Irish Soda Bread

This was the first time I have ever made Irish Soda Bread... It was a HUGE Success!!!! Super easy, super tasty!!!! My 4 year old gave it a thumbs up and asked for another slice!!!! The only change I made was 1 cup each: Regular Raisins, Golden Raisins & Craisins. This will be my first and only Irish Soda Bread recipe!!!!

Turkey Taco Soup

Super YUMMY and Super EASY!!!! The only changes we made were skipping the chili pepper since my kids are picky about food being too spicy and we used a can of corn since it was on hand. We ate this with tortilla chips... What more needs to be said when your kids "gobble" it up!!!!

Sloppy Joes II

I made this recipe for a "Fun Lunch" at my children's school. I adjusted the recipe to serve 120. It was perfect!!! Kids came back for seconds, some for thirds!!!! I even received an email from a father. He wanted the recipe because his two sons came home from school and couldn't stop talking about how good they were. I followed the recipe exactly. I chopped the onions & peppers in my food processor because I was cooking for a large group and I wanted them chopped really small for the little ones.

Quick and Easy Alfredo Sauce

Super easy! My family loved this sauce!!!! I had fettuccine noodles and shrimp and was looking for a quick and easy sauce to make with items I already had at home. After reading the reviews I felt we would love it or leave it... Well, we LOVE it!!!! I only made minimal changes... I used real garlic instead of garlic powder, and I didn't use all the milk... I slowly added it until my sauce reached the perfect thickness. I turned out to be about 1-1/2 cups of milk.

Mom's Paprika Chicken with Potatoes

Based on other reviews; I cooked up a few slices of bacon with the butter before searing the chicken. I increased the paprika to 3 tablespoons and added fresh chopped garlic with the veggies. I also started the potatoes in the microwave for 4-5 minutes prior to adding them to the pan. The smell in my kitchen had my mouth watering... my husband said it was good (but missing something), my kids loved it, I loved it! I may try decreasing the paprika to 2 tablespoons and season the chicken with 1 tablespoon of Emeril's Essence. Either way, I loved it and will make it over and over again!

Chocolate Fondue

Super easy, I wanted to treat surprise my kids for New Years Eve. This was so fast and easy to whip up for them, it was ready before they could even ask if it was done yet. They loved it and I did too! It was so quick and easy I even made it for them again.

Fresh Fruit Ice Cream in a Baggie

My kids used a recipe very similar to this in Pre-School. It was a great project for them, everyone had tons of fun. Surprisingly it works! Their arms got a little tired from all the shaking, but moms were on hand to help. You have to eat it fast, it melts quickly. Maybe if you put it in the freezer after, but then who wants to wait!

Lime Chicken Soft Tacos

Great base, I only had chicken thighs, but I seasoned the chicken with Adobo seasoning and added about 3 tbsp of tomato sauce. My husband loved it. Will definately make again.

Creamy Split Pea Soup

This was Ahhhawesome! I had leftovers for lunch for 2 days and still wanted more on day 3, but it was all gone. The only thing I did different was to cook the ham bone with the soup and I have one of those wand blenders, I felt that was much easier than transfering the soup to a blender in batches. Plus it saves having to wash an extra appliance. Also, I like croutons on my split peas soup. I used the prepackaged kind.

Kidney Bean Salad

OMG! This is soooo good. My husband is the big kidney bean salad fan in our family, so I made this for him, then... I taste-tested it (a few times). I made a few changes suggested by other reviewers; I used green onions instead and extra celery. I also added an extra egg and skipped the relish, hubby wrinkled his nose when I asked his opinion. Made this for a party that isn't until tomorrow, I'm sure I'll get plenty of compliments (I probably should've made a double batch), we'll see... P.S. I wish I could rate this recipe 10*'s

Fabulous Fried Cabbage

My husband went nuts over this recipe. I added crumbled bacon as others have suggested. I didn't have chicken broth so I had to use beef; I'll make sure I have chicken next time. Hubby can't wait try with pork chops as someone suggested.

Fried Rice Restaurant Style

Excellent, hubby quoted Larry David, saying "Pretty, pretty, pretty good!" I wasn't sure if my kids would eat it, they're not big fans of Chinese food, but my 3 year-old slid my plate away from me and finished all the rice on my plate. I went a little light on the soy sauce, wasn't sure how much to add without over doing it. But it was great and will make it again. Also, took other recommendations and prepared rice the day before and chopped a small onion and cooked up before adding carrots and peas to pan.

Gingered Flank Steak

Very good, didn't have fresh ginger on hand so I used ground ginger; will buy fresh ginger next time I use this recipe. I sliced the steak and cooked it as a stir fry to go with "Fried Rice Restaurant Style" from All Recipes. Excellent, hubby quoted Larry David, saying "Pretty, pretty, pretty good!"

I made this for my kids to bring to school for ethnic day; their teacher said the kids wouldn't even try it, but she had two pieces and put the rest in the lunch room for the teachers and they were all gone by the end of the day. I even had 3 requests for the recipe.
