Cocktail Meatballs

This sauce recipe was given to me by a dear friend about 20 years ago to be used on cocktail weiners. It is by far the best recipe I have ever made. I've used it on both meatballs and cocktail weiners and I always have request for the recipe.

Blackened Tilapia with Secret Hobo Spices

Excellent! We are trying to add more fish to our diet and were looking for healthy alternatives to fried catfish. I came across this recipe, tried it, and everyone at our house loved it. We will definitely be cooking this on a regular basis.

Annie's Fruit Salsa and Cinnamon Chips

OMGosh! This is so delicious. I was looking for a healthy snack for tailgating and came across this recipe. It was a hit. I've made it twice and for the most part went right by the recipe. Since fresh raspberries were not available at our grocer, I substituted the frozen whole raspberries. I chopped them slightly in the food processor before adding them to the mixture. It was delicious but did make the salsa a little more watery than if I had used fresh, but nevertheless, it was delicious. The second time I made this recipe, I substituted frozen peaches for the raspberries and again chopped them in the food processor before adding them to the other fruit. I also added some fresh blueberries just b/c I love them (and b/c I was going for an orange and blue tailgate theme...WAR EAGLE!). Delicious again. Both times, I chopped the apples into about 1/2 inch cubes and then tossed them in a couple of Tablespoons of lime juice to keep them from turning brown. This will definitely be a keeper for all of our tailgating parties. And by the way, I failed to mention that the chips are great as well...very flavorful and crispy.

Mexican Rice II

This was absolutely delicious and so easy to make. Everyone in my household loved it! The only change I made was I used 2 chicken boullion cubes plus 2 cups of water for the chicken broth only b/c I did not have any chicken broth in my pantry and didn't feel like going to the grocery store. It was still delicious. I'm making it for the second time tonight.

Chicken Tetrazzini for a Crowd

My family has always loved Chicken Tetrazzini/Spaghetti so I wanted to make it but didn't have the Velvetta cheese on hand that is needed in my personal recipe and the stores were already closed. So I chose this recipe and made a couple of changes to adapt this recipe to mine. I left out the pimiento and instead added 1 can of rotel tomatoes...we like a little kick to ours. I also added about 1 Tbsp. of worcestershire sauce. It turned out delicious!

Southwestern Egg Rolls

I made these tonight and they were excellent. I followed the advise of other reviewers and baked mine. I sprayed them with cooking spray before baking at 475 degrees for 10 minutes. I think I'll lower the temp to 450 next time because the edges got a little too brown before the rest of the roll browned. I had wondered what to do with the partial package of frozen spinach left over since my family doesn't like spinach. But after eating these, I realize that won't be a problem. I plan to buy the ingredients to make another batch tomorrow and freeze them for weekend ballgames! Definitely a keeper.

Mexican Rice III

Delicious! I did make one substitution to the recipe and it was still very good. I decided to make this at the last minute to go with the Southwestern Egg Rolls on this site but then realized I did not have a fresh tomato. So, I drained a can of rotel tomatoes with chili peppers and added these instead. Since chili peppers were in the tomatoes, I omitted the jalapeno peppers for fear that it would be too spicy hot with both. It was still delicious. This is definitely a keeper.

Slow Cooker Chicken and Dumplings

This was so delicious and sooooo easy! I substituted a couple of ingredients just to avoid having to go to the grocery store at the last minute. Instead of the 2 cans of cream of chicken soup, I used 1 cream of chicken soup and 1 cream of celery soup. I also used frozen biscuits instead of the canned biscuit. I think the frozen biscuits REALLY made it scrumptuous! Thanks for the recipe...this is definitely a keeper. So long to chicken and dumplings made from scratch!

Marinated Pork Tenderloin

I'll be honest--I started not to try this recipe because the cinnamon did not sound like a flavor I would want with pork but the 5-star rating convinced me to try it. I'm glad I did. I followed the recipe exactly as given and served it Christmas night as one of my finger-foods with home-made angel biscuits and jezebel sauce. I received many compliments!

Toasted Coconut, Pecan, and Caramel Pie

I have been making this recipe for years and it is absolutely wonderful. It is very rich so is not for the calorie conscious. I always save some of the caramel topping to drizzle over the top of the pie. These freeze well for later use. Just freeze the pie and then slip pie into a gallon-size freezer ziplock bag. Great for those unexpected times you need a quick dessert. Yum, Yum, Yum!!!!

Cocktail Wieners I

I was going to add my recipe for cocktail wieners but found this one that is very similar. The only difference in my recipe is that I add 2 Tbsp. of brown sugar and 1 Tbsp. lemon juice to the sauce. I have been making this for our church Christmas Cantata for years and I always take copies of the recipe with me because I am always asked for it. I was shocked at the low rating of this recipe because it is really a hit in my community. I also have a recipe that uses the grape jelly but we all agree that the cranberry sauce is much, much better!

Eggless Sweet Potato Casserole

I decided to try this sweet potato casserole for Thanksgiving rather than my recipe I have used for years. This was rated so highly and I just knew it was going to be a hit. Unfortunately, my family(14 of us!)was asking what I had done to the casserole. They ate it but asked that I not use this recipe again. The cinnamon overpowers the sweet potatoes. I will not be making this again.

Sour Cream Refrigerator Mashed Potatoes

I have been making this recipe for years and it is absolutely delicious. I use 8 oz. of cream cheese and 1/4 c. chives. I also add about 1/8 tsp of garlic powder which gives it a little more flavor. Be prepared to share this recipe because everyone will ask for it. I use this recipe quite often for church pot-luck meals because not only can I make it the night before (it is actually better made the night before so the flavors can combine), it goes well with any meat--ham, chicken, or roast and it makes a lot. This will always be a favorite in our family.

Freezer Caramel Drizzle Pie

This is a delicious pie that is so quick and easy to make. I got the recipe from a friend a few years ago and was going to put it on this sight but saw that it was already here. Every time I serve this, I am asked to share the recipe. It is a great "make ahead-of-time" dessert. You won't be sorry you tried this one!
