Spinach Rice Casserole

I substituted chicken stock for the water and added diced chicken to make a casserole. Written as is, I think it would be a little bland. I added fresh garlic with the onion and seasoned the chicken for additional flavor. With the small changes I made my family enjoyed and asked for it again.

Italian Spaghetti Sauce with Meatballs

I rarely make meatballs because mine never turn out right. They are always too dry or over cooked. I used only the meatball portion of the recipe and they came out great! I was worried about not precooking them, but they were fully cooked and moist!

Creamy Avocado-Ranch Dip

I was looking for an alternative for a creamy avocado dip I make because I didn't want to smell up my kitchen (it involves boiling fresh tomatoes and jalapenos). This dip was very similar in flavor without as much work. I did add an extra avocado because I didn't feel 2 was enough. I didn't have celery salt so I added a little onion powder and an extra dash of salt. I also added extra hot sauce for more kick. The ranch flavor was a little overpowering. I plan on making it again. Next time I will prob start off with half the ranch packet and add as needed.

Pizza Pasta

This was a nice change from spaghetti, but still just as low cost. I used rigatoni as that is what I had on hand. One jar of sauce didn't look like enough so I added another. I also added bell peppers and garlic with the hamburger and onion. My whole family LOVED it and my 4 year asked for it again tomorrow. This is definitely a keeper :)

Grandma's Green Bean Casserole

When I was asked to bring the green bean casserole for Thanksgiving I cringed! Not being a fan of the mushroom soup version I was thrilled to find this recipe. Only made minor changes and some extra seasonings. It was a hit! I plan on taking it to my husband's family Thanksgiving on Sunday!

Chili Dog Casserole I

This was pretty tasty and I'm not a huge fan of hot dogs. I almost left off the mustard as it seemed odd, but I trusted the advice of other reviews and left it. I'm glad I did; it gave it an extra kick! This was an easy low cost meal that will get added into my rotation.

Cheesiest Potato Soup

This was my first attempt at making potato soup and it tasted great! I did follow the advice of others and added a little flour to thicken it up a bit. We topped with bacon and cheese. Will deff make this again! Thanks for a great recipe :)

Hot Cocoa Mix in a Jar

I followed the other reviewers idea of blending all together and I didn't have any lumps in the bottom. I followed measurements as listed and sampled it before putting in the jars. I thought it was very watery and all I could taste was the cream. I added the remaining pudding packet (I only had 3.5 oz so used 1 1/2 boxes), a little extra sugar and chocolate drink mix. I liked it better with these additions. The second cup I sampled was chocolaty and creamy!

Hamburger Potato Casserole

I thought this was a great recipe that you can do many things with. I subsituted cream of chicken for the mushroom since my family does care for them. I did add minced garlic to the hamburger and a few other spices to the soup mix. I added a layer of frozen greenbeans. I did follow a few other reviewers tips and microwaved the sliced potatoes to save cooking time and covered until the last 10 minutes of baking. I will be making this again; it's a low cost meal that my family enjoyed!

Simple Hamburger Stroganoff

My family is in love with the hamburger helper stroganoff, but I hate making it due to all the salt and processed ingredients. I made this the other night and it was a HUGE hit. I used one cream of chicken and one cream of mushroom. I added onion and garlic to the hamburger and a few spoonfulls of sourcream to the soup mix. A very easy recipe that both kids ate up without even picking out the veggies I threw in. Deff a keeper!

Mexican Casserole

With a few changes this was a reall good dish. My 2 year old ate it up and she has been EXTREMELY picky lately :P I added rice (cooked with half the packet of taco seasoning and a some cumin, reserving the other half to stir in the salsa/chicken mixture) and used shredded chicken because I had some left over that I needed to use. I also added a small can of green chilies and frozen corn instead of canned. I did have to increase the salsa because of the extra ingredients. I read a lot of reviews how the chips got soggy so I skipped the second cheese layer; I just topped with cheese then the crushed chips. I followed the recomended cooking time of 15 minutes @ 350 and it came out fine. The chips were still crunchy and had a nice baked flavor.

Slow Cooker Chicken Stroganoff

My whole family enjoyed this meal; my 5 year old gave it 2 thumbs up! I did make a few changes, some on error :) and some based on what I had. My finace bought onion soup mix instead of the dressing mix but it added a nice flavor. Prob wont even try with the dressing mix as we liked it as is. I also used boneless pork chops because I didn't have any chicken but wanted to try this recipe. Like others I added about 1/4 cup chicken stock with the meat and butter. I also added a few heaping spoonfulls of sour cream and a few splashes of milk when I added the cream cheese. I will deff be making this meal again. I'm going to try it with chicken next time.

Refried Beans Without the Refry

This was the best AND healthiest "refried" bean recipe I've made!!! I followed others advice and used half chicken stock half. I didn't have fresh peppers so just threw in some sliced peppers from a jar. I did add extra cumin and a little orgeno based on our taste. I froze the extras and plan on making at least once a month!!!

Bean Quesadillas

These were great! I used pico degio because I already had some left over. The fresh jalepenos in it added a nice heat. I added cilantro and topped with sour cream and a sliced avacado. Perfect. I also didn't cook the filling first; it was a lot quicker and came out just fine. Even my finace who usually asks "where's the meat?" loved them. He asked for them again and didn't even ask me to add any beef/chicken :) This is deff a keeper :)

Garlic Dill New Potatoes

These were GREAT!! Only change I made was using dried dill dip mix (from wildtree herbs) and I omited the salt. My boyfriend and brother had 3 helpings! Will be making these again :)

Roasted New Red Potatoes

These were Great!! I used Wildtree Herb Roasted Garlic Grapeseed oil so less oil was needed (1 tbls for scale of 5 serv). My boyfriend (who is hard to please) loved them. Will be making again :)
