Tropical Ice Cream

I don't have pineapple orange juice blend but I have pineapple juice and orange juice so I measured 2/3 cup of the two of them together (it was mostly pineapple juice). I also used up bits and pieces of various milks in the refrigerator to make a total of 4 cups of liquid. I used evaporated milk, reduced fat half and half and skim milk. I added the banana cut into cubes, not sliced. I really wanted to mash it but I didn't. I added a dribble of both coconut extract and rum extract. It froze up beautifully and is now in the freezer. My taste of what I scraped out of the ice cream maker was very good.

Lazy Housewife Pickles

These are really good. I want my pickles crunchy and lets face it, you can't can them or process them without them becoming softer. I used two packages of Persian Cucumbers (small 6" cucumbers) from Trader Joe's which worked out perfectly for the two quart jars. I didn't add any onions because I didn't have sweet ones but I most certainly will next time. I mixed the sugar and vinegar together but added the spices directly to the jars so they'd be even. I poured the sugar/vinegar mixture over them and sealed them. Occasionally when I went into the refrigerator I would shake them because all the spices will settle to the bottom. I will be making these again and again. I have just tasted them after 1 week and they are good but still taste of cucumber. I will be interested to see how the flavor and crispness develops after more time. I think I will keep the liquid and spices and just add more cucumbers to the jar. Thanks for the great recipe!

Saltine Toffee Cookies

I used unsalted crackers and unsalted butter. I think it definitely needed some salt. I also did not add the chopped nuts but will next time. This is excellent.

Mormon Scalloped Potatoes

Russet potatoes come in such a wide range of sizes, saying 8 potatoes will get you no uniformity in the recipe. I halved the recipe and used 4 medium sized potatoes. I only had enough potatoes to make one layer in the 9x9" pan. Third, why are we cutting in such large pieces? Cutting them so large makes for awkward serving. I ended up having to mash the potato and sauce together on my plate in order to eat it all together. Fourth, the amount of butter in the sauce is too much. There is a huge grease slick in the pan. I did use unsalted butter and therefore my potatoes needed salt and pepper. It was very bland and greasy before. I had to add some dried minced onion because I didn't have enough green onions. I also used Panko bread crumbs instead of corn flakes. I was happy to try the recipe and give it a "face" but I won't be making it again.

Buttermilk Strawberry Shortcake

I made only the biscuits as per the recipe directions. I halved the recipe and packed the batter into a 1/3 cup measure. It made 6 biscuits. This was exactly what I was looking for. My family had always eaten strawberries with angel food cake but I wanted to try the shortcake. I baked for 15 minutes and it was just a bit too long as they browned a little dark on the bottom and were a little dry. I served with cut strawberries mixed with blueberries and strawberry whipped cream. Delish!

Slow Cooker Italian Spaghetti Sauce

As is, a pretty basic marinara sauce. I followed the recipe except to add 1/4 couple of dried minced onion. The sauce cooked on low all day (at least 10 hours) and did not get thick. It fit the bill for what I needed for dinner as we were having meat filled ravioli. I am going to freeze the remainder and will probably tweak it when I reuse it.

Holiday Chicken Salad

I've seen this recipe recommended repeatedly on The Buzz and decided to give it a try. I'm sorry I've waited so long. I have made this several times and we love it. I usually halve the recipe but I add substantially more green onions. I soak the cranberries before adding too. Thanks!

Tomato Soup Spice Cake

Outstanding! I had half a can of tomato soup to use up after making the Dorothy Lynch salad dressing (recipe here on AR) and was led to this recipe by the reviews on the salad dressing. While being skeptical about putting tomato soup in a cake, I pressed on and made a half recipe. I baked it in a 9x9" square pan for about 30 minutes. I may have overcooked it just a bit because the edges and corners were very dry. I just eyeballed the cream cheese frosting using a partial package of cream cheese also left over from another recipe. I think you could put cream cheese frosting on shoe leather and it would be delicious! This cake was a delicious surprise. Thanks!

Dorothy Lynch® Style Salad Dressing

I made this to go on the Chicken Fiesta Salad (recipe also on AR) per the recommendation of other reviewers for the salad. I was skeptical about this salad dressing - really tomato soup in a salad dressing? But it was very good! I really enjoyed it on the salad and can see how it would be good on any taco salad or the like. I halved the recipe and let it sit all day in the refrigerator. Thanks for the great recipe!

