German Lemon Cake

I had a little fresh lemon juice to use up and wanted to make a pound cake for DH to take to work. This recipe was suggested to me. It was very weird to use an entire cup of cornstarch in a cake recipe. I found the cake overall to be dry and plain. My DH ended up pouring more rum over the top. I doubt that I'd make it again.

Lighter Spaghetti Alfredo with Cauliflower

I really am struggling with the review for this. I understand that is a lighter version of a heavy dish. I am a huge pasta fan but don't necessarily eat alfredo that often. I had a half head of cauliflower to use up and made half of this recipe. The only thing I changed was to use half and half and dried basil. I added three chopped mushrooms to the sauce with the cheese. I wasn't overwhelmed with the end result. It had a decent amount of heat. The texture was weird to me. I was happy to make this to give the recipe a "face" but I doubt that I'll make it again.

Chicken, Cheese, and Biscuits

This was gobbled up by two of us for dinner, no leftovers. I made it in a 9x9 Pyrex casserole and used a small (4 biscuit) can of biscuits. I split the biscuits in two to be sure they got done. I used a pint of home canned green beans, drained. I also used a mixture of chicken broth and milk and added one packet of Swanson's Flavor Boost. The sauce really did taste like cream of mushroom soup but was homemade!

Strawberry Lemon Muffins

I had blueberries and a lemon to use up so this recipe fit the bill! I had made another lemon muffin recipe earlier in the day and this batter compared to that one was way thick. I ended up adding more buttermilk to loosen it up. As mentioned, I used buttermilk instead of regular milk. I sprinkled a little Turbinado sugar on top of the batter before the muffins went in the oven. I was glad that this recipe included some wheat flour and brown sugar. They are tasty!

Quick Lemon Poppy Seed Muffins

I was so glad to find a lemon muffin recipe that actually used lemon juice. I had two lemons that I needed to use up so this fit the bill for part of them. The batter was easy to prepare and made 12 muffins exactly. They baked up perfectly in 30 minutes. Easy and delicious! I don't tend to like lemon flavor in baked goods but I ate two of these.

Apple Pie Slices

I halved the recipe and baked in a 9x9" pan. I used three large Cameo apples. I added a little flour with the apples as per other reviews and added just a touch of nutmeg. I wasn't completely sold on the end result but DH thought it was great. I'm thinking it would be better with sour apples. It really does need to cool in order to be bars. If you cut it hot, it is apple pie.

Banana Cake II

I halved the recipe and baked in a 9x9" pan for about 30 minutes. Since I couldn't halve an egg, I used just one egg and a little more mashed banana. I ended up using two bananas for 3/4 cup. The cake is very moist. I topped it with a basic cream cheese frosting. The cake has great banana flavor.

Coconut Banana Pancakes

I had trouble with the pancake batter being too thick. I had to add more milk and then after it sat for 10 minutes, I had to add more. The pancakes are good and the syrup is yummy. They do make a good combination.

Cheesy Chicken Dip

Neither of us were a fan. I halved the recipe and followed it except to add the 1/4 c of Mexican blend cheese since I didn't have any. I just don't think it would have made a difference. We ate it with corn tortilla chips and while both of us ate some, it was not something we wished to repeat. Sorry.

Chicken Tetrazzini

We found this to be good but bland. Chicken tetrazzini typically has mushrooms in it and I was tempted to put in some sliced fresh button mushrooms but wanted to stick close to the recipe at least the first time through. I'm not sure what else would perk up the taste of this but it was needing something. I halved the recipe and baked in a 9x9" pan for 30 minutes.

Cinnamon Black Walnut Ice Cream

This is very good. I used evaporated milk and half and half. After mixing the ingredients I did not chill them since they were already cold. In fact my black walnuts were frozen. I used black walnut extract instead of vanilla. Yes black walnuts are expensive but they are well worth it for the authentic taste of this ice cream. Subbing regular walnuts will not get the same taste. Thanks!

