This was great for a quick work night meal. I added taco seasoning to the beef as I was browning it. I also broiled the corn tortillas rather than frying them in the butter to cut down a tad on the fat. I made a double recipe so for the left overs I served over baked potatoes with some salsa.

Chocolate Pudding Fudge Cake

This tasted great and is a great way to seriously improve on a store bought cake mix. I used Pam to spray the bundt pan and must have missed a section because about 1/4 of the cake stuck. Rather than try to fix it using frosting, I clean cut the 3/4 that came out well and made it pretty with the glaze. With the 1/4 that stuck, I made cake cups for the kids. This was a Christmas Eve dessert, so I put a scoop of the cake in the bottom of a Christmas designed platstic cup. Then I added a spoonful of whipped cream, then a spoonful of cake, then whipped cream & topped with a little glaze. The kids really liked the cups and I didn't waste any of the yummy cake.

Unstuffing Side Dish

I usually make plain old stuffing at Thanksgiving just for tradition sake. But I selected this recipe last time, using savory sage sausage as a few others recommended, and now I have been asked to make it for family gathering since Thanksgiving. It is very moist and has a compelte flavor (you don't need to eat it with a bite of turkey or chicken for good flavor).

Cream Cheese Frosting II

This turned out great & as others have said, it makes enough for 2 cakes. I felt like I had the mixer on forever to get it to the right consistency, so if you are impatient like me, tell yourself to keep mixing & it'll be worth it.

Glazed Tofu Meatloaf

This was surprisingly good! I had a package of ground turkey & a package of lite tofu & nothing in mind to make for dinner. The recipe is also very forgiving -- add what you like, subtract what you don't. We don't like onions or green peppers, so I used poultry seasoning, garlic and mushrooms. I just added the seasoned bread crumbs until it all stuck together nicely. Great recipe, thank you!

Baked Omelet Roll

It was my day to bring breakfast to work, so I made this & everyone loved it. I did add sausage & bacon before rolling up. Since I needed to triple the recipe, I used different pans & found that it is definitely better to use a glass 9 x 13 pan - the eggs turned out more fluffy & golden than those in the dark pan. Also, 20 minutes was too long to cook for my oven so I did 425 for 15min & that worked better. I prepared the night before & arranged all the rolled omelets into a larger pan, sprinked that with a little cheese & then reheated before going to work. It looked really nice & reheated well. Thanks for an easy recipe!

Chicken or Turkey Tetrazzini Deluxe

This turned out great -- a perfect quick dinner to throw together after work. My nearly 3 year old even enjoyed helping make (and eat)it. I halved the recipe & omitted the water as per other reviews & was thankful I did. Also, we don't like peppers so I added lightly steamed chopped broccoli instead, which worked just fine.

Awesome Steak Marinade

All American Apple Pie

This is a super-easy & great tasting pie recipe. I used 5 Fuji apples, which still made the pie overflow a bit. I also found that the top was more like dough & not crumbly. But I think that actually adds to the taste & texture of the pie. Just don't expect to have a crumbly topping. My 2 1/2 year old enjoyed rolling the topping into little balls & putting them on top. It was great! The pie was for my Dad's b-day & he likes his apple pies almost like applesauce, so I baked it 20 minutes longer & then left it in the oven another 15 minutes after I turned it off. The crust never burned, which is amazing! Thank you.

Mexican Casserole

My family loved this. I used regular corn rather than the cream corn and added about 1T of water. I miraculously managed to have a crunchy, cheesy top with a moist bottom. I used a lasagna spatula to serve it in nice little squares & topped with fresh tomatoes, avacado & lite sour cream. My son said it was fantastic, but to add more chicken next time. I have a feeling this recipe is great to play around with, but the more you add, the less success you will have with the cruncy to mosit ratio. But it will still taste great!

Catfish Tuscany

My husband loved this! I used swai fish, which is very similar to catfish but usually cheaper, at least where we live. I broiled from the middle of the oven as it was getting too brown, too quickly from the higher rack.

Christmas Cheese Cake

This was great - very high, light and fluffy for a cheesecake. It also looks so pretty. You need 2 packages of the 3oz lady fingers rather than one but other than that, no changes. Maybe it was because I made it at Christmas time, but all of the grocery stores had lady fingers in the bakery section, so I had no problem finding them.

Chocolate Chip Scones

I just made a 1/2 batch because I wasn't sure how they would go over. My husband just said they were amazing & he wished I'd made more. They were not rubbery at all - they came out brown and crispy on the outside and fluffy on the inside. I cooked for only 13 minutes. Be sure to only use the top rack so the bottoms won't burn.

Tacos in Pasta Shells

I followed the recipe except I added a spoonful of black beans at the bottom of each shell. The whole family enjoyed it- I used spicy taco sauce on 1/2 and mild on the other so all would be happy. My son heated up leftovers the next day in the toaster oven using the "toast" setting. He said it was fast and made it into yummy, crispy finger food. So there's the 11 year old's tip.

Beef Nacho Casserole

Like others, for the creamy salad dressing I used light sour cream with a little light mayo. The casserole held together pretty well. My husband complained it was a little bland so I added cayanne pepper to 1/2 of it the second time I made it. He was happy and the kids were happy with their less spicy side.

My husband, who likes his food HOT enjoyed this. I did add a fresh cayenne pepper and 1/2 of a ghost pepper for his tastes. After reading reviews about potatoes taking longer to cook, I used the smaller white potatoes and used frozen tilapia and cod. Fresh is always better, but the frozen was what I had and it worked well with the longer cooking time allowing it to defrost while cooking the potatoes and fish completely. My husband suggested trying couscous or lentils in place of potatoes next time, just to change it up.

Middle Eastern Turkey Dogs

My kids absolutely loved this. I served on oblong shaped naan, so I shaped the turkey into ovals and served with yogurt/cucumber/dill/garlic/lemon sauce. My kids ate it like a sandwich while my husband stacked everything & used a fork. Thanks for the recipe!

Sweet and Sour Chicken II

This was a bit too sweet for our taste, so I will cut back on the brown sugar next time. But other than that, it was a hit. I also used Wondra rather than regular flour because I am terrible at making smooth sauces. It went well with fried rice.
