Creamy Chicken on Linguine

I tried this last week after reading all the great reviews. Modified it a little, added more garlic, (but think next time I will add a little more and use a little less onion). I also used half & half and 2% milk. Served it with angel hair pasta and garlic bread, it was wonderful, my husband loved it!

Chicken Enchilada Casserole II

I wanted to try this, but did not want it to be like "dip" -- after reviewing comments and suggestions, I made the following changes and WoW! was it good! It was more like the casserole I was hoping it would be. First, I used corn tortillas instead of flour (I read too many comments about flour tortillas turning to paste) I used cream of celery soup (a favorite)instead of chicken. I cooked the chicken using taco seasoning for chicken and added about 1c corn and 3/4c black beans once the chicken was fully cooked. I also eliminated 1/2 of the sour cream and used a lite version. It came out delicious and can't wait to experiment further. Thanks for all the suggestions, they were very helpful!

Yummy Honey Chicken Kabobs

I thought it would be wonderful based on so many positive reviews -- as several others mentioned, I too, thought it was very salty and my chicken came out very dry (had to be grilled on low heat to avoid burning veggies and to cook chicken thoughly). Next time I may try less soy sauce and will cook the chicken and veggies seperately.

Corn Chowder I

Wonderful recipe! Easy to make, thick and rich. I added a pound of frozen corn and a few more potatoes, used red potatoes and left the skin on them. Will definitely make this again! Thank you.

Creamy Potato Pork Chop Bake

I thought this was ok, I think it would be better with ham or breakfast sausage instead of pork chops; also it was more suited for a breakfast or brunch dish, which I was not expecting. I will try it again next time with cooked sausage links.

Baked Beans II

Awesome recipe, fast and easy! Made these for family get together and they were literally inhaled by everyone! My husband loved the smell of these while they were baking, too. This is my new recipe for baked beans!

Green Punch

I made this for my kids Halloween party, everyone thought it was great! we floated some black plastic spiders (frozen in ice cubes)and served the punch from a large cast-iron stock pot. What a huge hit! Thanks!

Margarita Cake

I have tried this twice...I'm not sure what I am doing wrong since everyone else raves about it. I am a pretty experienced baker, but this cake is not what I expected at all. I tried it first using white cake mix and adding lime juice to get the "margarita" taste. The second time I followed the recipe exactly. Each was a disappointment. Both seemed way too tart; my husband's co-workers didn't even finish the leftovers and those guys eat everything... I was really looking forward to this recipe so I may give it one last try. If anyone has suggestions, please post. thanks.

Cornbread Casserole

Run For The Roses Pie III

This is a great recipe - I made it for my inlaws over the Holidays and they loved it. I also used more Bourbon and Vanilla. This is a super easy dessert that tastes like it took forever - a keeper for us.

World's Best Lasagna

This is a good basic start, however, I felt it calls for too much salt and sugar. I always add a pinch of sugar to neutralize the acid in tomato sauce, however, what I add is based on taste, and taste only. Some canned tomatoes and pastes have a sweeter taste than others, so I use taste as my only means for adding sugar. This recipe was salt heavy for me - I've never added salt to ricotta and won't. Real ricotta has such a smooth, delicate flavor; I can't imagine what salt might do to it. This is also very meaty. Though I prefer the blend of sausage/beef, I think it's a matter of personal preference. I also agree it needs more cheese, and we add different varities. This is a good, basic recipe - add & modify as you wish, it is a solid foundation.

Baked Ziti I

I made this for my son's varsity football team - the only two things I did differently was adding a layer of ricotta (a very thin layer) over the sour cream and dash it with parsley; and mixing the cooked pasta with some of the sauce before layering. I was skeptical about the sour cream too, but decided to give it a try and I'm glad I did. I really liked the taste - and the boys inhaled both pans. My husband is a big fan of baked Ziti, and he said this was one of the best recipes I've made.

Slow-Cooked Short Ribs

My family really likes this recipe. I've made it twice now - first time I coated and browned the ribs, second time I didn't. We liked it better without the flour coating. I also used about 1/4c vinegar and 1/4c worchester. Both times I used BBQ sauce instead of chili sauce. My sauce comes out nice and thick. This one is definitely a keeper!

Baked Potato Salad I

I really wanted to like this - mine was dry and potatoes did not cook all the way. I liked it better before I baked it - it was nice and creamy, after cooking my cheese separated - and though I cooked my potatoes until they were just about done, it didn't seem as though they cooked further. I didn't want them mushy, and thought they'd cook a bit further when baked. They didn't. I may try this again, but it definitely needs modifications and I wonder if the ingredient quantities are accurate. I used fewer potatoes and had to add more mayo/sour cream & cheese just to adequately coat six sliced, boiled potatoes. I felt it was more like a scalloped potato dish.

Pumpkin Pie Squares

Pretty good. I liked the idea of these, however they are much too bland. I double the amount of cinnamon and nutmeg and still thought they lacked something. The crust was very good - the topping a bit sparse for a 9x13 pan. I think I'll stick with pie in the future. Thanks for the idea though.

Sweet Potato Casserole II

This is okay. My family prefers the way I usually make sweet potatoes but I was looking for something different. I think I will try this adding some whipped egg whites and see if I can get a lighter, creamier texture. I would cut down on the marshmallows next time too. Very sweet.

Baked Potato Soup

This is almost there... it came so close to what we get in our restaurant, but fell just short. Even though I cut back on basil, it was too much. I aslo did not care for the chicken taste the broth brought to this soup - though it was far better than those using condensed soups, next time I am going to try vegetable broth - and use a bit less than called for.
