Hearty Tortellini Soup

This soup was super easy to make. No chopping or anything. I doubled the recipe & it was a big success with my friends. I'll be making this again. Thanks for sharing this one!

Turkey Tetrazzini II

Very Good. I did alter the recipe a bit, added sauted mushrooms & peas. I did make the roux, but added some cottage cheese to the liquid mixture. You don't see the cottage cheese, but it does add a nice rich favor. Oh yeah, I spiced it up just a touch with crushed reds. Yummy!!!

Spicy Red Bell Pepper Soup

Ok I did alter the final dish, but made the recipe as is, for a wonderful base. I turned this in to a seafood soup. At the end I added shrimp, scallops & crab. It just seemed natural! So good! The flavors were restaurant quality.

Pecan Sandies

Wonderful light cookies! Everyone enjoyed them on Father's Day. I remember this being one of my Dad's favorites and surprised him with them. Big success! I did not find the dough hard to work with after 30 mins in the frig. Used parchment paper for an easy clean up. I will be making these again. Thank you for this great recipe!

Grilled Tuna with Pineapple Salsa

This made one special Mother's Day meal! Mom's watching her figure, so I knew I had to keep it healthy & low fat but still Yummy!I made the salsa per the recipe & added some lime juice to the tuna steaks & marinated them for about 2 hours. I then took out the tuna steaks & allowed them to come almost to room temp & threw them on my Paula Deen grill. Beautiful grill marks, nice fresh salsa & a happy momma! What more could you ask for?

On the Go Casserole

Not bad at all! We were looking for something different using spicy sausage & this recipe fit the bill! We added some onion & some orange bell pepper(cleaning out the fridge). We had large green olives stuffed with garlic & that worked out very well, loved the bite from the olives. The black olives added to the texture & presentation, but not much flavor.We doubled the recipe & added more rice then called for, so I thought it was i bit dry when I was mixing it, so I popped open a small can of V-8 juice & added that. Just enough moisture! Fit nicely in a 13x9 pan.

Banana Cream Supreme

This recipe was easy to fix & a real crowd pleaser! I did bake my crust for 5 min. & added chopped walnuts to the banana layer & the top for decoration. I used 2 8oz cool-whip containers, one french vanilla & one regular. I also used banana pudding instead of vanilla. Some folks were calling it a slush cake, all I know is that it was very good!! Thanks for sharing this one!!

Crispy Chicken Strips

I had several thawed chicken breasts left over & had to use them. This recipe was just right. I realized I had used up all the fake potato making bread. In my pantry I had a box of instant garlic cheese potatoes. It worked out great. The chicken stayed moist & the flavor was really good. Try this one! I also used Panko crumbs. YUM!!

Southwestern Egg Rolls

Great for something different! I paired it with Raspberry Inferno Sauce from this site & everyone loved these. Very easy to change up. Made a few with no beans, for a friend who HATES beans. Next doing a few w/o chicken for my vegan nephew. Different color toothpicks make it easy to tell them apart. Also I use eggroll wrappers, they crisp up beautifully!

Raspberry Inferno Sauce

This is great with Southwestern Egg rolls from this site. There is a local restaurant that paired the 2 together & we loved it! I suggest if you can't find seedless raspberry preserves, take the time & run it through a mesh strainer.

Chipotle Blue Cheese Dip

This was good & spicy. I had an open can of chipotle in adobe in the frig & looking to use it up. I had used 1 or 2 peppers out of the can, so the rest went into this recipe. I also added the entire bottle of blue cheese dressing (16oz.). I would imagine that with a whole can of peppers, this would be too spicy for some. I really liked it & so did several other people. The flavor was very nice & the heat follows. I served with celery, baby carrots & sliced baguette to help cut the heat.

Absolutely Fabulous Greek/House Dressing

Very Very Good. I used the same amount of oil to vinegar as suggested & found the vinegar over powering. I added more Dijon mustard & it balanced everything out perfectly. Used on Greek wraps with feta potatoes & even good with just bread for dipping. Will definitely make again!

Golden Potato Soup

Southern as You Can Get Collard Greens

These greens are really great. I add some Frank's hot sauce & it's good to go. The pot liquor could be served in a cup as a soup! I do a rough chiffonade on the greens & go back & do a couple cross cuts. The longer pieces of greens can be hard to eat. Try this recipe you won't be disappointed.

Cajun Style Red Bean and Rice Soup

This soup was kicking! I had a party of 12 people & everyone said it was great. The flavors blended nicely. I added some chunked leftover ham & served with white rice. 5 stars all the way! Used smoked sausage & red beans instead of kidney. I did pick out the fat pieces from the bacon as it floated to the top, but well worth the effort.

Antipasto Squares

These are fantastic! I used the Garlic Butter crescent rolls & roasted my own red peppers, add some hot banana pepper rings & everyone loved these!I also used 4 eggs inside & 1 to brush on the top. The flavor was excellent hot, cold or room temp. I will be making these again & again. The presentation was beautiful. Thanks for the recipe. PS also pre-baked the bottom crust 5 minutes.

Chicken Lasagna I

This recipe is excellent. I do suggest doubling the sauce, simply because it is delicious. We tend to like our food spicy so I add some crushed red peppers to the sauce for a nice bite. My husband dislikes chicken, but eats this up!! Very pretty presentation also, great colors.

Sage Pork Chops

This recipe was wonderful. I never put sage on pork chops, but the combination was very tasty. Skipped the salt & added lots of fresh ground pepper. As others, I made a gravy using cornstarch and sliced up some baby bella mushrooms. Will be making this one again. I will use a nice thick chop, so it doesn't dry out.

Carrot Cake III

This too was my first try making Carrot Cake. I made it for Easter & everyone loved it!! I halved the recipe, since there was only 5 of us. And made a one layer 8" round. I did use the applesauce idea & it was simply wonderful & moist. I used walnuts in lieu of pecans & decorated the top & sides with the nuts. It looked as impressive as it tasted. Thank You Tammy for this recipe, my husband already "told me" I will be making it again! ;)
