Corn and Black Bean Salad

I added finely diced onion and green bell pepper for additional color and crunch. I thought the balsamic was too overpowering when made as written. I added an extra can of black beans and additional corn (I used frozen) but it was still a little too vinegary. I will make again but decrease the balsamic. We ate half a few hours after being in the fridge and the res the next day. It was definitely better after sitting over night.

Quick and Easy Alfredo Sauce

I needed a gluten free sauce and this worked perfect. I am not a huge fan of Alfredo sauce, but my family is, and I even liked it. We topped with grilled chicken. Next time I will wilt some spinach in the sauce! Thanks for a simple low cost recipe.

I made these for my daughter's Fairy themed bday party and they were a hit! The mixture got a little oily from the bacon, so next time I will try cooking it in the oven.

Chili con Queso with Chicken (Similar to Carlos O'Kelly's)

This was fantastic!!! My children love Carlos O'Kelly's queso so this was a HUGE hit! I omitted the chicken and substituted a can of drained rotel tomatoes for the diced tomato and green chilies because that's what I had on hand. Will try the recipe as written next time :)

Quick Peanut Butter Cookies

If your looking for the 'Best Ever' peanut butter cookie this recipe is not for you. BUT if your looking for a 'Great' flourless peanut butter cookie this is it! Both my 5 and 8 year old daughters were recently put on a gluten free diet. I love that I can still make them treats with out the expense of gluten free baking mixes. I used half white sugar and half brown sugar. I pulsed the two together in the food processor before adding the the egg and pb. I froze half the cookie dough for later use! Thanks for a quick and tasty dessert! Update: I used the defrosted frozen dough and increased the bake time to 12 minutes and they came out perfect! With the extra bake time they were better than a "normal" pb cookie!!!

Spicy Sweet Potato Chips

I made three batches of these and nothing I did would make them crisp up. I am new to cooking sweet potatoes so maybe I was doing something wrong. We liked the flavor, so if I make again I will probably just dice and roast in the oven.

Honey Grilled Chicken

This was pretty good, although I do agree that it smelled funny when cooking. Due to comments that chicken lacked flavor I marinated in the sauce prior to cooking. I made a few changes to help increase the flavor: extra garlic (grated with micro-plane), lemon zest, a little olive oil and salt/pepper. The sauce had an oriental taste to it. I will make again using orange instead of lemon.

Baby Spinach Omelet

I omitted the nutmeg bc I didn't have any. I used a microwave omelet maker dish and it came out perfect. My 8 year old LOVED it and requested it for breakfast again tomorrow!

Unbelievably Good Fruit Dip

Green Slime Smoothie

Both my girls (5 & 8) asked me to add more spinach next time; that in itself makes this a 5 star recipe :) I used a few splashes of apple juice to help blend everything together. Could not taste the spinach at all! Even my picky husband drank it and said tasted like strawberry/banana smoothie. Ours came out more brown than green. Next time I'll add extra spinach and half the strawberry. Do not think the honey is needed so will skip that too!

Spinach Rice Casserole

I substituted chicken stock for the water and added diced chicken to make a casserole. Written as is, I think it would be a little bland. I added fresh garlic with the onion and seasoned the chicken for additional flavor. With the small changes I made my family enjoyed and asked for it again.

Italian Spaghetti Sauce with Meatballs

I rarely make meatballs because mine never turn out right. They are always too dry or over cooked. I used only the meatball portion of the recipe and they came out great! I was worried about not precooking them, but they were fully cooked and moist!

Creamy Avocado-Ranch Dip

I was looking for an alternative for a creamy avocado dip I make because I didn't want to smell up my kitchen (it involves boiling fresh tomatoes and jalapenos). This dip was very similar in flavor without as much work. I did add an extra avocado because I didn't feel 2 was enough. I didn't have celery salt so I added a little onion powder and an extra dash of salt. I also added extra hot sauce for more kick. The ranch flavor was a little overpowering. I plan on making it again. Next time I will prob start off with half the ranch packet and add as needed.

Pizza Pasta

This was a nice change from spaghetti, but still just as low cost. I used rigatoni as that is what I had on hand. One jar of sauce didn't look like enough so I added another. I also added bell peppers and garlic with the hamburger and onion. My whole family LOVED it and my 4 year asked for it again tomorrow. This is definitely a keeper :)

Grandma's Green Bean Casserole

When I was asked to bring the green bean casserole for Thanksgiving I cringed! Not being a fan of the mushroom soup version I was thrilled to find this recipe. Only made minor changes and some extra seasonings. It was a hit! I plan on taking it to my husband's family Thanksgiving on Sunday!
