkey with part of it and baked the rest in a greased dish and both were so good that it is now the day after Thanksgiving and I am making a second batch because the family ate it all. I love the thought of doing it in the crock pot, I just didn't need to do that - it worked out great. I will use this recipe from now on..thank you for the recipe.

Slow Cooker Beef Stew I

Reviewed: Nov. 11, 2009
This is so easy and delicious. I was making this to freeze and I ended up making two batches because my husband loved it so much that he ate the first batch up before I could get it to the freezer. I look forward to thawing out batch 2 on a cold day!

Sandra's Persimmon Pudding

Reviewed: Nov. 10, 2009
This recipe is delicious and apparently fairly forgiving. I had 3 persimmons, so that's what I used, I did not measure them, I just peeled them and stuck them in the blender...I also used 1 cup of sweetened condensed milk and 1/4 of skim milk instead of the 1 1/4 c milk it called for...then I added a dash of ground cloves and a dash of pumpkin pie spice. I baked it in a glass pie dish for 40 minutes and it is absolutely delicious and set up perfectly. I like it a little thicker, so the pie dish worked beautifully for my taste. I was not expecting such wonderful results since I so loosely followed the directions. It was a little lighter in color than I remember my grandmothers being, but it was also fluffier - I'm not sure that's the right word because persimmon pudding is by no means fluffy, but regardless, I really like it and I can't wait for my husband to get home and try it. Thank you so much for sharing your wonderful recipe - I will make it again and again! (I also like the fact that there is no liquor in this recipe. Don't get me wrong, I like a good stiff drink, but I don't like alcohol in my food, particularly in my desserts, I think it ruins the flavor of the fruit or chocolate or whatever it's being blended with so thanks again!)

Grandmother's Buttermilk Cornbread

Reviewed: Oct. 30, 2009
So easy and absolutely delicious. I mixed everything in one skillet, like the author suggested and was really worried that the bread would be not be fluffy enough because it just seemed too easy. It was perfect - the best cornbread recipe I've tried....it's a keeper..thank you for sharing it!
