Roasted Sweet Potatoes & Onions

Loved the dish. It wasn't browning and caramelizing as much as I would have liked, so I ended up adding about 1/2 cup of brown sugar. Baked about 60 minutes altogether, plus a couple minutes on broil at the end. Came out great!

Feta Artichoke Dip

This was very good. I upped the cheeses and had to broil the top to get it to brown. Didn't really need the green onions and tomato. I bet it'd be great with crab!

Downeast Maine Pumpkin Bread

This was just terrific! Moist, flavorful and a wonderful texture. Could have eaten the whole loaf myself! We tasted it just out of the oven and thought it wasn't going to be good at all. But once it was cool, delicious!

Cream of Mushroom Soup I

Wow, this was delicious!!! I used fat-free half and half. Also, couldn't find sherry, so purchased and used Marsala (?). It was absolutely great. Thanks for the recipe, will def be making this again.

Homemade Tomato Sauce II

I liked it. Was in the mood for a new sauce and wanted it smooth, so after sautéing the onions and garlic (in olive oil), I threw them in the blender and back in the pan. I also pureed the tomatoes before throwing them in with the onions. I agree with others that it needed sugar and a lot more basil. I also added a splash of balsamic and some sugar. Came out great. 4 stars because of the needed modifications, but it really was good.

Light and Fluffy Spinach Quiche

I used swiss instead of cheddar and threw in a couple ounces of feta. I sauteed/carmelized the onions with butter and sauteed a bag of fresh spinach with them. I also added a 5th egg. Made two quiches. Topped each with tomato slices. It was unbelievably delicious!

Janet's Rich Banana Bread

Made two loaves and just tried it. Like others, I mashed the bananas and used 2 and 1/2 bananas per loaf. It is good - moist and dense - but I agree with others that for my taste it is a little bland. Maybe adding cinnamon and brown sugar would help, or some kind of crumb topping. Definitely mash those bananas!!

Fluffy Pancakes

This was soo delicious! Next time I would decrease the sugar by half. I used almond milk in place of real milk, and I increased it by roughly 1/3 to 1/2 cup as the batter would have been too thick otherwise. These were the moistest pancakes I have ever tasted. Yum. I bet they'd be good with bananas in the batter too.

One Bowl Chocolate Cake III

Wow, this was so good, I am having it with coffee for my breakfast this morning (shame on me). I used Ghirardelli cocoa powder, just under a cup. I frosted with the butter cream frosting from the Red Velvet Cake I recipe on this site. Took the advice of another rater and bought an oven thermometer - made a huge difference, as my oven temp was 10 degrees high, allowing me to adjust to the correct temp. I removed it at 28 minutes and it was perfect. Thanks for the recipe and comments for a great cake!

Red Velvet Cake I

Beautiful cake and the frosting was unbelievably good. The cake, though was somewhat dry and not quite chocolate-y enough for me. Glad I read the reviews on the frosting - or I wouldn't have known to heat the flour/milk mixture till the consistency of mashed potatoes. I used almond milk instead of milk in the frosting. Next time I make it, I will increase the cocoa, maybe add more buttermilk to make it moister (?)

Tomato and Basil Pasta Sauce

This was great. Increased the garlic, pureed the canned tomatoes, used only 1/2 tsp of sugar, as I don't care for sweet tasting sauce, and pinch of red pepper flakes. The fresh basil at the end really pulls it all together. Used it with "Hearty vegetable Lasagna" recipe on this site. It was great!

Hearty Vegetable Lasagna

This was delicious - used combinations of advice from previous ratings: replaced green peppers with shredded and roasted (12-ish minutes at 375) carrots, zucchini and yellow squash which I added to the tomato sauce. Increased mozarella, a little too much; if did it again would leave as is and increase the parmesan. Used tomato sauce recipe from this website "Tomato and Basil Pasta Sauce". Could have used a little more sauce than this recipe yielded. Used 14.5" x 9" pan. Overall, this was a winner and a big hit!
