About this Cook
I'm so glad to have the time to cook and bake again although I've got fewer to cook for now! Luckily DH's work cohorts love my food!
My favorite things to cook
I have rediscovered my love for cooking and baking now that I have time to do it again. I especially love making breads and rolls but have also tried to expand my horizons with savory items. I am a notorious carb-aholic.
My favorite family cooking traditions
We always had the tradition of pork and sauerkraut on New Years Day for luck. I always make Monkey Bread on Christmas morning (the kind with butterscotch pudding and frozen rolls). I try to make a nice somewhat fancy dinner for whatever family is available on Christmas Eve before church services.
My cooking triumphs
My one and only attempt at Thanksgiving dinner for the entire family went well.
My cooking tragedies
I really have no "tragedies" but I cannot get the hang of homemade biscuits.

Rosemary Orange Pound Cake
I used Splenda/Sugar blend so that diabetic husband could enjoy this too. I also used lime zest instead of orange simply because it is what I had on hand. I think a 9x5 pan is entirely too big for this recipe. It would do better in a smaller loaf pan or possibly mini loaves. Because of the minimal amount of leavening, it raised very little and therefore was a thin pound cake loaf. I tasted this while still warm and really only got a sweet citrus flavor, no rosemary. I did use fresh rosemary. Uncertain whether I would make this again.

White Bean Dip
This is very good! I sort of halved the recipe because I used one 19 ounce can of cannellini beans. I added 2 whole cloves of fresh garlic, 2 T of olive oil, 1 T of lemon juice and just a generous amount of fresh cilantro as well as some red pepper flakes. I need to either make some pita bread or get some because so far I've only tasted it off a spoon but it is oh so delicious! Thanks!

Fabulous Cilantro Pesto
Followed the recipe exactly. Since the recipe called for walnuts or pecans and I had both, I used both! I didn't heat the pesto since it was fresh made, room temperature and going on hot pasta. I really wonder if cilantro has a stronger taste at different times of year because I got very little cilantro taste from this. I honestly think given a blind taste test I wouldn't have been able to identify it. I liked the addition of the vinegar - it gave it some zip! I'm anxious to try this again after the pesto sits for a day. Thanks!!
