I didn't try it with cheddar (sounds sketchy), but with cream cheese it's excellent. My oven has two broil settings, high and low; 15 minutes on high would have been far too much heat. 15 minutes on low might do it; 7 minutes on high was plenty. I found them to taste better after they had cooled.

Enchiladas

Instead of the cream of chicken soup, I use an enchilada sauce from this site. I also use flour tortillas, omit the jalapenos (my GF doesn't like hot spices) and whatever cheese I have on hand. This has become our favorite dinner.

Enchilada Sauce

Big fan. I've thickened it with corn starch, but the last couple times I cut the chicken broth in half, and it came out nicely.

Ok, but we weren't inspired. My girlfriend found it "slimy" (perhaps less margarine/egg would accommodate her?), and I found it a bit bland, and more egg than I was looking for. I used flour tortillas instead of corn, but followed the recipe otherwise. I didn't look at the reviews first, but it seems that the people who added some extra flavor liked this recipe better than those that didn't.
