Lemon Zucchini Bread

I made two different zucchini breads this being the second I tried. My husband ate some of the first and declared it delicious and then had some of this one. This one was fantastic! I've made it several times already this week and it disappears quickly. I've never been a lemon fan but I really like this too. Thanks!

Malaguena Lemon and Dill Vinaigrette

Healthier Marinated Grilled Shrimp

I followed the recipe except for using V8 juice instead of tomato sauce (its what I had). They turned out very well. I marinated the shrimp about 2 hours.

Rosemary Ranch Chicken Kabobs

Made this for a 4th of July potluck picnic where we were asked to bring something for the grill. I used homemade ranch dressing and about 2 pounds of chicken tenderloins and fresh rosemary. The only flavor I could really detect on the chicken was rosemary. They were good and went very quickly. Thanks!

'Chinese Buffet' Green Beans

I have been trying to figure out how to duplicate the beans on our local Chinese buffets and this is it! I used hericot vert from Costco, which I blanched for a few minutes before starting this recipe. I didn't measure anything as I was just making enough for myself. I added some red pepper flakes and used sesame oil for the saute. Excellent! Thanks!

Twinlow Peanut Butter Cookies

A perfectly fine ordinary peanut butter cookie. I cut back on the recipe to 20 servings since I'm not feeding a camp full of kids and it did make 20 large cookies. I didn't change the recipe at all other than the quantity and using chunky peanut butter. They are tasty and I'm sure if feeding a camp full of kids, this recipe will be fantastic.

Oatmeal-Walnut-Raisin Chewies

Followed directions and overall it worked out fine. Processing took a bit longer than instructed even though I let the butter sit out all day. I baked on parchment paper and at 12 minutes the cookies were overdone. I backed it down to 11 minutes and they were much prettier. I don't think microwaving the nuts and oats actually "toasted" them. DH said they were great and would like it if I made them again.

Rosemary Orange Pound Cake

I used Splenda/Sugar blend so that diabetic husband could enjoy this too. I also used lime zest instead of orange simply because it is what I had on hand. I think a 9x5 pan is entirely too big for this recipe. It would do better in a smaller loaf pan or possibly mini loaves. Because of the minimal amount of leavening, it raised very little and therefore was a thin pound cake loaf. I tasted this while still warm and really only got a sweet citrus flavor, no rosemary. I did use fresh rosemary. Uncertain whether I would make this again.

White Bean Dip

This is very good! I sort of halved the recipe because I used one 19 ounce can of cannellini beans. I added 2 whole cloves of fresh garlic, 2 T of olive oil, 1 T of lemon juice and just a generous amount of fresh cilantro as well as some red pepper flakes. I need to either make some pita bread or get some because so far I've only tasted it off a spoon but it is oh so delicious! Thanks!

White Bean and Tomato Salad

Excellent! I added about 1/4 pound of farfalle pasta. When I was making the dressing I accidentally added 2 T instead of 2 t of the red wine vinegar, so I added an additional 1 T of olive oil. With the addition of the pasta, the extra dressing was just right. Thanks!

Fabulous Cilantro Pesto

Followed the recipe exactly. Since the recipe called for walnuts or pecans and I had both, I used both! I didn't heat the pesto since it was fresh made, room temperature and going on hot pasta. I really wonder if cilantro has a stronger taste at different times of year because I got very little cilantro taste from this. I honestly think given a blind taste test I wouldn't have been able to identify it. I liked the addition of the vinegar - it gave it some zip! I'm anxious to try this again after the pesto sits for a day. Thanks!! ***Update: I made this for the second time and used all walnuts and romano cheese. I added the full amount of cayenne which was too much. On some leftover pasta for lunch it was good but I'm still not convinced that I like pesto.

Chef John's Ranch Dressing

I kept hoping that the flavors would develop in this but alas even after 72 hours, this still tasted like slightly flavored mayonnaise. I didn't have Italian parsley and used regular dried parsley flakes but I did use fresh tarragon and a lot of it and still there was no herb taste. Even my mayonnaise loving dh complained that this tasted like nothing but mayo. I ended up making up some dry ranch dressing mix from another AR recipe and adding it along with more sour cream. I hope that is tasty. :-(

Tarragon Tuna Salad

I had some fresh tarragon and chives that needed using so I made this early yesterday morning so it would have time to "cure." I ate some on a sandwich for lunch and frankly it had no tarragon or chive taste at all. DH had some for dinner and after one bite dumped a bunch of dill relish in his. I ate the leftovers for lunch today and it had a very slight taste of tarragon. Overall I would say this didn't do anything for us and I probably won't make it again.

Hash Brown Waffles

We are having a snowy day and since I had frozen shredded potatoes in the freezer this seemed like a good thing to try. I let the frozen potatoes thaw although they were still cold and I added a diced onion that I carmelized before adding. I must say that like waffles, my first one did not come out. My mistake was not spreading out the potatoes but piling it up in the center just like waffle batter. That didn't work and it was a mushy pile after 20 minutes. Once I spread it out thin, they cooked crispy and delicious. I believe I would add more than one onion next time (this one was rather small) and a little more garlic salt. Overall this was a good experience and we will do it again. Thanks!

Hot Chicken Salad III

This was good but not great. I accidentally used cream of mushroom soup instead of cream of chicken. And I forgot the onions. I don't think these changes made a big difference. I added some garlic salt and some fresh tarragon (because I had some that needed using). I had some sourdough bread that was getting old so I used it for the bread topping. DH ate and declared he liked it but I doubt I'll make this again.

Tarragon Rice Salad

I really don't know how I feel about this salad. I'm new to fresh tarragon after enjoying it in chicken salad. I had some leftover from Christmas and looked for recipes to use it up. I do enjoy rice salad and even though this sounded like a weird combination I thought I'd try it. I used short grain brown rice and cooked it in broth. I had to used dry chives. I did not mix in the chopped egg but rather kept them separate to sprinkle on top. I may try this again when I have fresh chives and perhaps use plain rice (not cooked in broth).

Frosted Pumpkin Bars

For me this was more like a cake than a bar. I halved the recipe and used 2 eggs but using more eggs generally makes things more like a cake. I used a 13x9" pan and store bought icing because I had some to use. While most of this went to the office with my husband, but I tasted a small bit and it really didn't taste like anything special. I doubt I will make it again.

Artichoke and Black Olive Baked Chicken

This was a hit at our Christmas pot luck. We used all chicken drumsticks. Also used a little more white wine than called for just to use up a bottle. Everyone was calling it Mediterranean chicken. Thanks!

Pumpkin Frozen Yogurt

I had approximately a cup of pumpkin leftover from another recipe so decided to make this for Thanksgiving dinner. It got mixed reviews. I thought it tasted exactly like pumpkin pie. One person didn't like the sour yogurt taste. One person thought it was overly spiced. Others really liked it and asked for the recipe. I will make this again. I used regular lowfat vanilla yogurt although I will try with Greek yogurt next time. I used honey flavored bourbon instead of brandy. And I used half and half instead of heavy cream.

Sauerkraut Soup

This was very good. You have to get past the idea of the combination of these ingredients but it really does work. I had some sauerkraut that was leftover from another recipe which had apples, carrots and caraway seeds in it so I used it. I did not use the thyme as I am not a fan and the sauerkraut was already seasoned. I halved the recipe but used 4 Tablespoons of flour to be sure we got a thick soup. It actually turned out too thick and I had to add some chicken broth. Thanks for educating us on a different kind of soup. We will be having this again.
