Key Lime Pie VII

STOP! Don't even bother looking for another Key Lime Pie recipe. This is absolutely the best. I have made over a dozen pies with this recipe and it is still the most requested dessert I make. It is sweet, tart, creamy, totally delicious, and EASY!

Supreme Apple Butter

This apple butter is absolutely Fabulous - the best I've ever had! I followed the ingredients exactly. I cored the apples but did not peel them to take advantage of the pectin in the peel. When the apples were very soft I processed them through a food mill to remove the peels, then proceeded with the recipe. I needed a quick dessert one evening. I toasted thick slices of pound cake then topped with a generous dollop of apple butter and whipped cream. My guests were very impressed and raved about the apple butter. Tomorrow I'm making a triple batch to give as favors at Thanksgiving dinner. Thanks for sharing a wonderful recipe!

Creamy Rice Pudding

Erica, you are my hero! I have searched for years for a rice pudding recipe like my mother's. This is the best, the creamiest, the most delicious rice pudding I have ever tasted. I used arborio rice, 1 cup fat free half and half, 1 cup skim milk, scant 1/3 cup of Stevia, and added fresh grated cinnamon and nutmeg to the rice mixture. No better comfort food in the world and it couldn't have been easier! Thank you for sharing!

Easy Quiche

Fabulous! I needed a quick and easy dinner dish last night but didn't have ham or broccoli so I substituted spicy sausage and frozen spinach. My husband was still raving about it this morning and was thrilled that there was enought left for his breakfast.

30-Minute Minestrone

Delicious, quick soup. To reduce the sodium I used 4 cups of low sodium beef broth. I also added some sliced zucchini and shell macaroni instead of elbow since that's what I had on hand. The next day I added some left over shredded rotisserie chicken. Even better!

Spinach and Feta Pita Bake

Amazing and quick. I needed a quick appetizer and didn't have any feta or mushrooms, so I substitued fresh mozzerella and added dried basil and sliced olives. I used mini pitas so they were individual servings. They were the hit of the night!

Cuban Black Beans II

DELICIOUS! I used 3 cans of black beans and 3 cups of water as suggested. I didn't have tomato paste so I used a can of tomatoes with green chilies. My hubby couldn't stop raving about them. The next day we had black bean burritos with the leftovers. YUM!!

Fish Fillets Italiano

Absolutely delicious and so quick and easy. I used tilapia fillets, Italian seasoned diced tomatoes, chicken stock and kalamata olives. My husband, who isn't a big fan of fish, loved it.

Spicy Red Snapper

Absolutely delicious! I added 1 Tbsp of tomato paste from the tube to help thicken the sauce. My guests said they felt as if they were eating at an expensive seafood restaurant. Thanks, Lola!

Pork with Peach and Black Bean Salsa

I made this last night for guests and everyone raved! Not being a beer drinker, I used low sodium chicken broth instead and used the entire can of black beans. I served this with orzo, a green salad and, as suggested, a nice red wine. Thanks, Alex. This is definitely a keeper!

Baked Pineapple

I have used this recipe for years and it is always a hit. For Thanksgiving/Christmas I add dried cranberries to the pineapple mixture and sprinkle chopped pecans on top of the cracker topping. This one is a must on my holiday table!

Linguine with Seafood and Sundried Tomatoes

Out of this world! A good friend is a chef, so I was nervous about cooking for him and his wife. He RAVED and offered me a job in his restaurant! Even my husband, who isn't wild about pasta, couldn't get enough. Like some other reviewers, I reduced the butter and used the oil from the oil-packed sun-dried tomatoes and the result was great. I also used 6 oz. clam juice and 4 oz. white wine then reduced before adding 1/4 c. cream. Finished with a sprinkle of parmesan cheese and served with a simple mixed green salad and lots of crusty bread.

Broiled Tilapia Parmesan

What's left to say? My family requests it once a week. Like others, I substituted garlic power for the celery salt and used fresh basil. I increase the topping ingredients by 1/2 and mix it with hot rotini; serve with a salad and garlic bread. So easy, and impressive enough for company. Thanks, Phoebe!

Sangria! Sangria!

This IS the best sangria I have ever had. Definitely needs to sit at least overnight. I omitted the sugar and used 7-Up instead of the carbonated water. FABULOUS! I made three batches for a recent cookout and it was gone in the first hour. Thanks for this definite keeper.

Strawberry Angel Food Dessert

Great, easy, elegant dessert. For Easter brunch I layered this in a trifle dish (2 layers of cake, 2 of cream cheese, 2 of strawberries)using reduced fat cream cheese and Cool Whip and Splenda instead of sugar. Everyone raved about how light and delicious it was. I will definitely make this again and again.

Cheesy Mexi-Rice Casserole

WONDERFUL! I took this to our monthly Bunko party and it was the hit of the night - nothing left to bring home! I used 1 lb. of Mexican-style Velveeta. I will definitely make this again and again.

Apple Raisin French Toast Strata

FABULOUS! Served this at my Easter brunch with maple syrup and orange blossom honey. I put the cream cheese in the freezer until very firm and cut it into tiny dice before sprinkling it over the first layer of bread. Not a bite was left!
