Chicken-Avocado Tortilla Soup

Sorry, but my soup was a big disappointment. I was really looking forward to a new soup recipe, but this one seemed bitter, despite having so many of my favorite ingredients. Guess I'll keep trying!

Chicken Enchilada Dip

Very very yummy! I use one large can of chicken breast when in a hurry, and I've also added a drained can of tomatoes with chilis. It's always a big hit with the men because of the "meat factor". Serve with Tostitos Gold chips since it's so thick. Hmmm, it's making me hungry just thinking about it now...

White Peach Sangria

I thought this recipe was good, but not quite as good as the Classic Spanish Sangria on this site. This was a nice light alternative for a summer get-together. It was pretty strong, though, and most people at my party diluted it with a little Sprite. The flavor from the Absolut Peach was yummy, but I found that the peach slices soaked up most of the vodka. Worth a try if you're a peach-lover like me, though!

Chocolate Lovers' Favorite Cake

This recipe produces a super-rich, delicious cake. My only concern is the almond extract. Normally I love anything with almond/amaretto flavoring, but I felt it was unnecessary in this one. I may try it without the next time and see if I like it better. My husband loved it for his birthday cake, though!

White Chocolate and Cranberry Cookies

I, too, had really high expectations of this recipe. The flavor was really good, but my cookies spread out too thin and looked little like the picture. They were so thin that about 1/3 of them broke as I tried to take them from the pan to the wire racks. I used all margarine...could that be a problem? Not sure if I'll try this one again.

Easiest Peanut Butter Fudge

Oh my gosh, this stuff was awesome. I took the suggestions of others and modified the recipe slightly and it turned out delicious. I couldn't keep my kids/husband out of it! Thanks for such an easy recipe!

Seven Layer Taco Dip

Very yummy, even with a few changes. I didn't use all of the sour cream or cream cheese (I thought it would overpower) and I accidentally left off the lettuce. It was so good without the lettuce that I'm purposely leaving it off this time. Still, it was devoured. Thanks for a great recipe.

Slow Cooker Chicken and Dumplings

Yummy! I did do a few things differently. I sliced up 2 carrots and added them at the beginning with the chicken, and used a can of chicken broth instead of the water. Plus, I added some pepper and a pinch of sage. Then, I added a drained can of peas just before I added the biscuit dough. One can of large biscuits was more than enough. I cooked it one more hour after adding the biscuits. I served mine over rice. Filling & delicious!

Spicy Bean Salsa

This recipe was very well received, but it's definitely better several days after you make it. I added some lime juice, cilantro, and cumin, too. Look out, though, it makes a TON!

Bananas Foster Chimichangas

OH MY GOSH! This was awesome & I didn't even make it as chimichangas. I made the banana sauce and served it warm over vanilla ice cream. As an accompaniment, I made cinnamon crisps by cutting flour tortillas into triangles, spraying them with butter and dipping them in cinnamon/sugar. Then, I baked them for about 5 minutes at 400 degrees. I made this after a Mexican Fiesta Bunco Night and the ladies all raved about it. I will make this again and again.

Hot Mexican Spinach Dip

This dip was excellent! I also an 8 oz block of pepper jack cheese shredded and substituted diced bell peppers for the olives. Brought it to a party and it was a big hit. Thanks for something different!

Classic Spanish Sangria

Unreal! I have made this several times making my own adjustments each time, and it's always a winner. Just about any fruit works well, and I buy the cheapest wine possible and it's still great. I always get compliments when I make it and if you use the amount of rum called for in the recipe, look out! It'll sneak up on you!

Country Chicken Casserole

My husband declared this one a keeper, too. Next time, I would make a few changes: definitely add more hash browns (at least 4 cups) and increase the milk to 1 cup. I added a generous amount of pepper and some garlic salt, and I added the corn in with the soup/milk mixture and decreased the total cook time to 45 minutes. It was very yummy and filling!

Easy and Delicious Chicken

After reading the reviews that stated there wasn't enough sauce, I decided to leave most of the italian dressing in the crockpot and added the soup mixture in with it. I think that was a mistake--it was too tangy. But, I think there's definite potential, so I will try it again, taking out the italian dressing and adding extra chicken broth instead.

Baked Potato Soup V

Absolutely delicious. I agree with other posters, though, that it was too thick. I thinned it with one cup of chicken broth, but next time, I think I'll try it with half the roux. I used skim milk and light sour cream, 1/2 the pepper, along with real bacon and the flavors blended beautifully. Can't wait to have it again!

Make Ahead French Toast

Yummy, yummy, yummy! I was at the beach with friends when I made this and everyone loved it. I couldn't find regular french bread, so I bought italian sandwich bread and just ripped it into pieces. Then, as others suggested, poured the egg mixture over the top. It was delicious.

Angel Shrimp Pasta

I thought this recipe was really good and easy to prepare and I would love to eat it again. However, my husband didn't care for it (darn it) so I guess I won't be making it for myself! I used a 1/2 of a 1 lb. block of Mexican Velveeta for the cheese. It had a very different, interesting flavor. Try it!

Tomato Chicken Parmesan

All I can say is WOW! Awesome! My husband who is not a big fan of Italian loved it. I totally skipped the "frying" step for health reasons and you'd never know it. I covered the dish for about 35 mins, then removed the foil and let the cheese brown a little. I also added pepper and fresh parsley to the bread crumb mixture, and used freshly grated parmesan. My only complaint is that there was too much coating leftover that I had to throw away. Next time, I'll adjust the coating amount. Otherwise, BRAVO!
