About this Cook
Former cook, baker, caterer who just cooks for my family now! As a child I use to whip up desserts without a recipe. My brother was my taste tester! Lucky for him most things worked out, lol ;)
My favorite things to cook
I love Carbs! Baking is my specialty.
My favorite family cooking traditions
Christmas time is always a baking marathon. I learned from my Grandmother how to make Nanaimo bars, butter tarts, shortbread, fudge etc.. Those are things my mother and I always have around the holidays.
My cooking triumphs
Conquering pie crusts and yeast dough! Cheesecakes are also a triumph of mine.
My cooking tragedies
One day while getting a large catering order ready, I was running around multi tasking. I put two lasagnas in the oven, then continued on to the salads and such. When I checked on them an hour later, they were cold, I forgot to turn on the oven!! Haha, thankfully I had just enough time to finish cooking them before the order was delivered, pheww!

Billy Boy's Butter Tart Slice
This is an easy way to enjoy a butter tart! Not as pretty as a traditional tartlet, but so quick and easy with no fuss of rolling out a pastry. I followed the recipe exactly, and while it's tastes like 5 stars there are a couple things I would change. First, don't mix the raisons into the filling. I found I had to spread the raisons around to get them even and it started to tear the pastry! Just sprinkle the raisons on the crust before pouring the filling on.I also think you can omit the sugar in the crust and just add a pinch of salt, the filling is already super sweet! One more tip, if you're using a non-stick pan overhang a layer of parchment paper so you can lift and cut the squares without cut marks in your pan. Otherwise a fantastic treat, thanks to Billy Boy!

Aunt B's Peanut Butter Muffins
Great versatile recipe, this batter can be made into pancakes too! I found it to be the perfect amount of peanut butter, I used all natural peanut butter which I feel ups the peanut taste. Chocolate chips would make this five stars for sure! ~Update~ I also made this egg free for a friend and subbed a 1/4 cup of sour cream for the egg, Perfect! I think the by mixing the sour cream with the peanut butter it helped incorporate it more and boosts the flavour. The egg seems to be just for binding, but I did add a 1/2 tsp. of baking soda because of the acidity of the sour cream, all in all a great substitution if you want it to be egg free!:)

Grilled Pork Loin Chops
Way too much Worcestershire sauce, the marinade was thin and the family did not like it. It seems to me that there was a mistake made in the ingredients and that it should have read: 3 Tablespoons of Ketchup and 2 Teaspoons of Worcestershire instead of the other way around as it is written!! I would try that next time! This is similar to a delicious recipe on here called Peking Pork Chops, I much prefer the Peking version.