Creamy Strawberry Sandwiches

A pretty simple basic recipe. I think depending on the strawberries, a little sugar could be added to the mixture. This would also make a good dip for fruit.

Ham and Dill Pickle Spread

We liked this a lot. I had a small ham steak leftover from another meal so I whirled it in the food processor and added the other ingredients. I used about 4 midget dill pickles diced. This is great on rye bread!

O.D.'s Strawberry Jam Cake

You have to wonder what you are to do with a cake like this. It is very dense and almost is like a snacking cake but very plain. I used it as base for berries and whipped cream. You really cannot tell that there is strawberry jam in it. I used some homemade jam which actually was the bottom of a jar and was mostly the jelly and not the strawberries which may have been why we couldn't tell it was there. We really enjoyed this with the berries and whipped cream. DH had seconds. Thanks!

Banana Colada

This was okay but really not for me. I had one banana going bad and thought this would be a good way to use it especially since I had cream of coconut in the cabinet and pineapple juice. I was expecting more of a smoothie texture and it really was more like a milkshake which I'm not fond of. I did freeze the banana and it was difficult to peel. I added some ice to make it more "frozen" but it didn't help. It was exceptionally sweet to me. I won't be making this again.

Creamed Spinach with Jalapenos

This was a delicious side dish for dinner tonight. My cooked spinach did not yield a 1/2 cup of liquid so I had to add more milk to make the 3/4 cup necessary. I had decided before starting not to add a jalapeno because I was afraid the pepper jack cheese would be hot enough. In the end it was not. I used Panko bread crumbs instead of regular. I'm glad I found this recipe and probably will be making it again. Thanks!

Tuna Stuffed Mushrooms

I'm sorry but these are just not good. I like tuna and I like stuffed mushrooms but this combination did not appeal to me. I made a half recipe because I actually had a half can of tuna leftover from another recipe. I only use tuna in olive oil. I had a block of swiss cheese instead of slices and I shredded it until I had 1 ounce by weight. I added about 1/4 t of lemon pepper seasonging salt instead of salt and papper. The mixture was very dry and was difficult to stuff in the mushrooms (granted mine were a bit on the small side). I also had most of the mixture leftover when a half package of mushrooms were stuffed. I cannot imagine serving these at a party and won't be making these again.

Whiskey and Bacon Banana Bread

I'm the only one who has tasted this so far and I find it hard to rate. I don't love it but don't hate it. I only made one change to the recipe by using all vanilla extract. I did not want to buy banana extract which I would probably never use again. The banana taste in the final product is not pronounced which probably could be helped with the banana extract. You can taste the whiskey and you can taste the bacon. I think I'm disturbed by the bits of bacon in the bread. They just don't seem to belong. I think for my preference the bacon and drippings could be left out altogether for a better final product. I will update when DH tastes it and then when he takes it to work for his coworkers to try. ***Update: the bread was more appealing when it had cooled and sat for a while. I still am not fond of the bacon bits. DH could not identify what was in it but he did guess alcohol although he thought vodka. The people at his office snapped it up as usual and most had positive reviews. He asked that I make this again only in mini muffin tins.

Shrimply Delicious Shrimp Salad

I halved the recipe in order to use up a 1/2 pound of steamed shrimp leftover from Valentines Day dinner. I was using baby carrots so I just had to estimate how much would estimate 1/2 a regular carrot. I whirled the carrots and onion in my small food processor and chopped the celery fine. I added a couple good shakes of lemon pepper. DH said it was a keeper.

Jacked-Up Tuna

I made the recipe as stated except for halving it and adding 1 t garlic salt and 1/2 t lemon pepper and using frozen peas. It was okay as is. After taking an initial taste though I decided to jack it up even more by adding a hard boiled egg that was hanging out in my refrigerator and about 1 ounce of Velveeta cheese. With those adjustments, I would give it 5 stars. Thanks!
