Cajun Chicken and Sausage Gumbo
I made this as written a few weeks ago and we really enjoyed this. We are from the Northwest, and have never had authentic Gumbo, so I have no reference to go by! But this did remind me of something my Mom made called chicken a la king. So, I decided to make this with leftover Christmas turkey and leftover ham instead of sausage. I also added the leftover gravy and added water to the gravy to make up for the 6 cups of broth (and made half the roux). We served it over rice and it tasted great! I would recommend everyone with leftover turkey dinner to make this, great as written too! :)

Apple Maple Crumble Pie
This is a great apple crumble. Not too sweet, but not too much maple flavor either. I used pure grade b maple syrup. I use ambrosia apples which hold their shape and are a little tart. There is a depth of flavour in this that other crumbles do not have, so I think that comes from the maple syrup. If you want more of a maple flavor, I would suggest to incorporate some maple into the crumble topping. Perhaps use maple butter or maple sugar. I will make this again! EDIT: After it sat a day it took on way more flavour and was absolutely delish with some maple walnut ice cream! Let it sit a day and you will not be disappointed!

Real Canadian Butter Tarts, eh?
Delish!! I followed the recipe exactly except I didn't have walnuts, but they would be so good in this recipe so I will use them next time! A truly Canadian classic, and one of the best butter tarts I have had! Make sure to use PURE Maple syrup!! The pure maple syrup is thick and not too sweet!
