Basil-Lime Sorbet

Reviewed: Sep. 26, 2012
Delicious!! Very unique and refreshing flavor, like a basil margarita. I tasted it when it was half frozen and it was a bit too sour for me, so I added a bit of agave nectar to sweeten it up. Rather than freezing, blending and refreezing, I just kept it in a tupperware and shook it up every couple hours to keep it from freezing solid. It takes much longer than 2 hours to freeze anyway, so this worked out great.

I didn't love it, but it is good and something different for holiday parties. I might make it again.

Bacon Wrapped Dates Stuffed with Blue Cheese

Reviewed: Sep. 3, 2012
One of my favorite things to make for parties. They are always a big hit, even with my friends that don't expect to like them. Just be careful not to over cook them because if the dates burn they have that bitter burnt-sugar taste, which just ruins the whole thing.

Shredded Brussels Sprouts

Reviewed: Sep. 3, 2012
Looooove this! It's now one of my favorite side dishes ever, and I have made it several times. I make it exactly as the recipe calls for. I had never shredded Brussels sprouts prior to making this recipe, but the shredding is what really makes this special. I just use a mandolin, so it's pretty easy. Just takes a little time, but it's worth it to shred them. The texture with the bacon and pine nuts is just perfect! So sooo good!

Easy Chocolate Tofu Pie

Reviewed: Sep. 3, 2012
Well, it's not bad, but to say it compares to a regular chocolate pie is a BIG stretch. People might not guess that it's tofu, but they are definitely not going to think it's a regular chocolate pie either. I may make it again, but overall, I was pretty disappointed considering all the rave reviews. I was expecting something much more rich and chocolatey.

Janet's Rich Banana Bread

Reviewed: Oct. 30, 2011
I am on the hunt for the best banana bread recipe ever, and this is currently at the top of my list! I make it almost exactly per the recipe, the only differences being that I mash the bananas and I usually add a couple of extra tablespoons of butter. My favorite is when it's fresh out of the oven and just cooled enough to eat! The crust is AMAZING!!! Unfortunately the crunchy crust goes away the next day, but it's still absolutely delicious! I always get asked for the recipe, and have even received a marriage proposal because of it. Yes, it's that good!

Award Winning Soft Chocolate Chip Cookies

Reviewed: Nov. 20, 2010
Very soft and yummy, but I found that they dry out a bit if they're not eaten within a day or two. Warm out of the oven though, they are probably some of the best chocolate chip cookies I have ever had! Definitely keep an eye on the baking time though. They are done even when they don't look as golden as you think they should. For me, 10 minutes was just about right.

Big Al's K.C. Bar-B-Q Sauce

Reviewed: Apr. 19, 2010
I wasn't totally blown away, but it was definitely good. A little too much vinegar for my taste, so I just added a little more brown sugar to balance it out. I did have to let it simmer for an extra 15 minutes to get it to the thickness I wanted. Overall pretty tasty though. Slathered it on some pulled pork sandwiches - yummm!

Buttermilk Pancakes II

Reviewed: Apr. 4, 2010
I had never made anything but boxed pancake mix before, but after making these, I will never make boxed again! They were so easy, and the texture was perfect. Moist, fluffy and melt-in-your-mouth good! And I think this will make a great base for all kinds of pancakes, so I'll have to do some experimenting. One thing I must say is that the pancakes themselves don't have much flavor, so I think I might add a little vanilla next time, but the texture is just perfect. UPDATE: I added a little vanilla extract the 2nd time around and that added the extra lil' something I was looking for. Soooo good! Also used another reviewers recommendation and made extra to keep in the freezer. I just put them in a large ziploc bag and separated each pancake with parchment paper. Then you can just pop them in the microwave whenever you want. Of course they're not quite as good as fresh, but still pretty darn good.

Slow Cooker Carnitas

Reviewed: Apr. 4, 2010
Very yummy! I loved the flavor that the cinnamon added. My husband and I both like our carnitas with a little crunch, so after it was done in the slow cooker, I put it in a frying pan with a little oil to get the outside nice and crispy. Just served with some fresh pico de gallo, cilantro and tortillas. Delicious!

Creme Brulee

Reviewed: Mar. 15, 2010
Very good, but I can't give it 5 stars because, like many others, I also followed CHEFPEON's advice. Delicious! The only thing I disagreed with is that I actually like it better if it goes back in the fridge for a little bit after caramelizing the top. Not too long, just long enough to cool the custard back down - maybe 20-30 minutes. I just put a few fresh raspberries on top and it was scrumptious!

Fabulous Cilantro Pesto

Reviewed: Mar. 3, 2010
Very good, but the garlic is a little too intense. I love garlic, but I just felt like it overpowered the cilantro a bit too much. This would be a great spread for bruschetta though! Mmmm! I will definitely make it again, just with less garlic next time.

Truly Key Lime Pie Ice Cream

Reviewed: Mar. 3, 2010
Originally I gave this recipe 3 stars because the texture was off - seemed kind of like an ice cream mouse. I've decided to bump it up to 4 stars because the texture got a lot better after it sat in the freezer another day. The flavor is really great, and the graham crackers really added so much yummy-ness that I wasn't expecting. The recipe doesn't specify fresh or bottled lime juice. I just took the easy route and used bottled, and I think it was fine. And yes, as other reviews have suggested, make sure to cool the mixture completely before putting it into the ice cream maker. I refrigerated it overnight. Overall very good - I'm sure I will make it again.

Roasted Brussels Sprouts

Reviewed: Feb. 3, 2010
So simple and sooooooo delicious! If the Brussels sprouts are large, I like to cut them in half. The longer you roast them the better. They get all dark and carmelized. So yummy!

Asian Salad

Reviewed: Feb. 3, 2010
Amazing! The dressing is a bit on the oily side, but the topping....ohhhh, the topping! It took everything in me not to just eat it by the handful. I made it for a family potluck and got rave reviews from everybody. Next time I'll just cut back on the oil a bit.

The Best Thai Coconut Soup

Reviewed: Feb. 3, 2010
Absolutely fabulous! I stuck to the recipe exactly. It was definitely on the spicy side, which I love, but it was a little too spicy for some...so just keep that in mind with the red curry paste.
