Wisconsin Cheese Curd Potato Salad

I don't have the luxury of having access to authentic Wisconsin cheese curds (oh how I wish I did) so I cut some cheddar into small cubes. I cut the recipe in half and used one large Russet potato. This will be something that I make again this summer. Thanks.

Excellent Basting Sauce

I thought I had Splenda but I didn't so I ended up using about 1/3 cup of regular sugar. The sauce is awesome on grilled shrimp!

Navy Beans and Greens with Bacon and Garlic

Definitely a keeper in our house. I didn't use an entire head of garlic but it was still good. It did need salt and pepper though.

Cocoa Banana Bars

I was wanting a recipe other than banana bread or muffins to use up three very ripe bananas. I can't say these are really "bars" per se, they were more like a snacking cake. If you are looking for something like brownies, this isn't it. I like the banana and chocolate combination. I doubt that I would make these again.

Strawberry Bread

I was looking for a different recipe to use up some past their prime strawberries. I don't know that this was anything special but it fit the bill. My husband had a bite without knowing what it was and thought it was banana bread. I doubt that I will make this again.

Blue Bacon Stuffed Mushrooms

I must admit I really didn't measure the ingredients but used what I had available and they still turned out great! I had about 5 leftover strips of bacon and 1/2 of an 8 oz block of cream cheese. I used 8 white button mushrooms and still had some filling left. I don't mind because I can make some more tomorrow! Thanks!

Salt & Sugar Shrimp

This definitely makes succulent shrimp. I used a package of Trader Joe's frozen tail on deveined shrimp. I also used a lime instead of a lemon because that's my preference. The lime zest left a bit of a green tinge to the shrimp but they were still delicious! Thanks Laurrie!

Beef Nacho Casserole

Made this for lunch today and it was AWESOME! I added commerical taco seasoning to the ground beef. I had some leftover Black Beans, Corn and Yellow Rice (recipe here on AR) so I added that as one of the layers instead of just corn. I used a Mexican cheese blend for the cheese and Hint of Jalapeno tortilla chips.

Black Beans, Corn, and Yellow Rice

I really didn't know what to expect from this recipe as I've never made one of those yellow rice packages before. But this got such good reviews I thought I'd give it a try and I'm glad I did! I used home frozen corn (fresh off the cob before freezing) and the juice of a whole lime. I also added some fresh cilantro. I ate it plain for lunch but am looking forward to eating it in a tortilla shell tomorrow for lunch. Thanks!

Rice-so-Nice

This is good for a base recipe. I used Arborrio rice as it is the only white rice I had. Most reviewers said to cut back on the butter which I did to 1/4 cup. I didn't have the french onion soup so I used one envelope of Lipton onion soup mix and added a can of water. I was making this for my husband who hasn't been feeling well and wanted something mild and easy on the stomach for lunch. He loves mushrooms so I used two cans. He loved the rice and ate two bowlfuls.

Rosemary Biscuits

Finally some light and fluffy biscuits! I made as directed except I didn't measure my fresh rosemary and I don't think I used enough because you really couldn't taste it (but that was my fault). I'm so happy to have found a way to make biscuits and not hockey pucks! Thanks.

Margarita Grilled Shrimp

I have never grilled shrimp before but in an effort to eat healthier I had bought some frozen deveined tail on shrimp from Trader Joes. I followed the recipe for the marinade exactly except for using rum instead of tequila (don't have tequila in the house). I poured the marinade over the frozen shrimp in a plastic bag and let it sit for about 90 minutes on the counter. The shrimp had thawed and and actually had started to cook with the lime juice. We enjoyed the grilled shrimp a whole lot and will be doing this again.

Grilled Sweet Italian Chicken Sausage with Tomato Cream Sauce Over Linguine

I don't like big hunks of sausage with my pasta so after cooking the sausage, I ran it through the food processor to resemble hamburger. I used home canned plain tomatoes and added dried basil instead of oregano (just a taste preference). I also didn't use linguine but any pasta will do. This is a good recipe. Thanks!

Ranch Dressing II

My first attempt at homemade ranch dressing. I find I am no longer a fan of the bottled stuff. It tastes like chemicals to me. Since the option to add buttermilk was in the notes, I used 1/2 cup mayo, 1/2 cup reduced fat sour cream, and 1/2 cup buttermilk. I was a little heavy handed on some of the spices too (chives and onion powder). I think this would be over the top with real chives. Hubs loved dipping his cucumber wedges in it. Thanks!

Chive Mushroom Soup

I'm not a fan of mushroom soup so I didn't personally taste it but Hubs declared it a keeper and said he would eat it every day. I rough chopped the mushrooms I had left and I may have had more than 1 cup. I used chicken broth for almost the entire 2 cups of required liquid with about 1/4 cup of skim milk just to make it creamy. I dumped in about a T of dried chives. I can't wait to have fresh chives to use this summer.

Cheddar Bay Biscuits

These are absolutely delicious! I halved the recipe and dumped in what shredded cheese I had (don't know how much it was). I used extra sharp white Vermont cheddar. I also used buttermilk instead of water because I had just enough left to use up. I also added a couple of dashes of Old Bay Seasoning but I'm not sure it made any difference in taste. I used the topping as directed and these are yummy! I will be making these again.

Cheesy Pesto Bread

I can't decide if I like this or not. I think the garlic salt is overkill and is not necessary. Like another reviewer, this to me is more like sauceless pizza than garlic bread. It was good for a Sunday evening snack.

Pasta Primavera with Italian Turkey Sausage

I found this recipe when looking for something to do with some baby zucchini. I love anything pasta! I used two spicy Italian chicken sausages which I cooked and then ran through a food processor to grind up like hamburger. I also used a can of plain petite diced tomatoes instead of the fresh. Very tasty!

Cilantro Tomato Corn Salad

I used one regular tomato (baseball sized), frozen corn that I had cut off from fresh last summer, and a small amount of lemon pepper instead of the Mrs. Dash. I couldn't imagine butter in a salad so I used olive oil instead. Refreshing hot weather salad.

Easy Mac and Cheese Muffins

I halved the recipe but used the whole egg. I added minced onion, red pepper flakes and Worcestershire for additional flavor after reading the reviews that said they were bland. I used extra sharp cheddar and romano cheese with no additional cheese on top but just a sprinkle of Panko on top. These are very good and a simple way to make individual portions of mac and cheese. Thanks! I will make them again.