Chicken Fiesta Salad

This was very good! I marinated two chicken tenderloins in buttermilk and fajita seasoning all day, then breaded them in Panko and baked at 350 for 30 minutes. I mixed together a can of black beans, rinsed and drained, with some home frozen corn and mango habenero salsa and heated slightly. I layered the salad greens, chopped green onion, the chopped chicken (turned out I had no tomatoes but didn't miss them). I then topped with the bean/salsa mixture. I had made the Dorothy Lynch salad dressing (from AR) and drizzled a little of that on top. This was very good and flavorful and will be made again. Thanks!

Corn-Bacon Chowder

I halved the recipe and had to use cream of onion instead of potato because it is what I had. I did not use curry powder (not a fan) but the soup did need some seasoning. I added a chopped jalapeno. DH said it needed some cilantro. It was a tasty soup and I will most likely make it again. Thanks!

Chicken and Broccoli Braid

This was very good. I made it at the last minute to go with some homemade soup on a very cold windy night. I halved the recipe but didn't change anything except reducing the dill somewhat. When I make it again, and I will, I will leave the dill measurement as is and reduce the baking time just a bit and add more nuts. The crescent rolls were burned around the edges and on the bottom just slightly. Thanks! Just a small update: these do NOT reheat well. I had halved the recipe and still had leftovers and when I tried reheating in the microwave, the rolls went completely mushy. Maybe a better alternative would be to make the stuffing and stuff individual rolls, rather making the whole thing.

Cream Cheese Squares

These things are diet busters for sure. I had cream cheese and crescent rolls to use up after the holidays and this recipe fit the bill. I added some homemade strawberry preserves on top of the cream cheese layer and it may have made the overall product too moist. But they are mighty tasty. My husband will be taking them to work with him tomorrow and I doubt he'll have any trouble giving them away!

Hearty Hamburger Soup

Really cold here today so I was looking for a soup to make for dinner and wanted to use hamburger. This one fit the bill! I only had 1 lb of hamburger, the bottom of a box of barley which probably was only about 1/4 cup, used no water, one quart jar of home canned tomatoes, 1 can of beef broth (10 oz) and added a bit of Montreal steak seasoning. This is warm, hearty and filling. Thanks!

Ed Zieba's Famous Family Pork Chops

I had two bone in pork chops probably 1/2 inch thick. I baked them at the high temperature for 45 minutes before testing for temperature and they were already above 145 degrees. I couldn't imagine baking pork chops for 90 minutes but maybe that will work for thick chops. I used Montreal Steak Seasoning on the chops and added a little Swanson Flavor Boost chicken flavor to the water. I must say that the pork was tender and flavorful and the onions delicious. Thanks!

Lower Fat Amish Macaroni Salad

I have made this salad twice now in a week and both times I halved the recipe and added about 3 three green onions and half a small red pepper finely diced. I weighed the dry macaroni to make sure I cooked 6 ounces. The first time I made it I added the dressing while the macaroni was still warm and it soaked up the dressing making the salad too dry. The second time I let the macaroni cool completely and the end result was a much moister salad. DH and I have both thoroughly enjoyed this salad and I will be making it again. I think the peas make the salad. BTW for the peas I just dump the frozen peas in the colander when I start cooking the pasta and then dump the cooked pasta and water on top of the peas. That makes the peas the perfect texture for us. Thanks!

Perfect Baked Potato

My market had HUGE baking potatoes so mine took a bit longer to bake and I overdid it just a bit but the inside was very fluffy and nice. The outside did not get crunchy though. Thanks!

Jay's Signature Pizza Crust

This was way too much dough for one pizza unless you like a super thick crust. I wish I'd listened to my instincts and divided the dough. Also the dough was pretty much tasteless. I don't get all the rave reviews which was why I tried this in the first place. I won't be making it again.

Apricot Cream Cheese Thumbprints

I needed a second cookie for a holiday luncheon and had some cream cheese to use up so this recipe fit the bill. I halved the recipe. I skipped the lemon juice and zest and instead added some almond and vanilla extracts. I unfortunately had only some cheap raspberry jelly to use which ran out of the cookie and all over the cookie sheets but that was the fault of the jelly. I will be sure to make these again with the lemon flavoring and the apricot jelly. Thanks!

Creamy Corn Soup

This was the second of two soups that I made for a holiday luncheon. I used frozen corn that we cut off the cobs and froze last summer. I made approximately 1 1/2 times the recipe and didn't measure either the chicken broth or the milk (which I used half and half for). I used 4 ounces of cream cheese (half an 8 ounce block). I also added a healthy dose of dried chives and half a jalapeno diced small. This soup was a hit and will be made again. Thanks!
