Pasta and Cauliflower

I did what most other reviewers did and roasted the cauliflower florets. I used fresh garlic, added a pinch of red pepper flakes and totally forgot the Parmesan. I really liked this and will make it again. Thanks!

Tomato Dill Soup

I truly did not expect to like this. I am not in general a tomato fan. But I have to say I loved it! I used home canned tomatoes and added fresh dill and a pinch of red pepper flakes. I too was tempted to add some sort of cream but once it cooks down and you use the immersion blender on it, it becomes creamy! I will make this again.

Caribbean Apple Banana Bread

This stuff is AWESOME! I had some bananas and applesauce to use up and went searching for recipes and found this one. I however did not have zucchini so I used some firm, crisp, not too sweet apples instead that I put through the food processor, peel and all, and cut into little bits. I don't know what kind of apples they were but they weren't overly sweet. I also used unsweetened coconut since I had the sweetness of the apples. 40 minutes baking time was perfect for me. I will be making this again!

Caribbean Zucchini Bread

This stuff is AWESOME! I had some bananas and applesauce to use up and went searching for recipes and found this one. I however did not have zucchini so I used some firm, crisp, not too sweet apples instead that I put through the food processor, peel and all, and cut into little bits. I don't know what kind of apples they were but they weren't overly sweet. I also used unsweetened coconut since I had the sweetness of the apples. 40 minutes baking time was perfect for me. I will be making this again!

Oat Applesauce Muffins

I guess I got what I expected from these, they are a "healthy" muffin. I don't know that I'd make them again. I soaked the old fashioned rolled oats in the buttermilk for about 3 hours while I did errands. My only change in the recipe was adding some diced dried apple bits along with about 1/2 teaspoon of vanilla and a little turbinado sugar on the tops. The muffins did not rise at all, they stayed perfectly flat in the muffin tins. Can't blame my baking powder because I opened a brand new one for this recipe.

Spicy Ranch Dressing

I made this to have with homemade French fries tomorrow but I was having leftover pizza for dinner tonight and decided to taste test the mixture with the pizza crust. After sitting about an hour, this stuff is already delish! I had a small golf ball sized red bell pepper and I used the whole thing. I also used an entire jalapeño sans the seeds and membrane. I had an old opened package of Hidden Valley Green Onion Dip mix so I used the rest of it. I don't know how much was in there. I added no hot sauce. I don't know how much cilantro I added either. I put the red pepper, jalapeño, cilantro, dip mix and a part of the buttermilk in a small food processor and whirled them all together. Then added the rest of the ingredients. This will be my go to ranch dressing from now on! Thanks!

Southern Pimento Cheese

I ended up adding more than the 2 cups of shredded cheese just because it didn't seem cheesy enough for me and also about 1 t of Worcestershire. I did not add the jalapeno although I did make jalapeno poppers using this pimento cheese. This stuff is very good.

Caramel Corn Treat Bags

This stuff is awesome! Darling husband made popcorn this afternoon to eat while watching football so I snagged some for this recipe. I followed the directions exactly and I feel like the caramel is just slightly burned. I may cut down the baking time just a bit. Thanks!

Pepperoni 'n Cheese Crescents

I used cubes of mozzarella cheese instead of shredded because I had a block of cheese to use. I think some garlic salt or powder inside the crescent would bump up the flavor. These are a quick and easy lunch time or snack treat. Thanks.

Traditional Lemon Meringue Pie

While this is the very first lemon meringue pie I've ever made and it turned out beautifully, it really wasn't the taste of a lemon meringue pie that I am used to. I doubt if I'll make it again.

Parmesan Garlic Rolls

I didn't get a real garlic flavor from these. I'm wondering if real chopped garlic would have made a nicer addition. I chose to make cloverleaf rolls (3 small balls in each muffin cup). If I make these again I would probably tweak the recipe a bit to make them more flavorful.

Easy Weeknight Chicken Pot Pie

Not a fan. I thought the sauce tasted like tin can. I made individual pies with lattice top in ramekins with homemade crust. I used my own vegetable mix and added a potato. I will go back to my own homemade pot pie recipe.

Italian Chicken Sausage Risotto

I've seen risotto made on TV many times but had never made it or eaten it. I love rice. But this recipe did nothing for me. I'm not sure what all the excitement is all about. I won't be making this again. I did not alter the recipe at all except to cut it in half.

Italian Chicken Sausage Stuffed Portabellas

I am a fan of stuffed mushrooms but did not care for these. I wish I had done what others did and just stuffed white button mushrooms, I think they would have turned out better. The portobellos did not stand up to the stuffing and it went all over the pan. The stuffing was not special. I added a handful of chopped fresh spinach but that did not even liven it up. I won't be making these again.

Cheesy Southwest Chicken Skillet

I really have to admit I went into this recipe not expecting much but was pleasantly surprised! Of course I tweaked it to my tastes. I didn't have any cooked chicken so I used chicken tenderloins and pan fried them with taco seasoning. I then added the Progresso Starter and the 2 T of chopped green chilies (didn't want to use a whole can!) and boiled it a bit to thicken the sauce. I was really afraid of it being more like soup so I only added about 2/3 of the can of Starter. Then added the cooked mini penne. Stirred that up and grated some colby cheese on top, topped with chopped tomatoes. I am pleased with this recipe and may be making it again.

Pasta Fazoolander

I was wanting white bean soup and came upon this recipe. It was perfect because I had some frozen tortellini to use up (although they were spinach) and I had fresh spinach. The soup fit the bill as a quick dinner but I don't think I'll make it again. I'm not a fan of oregano but wanted to make the recipe as stated. I'm not downgrading it for that. I feel like the soup as is is just missing something.

Sausage and Vegetable Calzones

I made these today for lunch because I had the cooking cream and refrigerated pizza dough to use up. I used homemade Italian sausage, onion instead of red pepper, Parmesan instead of mozzarella and added Pepperoni. I only used about two Tablespoons of cream. I think more than that would have made it too juicy. These were very good and can be altered to personal preferences.

Shrimp Scampi Bake

I halved the recipe because I was using a 1 pound package of colossal shrimp from Trader Joes. I used unsalted butter which means the sauce needed salt. I added a pinch of red pepper flakes (which actually wasn't enough) and subbed white wine for the lemon juice. Next time I may use wine and lemon juice. Overall it was excellent and disappeared with great raves. Thanks!

Mellissa's Grandma's Blackberry Cobbler

I think this was overly sweet and I cut down the sugar in the berries. Maybe that would be a function of the berries. This isn't my favorite blackberry cobbler but not the worst. I think using juice instead of water and cutting down the sugar would help tremendously.
