This was absolutely delicious!! I used this recipe as a base and made a few changes and it came out great. I used pearl onions instead of one large onion, they are a pain to peel but I love that they are bite sized. I didn't have an Italian dressing packet so I used 1 ts dried basil, 1 ts dried marjoram, and 1 ts dried thyme, someone gave me one of those dried spice racks for Christmas years ago so I've been looking for an excuse to use these spices. Also instead of whisking together the spices, gravy mix, and ranch packets with water I used a can of cream of celery that I had in the cupboard. Then I filled the crock pot with beef broth maybe like a cup or two so the roast was still poking through. I used washed and peeled baby carrots so much easier and I love carrots so I used a 2lb bag. I cooked on high for four hours I don't think it was as tender as it could have been but still really good. I served this with mashed potatoes, this was a hit. The gravy the juices made were really good. Thanks for the recipe.
