Old-Fashioned Peanut Brittle

This was a good brittle recipe but I think I will go back to my one that is just sugar, peanuts, water and salt. I think that one has a nicer "texture".

Candy Cane Fudge

Very easy recipe and it will make a nice filler on my Christmas trays. I microwaved the chips and milk for 1 minute on high, stirred, and then 25 seconds at a time on high until all the chips were melted. I then stirred in the extract and candy canes. Cut the pieces small as this is really rich.

Bacon Quiche Tarts

This was a great recipe. I doubled it, added two extra eggs and used Grands biscuits and split them in half. I baked in regular muffin tins. I baked them ahead of time and then put them in a covered pyrex dish to keep them warm in the oven.

Delicious Ham and Potato Soup

This was a great comfort food recipe. I added 2 cups of potatos and 1 cup of store bought frozen dumplings. Because of the dumplings I did have to increase the water by about 3/4 cup. YUM. I will definately make this again.

Beef and Chili Stew with Cornbread Dumplings

This recipe was very good. The meat was delicious. My only complaint was that the cornbread was a little bland, even with the onions. I think next time I will add some garlic or onion salt to the bread mix for a little more seasoning.

Chewy Sugar Cookies

GREAT! I baked for exactly 10 minutes and they were crisp on the outside, chewy on the inside. I put my dough in the refrigerator for about 45 minutes before I rolled. I used the smallest pampered chef cookie scoop. I rolled 1/2 in cinnamon and sugar and 1/2 in colored sugar. A great cookie.

Apricot Danish Coffee Cake

This is a GREAT recipe. I used 1/2 apricots and 1/2 canned peaches. It was moist and very flavorfull. I took the previous advice and used the apricot juice to make the glaze. Mmmmmmmmmm.

Dill and Shrimp Salad

VERY YUMMMY! We loved this quick, easy recipe. It has a great citrusy dill flavor that mingles well with the shrimp. I served it in pitas with fresh fruit on the side. It was a very nice change from the usual chicken or tuna salad.

Asian Roll Lettuce Wrap

This recipe was very good. It did take a lot of prep time to chop all the vegies but the healthy meal that followed was well worth it. I used bib lettuce and that worked well. I also broiled the meatballs in the oven. This recipe will probably not become a weekly staple but will make a good twice a year "something different" meal.

Grandma's Peach French Toast

WONDERFUL! I have been looking for a great brunch recipe and this is it. I did have to add an extra egg in the morning so that all of my toast was moist. I also chopped my peaches so my 18 mo. old son could eat them easier. I sprinkled with powdered sugar. MMMMMMMmmmmmmmmm.
