Baked French Toast

Absolutely love this recipe!!! It's so versatile....I love swapping in light eggnog for the cream, and I always use egg whites vs eggs. Very yummy, but very high cal and fat ?? I mostly use challah bread, but today am trying with potuguese sweetbread. I'm sure it will be equally as yummy. Lastly, I find the sauce holds up best with either one of two things...adding it half way through cooking, or doubling butter/maple syrup and keeping the brown sugar as is. Most times it takes more than an hour to cook enough, and that turns the sauce into a crust. If you like a wet custard type french toast you may not have this problem so much, but my kiddos won't go for that lol. Happy Baking!

So yummy, and I even used light egg nog and egg beaters! I would just go a little light on the rum flavor unless you REALLY like it.

Boston Cream Pie II

The cake was a buttery yellow; I did have to use butter vs. shortening. I thought it was delicious. The pastry cream was good as well, but I did a second trial if another recipe that I thought was better. The ganache was not good. Taste way too much like powdered sugar. Next time I would just buy it for the amount if work it took to just be ok.

Spicy Oven Fried Chicken

This was overall a pretty good recipe. I don't like spice much so I had to substitute a little. If I were going to make this again I would definitely pan fry for a few minutes before the oven vs. spraying and baking on the rack; definitely would have been crispier.

Amazing Slow Cooker Chocolate Cake

Definitely moist but not particularly tasty as you would think. Served with ganache topping and vanilla bean ice cream; that saved it.

Grandma's Corn Chowder

Absolutely perfect! Made with turkey bacon, low sodium chicken broth, fat free half & half, 2 cans cream corn, and one whole. Will make again and again. Froze approx 8 cups and was able to get 8 more out so I would say serves 16.

Restaurant-Style Zuppa Toscana

Made minor tweaks, but this was the best thing I have ever made!!! Cooked sweet Sausage minus casing with fennel and red pepper to give it the kick OG has....fantastic. Also used turkey sausage, turkey bacon, fat free half & half, and double the kale. Wish I had a mandolin to slice the potatoes, but cubed was ok too. Thanks so much for posting this one!!

Slow Cooker Italian Chicken Alfredo

Just ok. Tastes too much like chicken and the chicken in the crockpot shreds and the whole thing reminded us if tuna. Next time I will try the sauce alone and grill the chicken breasts; I think one can of soup and maybe the other some form if cream would be better.

I made a very similar recipe with frozen apples from last year, Splenda, and cinnamon. Filled the crockpot and all was done in about 5 hours. Scooped it out with a slotted spoon and had some cider left once I drained the bottom. Sooooo good! ??

Chocolate Zucchini Cookies

On my second round I used 1.75 cup Zuchinni, 1/2 cup apple (both shredded), 1/2 cup butter, and 2 1/8 cup flour, 1 scoop of chocolate protein powder, and 1 cup dark chocolate chips. They came out pretty yummy, yet you don't want to binge on them :-)

Slow Cooker Chocolate Banana Steel Cut Oats

Made this today perfect at 6 hrs. Did get a little dry around the edges and the bottom; I think it would benefit from stirring occasionally. Also added 1 cup of Splenda, but could have even used a little more. The kids enjoyed it with a few dark chocolate chips mixed in.
