White Chili with Ground Turkey

Husband said and I quote "This is the best chili you've ever made!" which is something coming from him as he's not one to rave over food. I subbed ground chicken for the turkey, great northern beans for the cannellini and only put in a dash of cinnamon and cayenne. Also only used 2.5 cups of broth (2 cans) which was perfect for us, but very thick the next day. Will probably make again.

Quick and Easy Vegetable Soup

Not sure why, but this one didn't work for me. I love this type of soup and I'm addicted to V8, but by the time the veggies were tender - and they were diced small - all the broth was gone. Not very flavorful either. I added a cup of water with bouillion and that bumped up the flavor, but I'll keep looking for a veggie soup recipe.

Slow Cooker Chicken Stroganoff

Took the advice of another reviewer and used frozen chicken breasts, 1/2 the package of italian dressing and one can cream of mushroom plus one can cream of chicken thinned out with some milk. Put it all right in from the start. No cream cheese so subbed 1/2 cup of sour cream and threw in some frozen peas about 20 mins. before serving. This turned out great. So comforting, kind of like a chicken and dumplings. I will definitely be making this again!

Chicken Tetrazzini IV

I too modified this a little by sauteeing fresh mushrooms, onion and garlic for the mushroom portion. The flavor was great, but I think I liked the mixture prior to baking as more of like a chicken spaghetti. Came out just a tad dry after being baked. Dirtied up a lot of pans too.

Simple Beef Stroganoff

I hate to give a bad review, but this was bland, bland, bland! I even took ALL of the other reviewers suggestions and added onion, fresh garlic, worcestershire, sherry, boullion, etc. and I still thought it was just tasteless. I will say that it was easy enough and husband and kids ages 3 and 1 liked it, but they like stuff on the bland side.

Italian Vegetable Soup

I have to give this one five stars because my husband said this was one of the best soups he has ever had and he is not usually one to rave. I omitted the ground beef and ended up trippling the water and adjusting the seasoning accordingly. It was very, very thick without the additional water. Very easy to make and great flavor. Will definitely make again.

Easy Guacamole

Absolutely perfect guacamole! I used a little less onion..just what I had on hand and added a dash of cayenne. Husband raved about it and he's not a raver usually. Will make again often.

Easy Minute Steaks

I dredged the steaks in flour and seasoned with salt, pepper and garlic powder. Finished as written except covered with foil for the first 45 mins. or so. These turned out great. Really tasty and so easy. Not dry at all with the addition of the foil.

Easy Vegetable Pot Pie

I doubled the potato soup, added some frozen broccoli and pearl onions at my hubby's request. It was good and very easy, but I will definitely reduce the amount of thyme for our tastes next time.

Eileen's Meatloaf

This was the perfect meatloaf recipe for our house as it doesn't contain ketchup or mustard, both of which my husband hates. I made it exactly as written except divided into 4 mini loaves to accomodate the only loaf pan I have and added shredded cheddar to the top during the last 5 mins. I thought the flavor and consistency were great and it was a breeze to make. Will make again.

Awesome Broccoli-Cheese Casserole

I HAVE to make this every Thanksgiving and Christmas as it is my Mother's absolute favorite. My mother-in-law also requested the recipe after having it this year. It is delicious and so easy to make.

White Chili

This is simmering away on the stove right now and I can't wait to try an entire bowl. I added onion, garlic, cumin and chili powder as well as salt and pepper to the turkey while it was browning. The consistency seemed way too thick to me as written, but I like more "juice" in my chili than most I guess. I used a whole 16 oz. jar of Pace Picante Sauce, 2 cups of water and only 1 can of beans. The flavor is very good and spicy and the ease of making it can't be beat!

Brown Jug Soup

I too used one beef bouillon cube in place of one of the chickens and added one zucchini chopped. Very hearty soup for a cold night. Tasted good, not super in my opinion and thought it looked not so appetizing. I think that was from the cream of chicken. Very easy to make and worth a try for sure though.

Hot Corn Dip

Made this exactly as written except used a pinch of dried cilantro as that is what I had on hand. Very tasty and spicy...picky husband liked it so that is always good. Will make again, probably for Thanksgiving.

Squash Casserole I

Absolutely delicious...got rave reviews from my husband and friend who just happened to stop by as it was coming out of the oven. Followed the recipe exactly, except used italian seasoned bread crumbs and added parmesan to the top. Great different use for all those summer squash from the garden.

Mexican Layered Dip

Made this to take along to my nephew's 1st birthday party and the family all loved it. I would cut back a little on the taco seasoning next time and use picante or salsa instead of the tomato for my tastes, but again...the fam raved and made me leave the little that was leftover.
