It was my day to bring breakfast to work, so I made this & everyone loved it. I did add sausage & bacon before rolling up. Since I needed to triple the recipe, I used different pans & found that it is definitely better to use a glass 9 x 13 pan - the eggs turned out more fluffy & golden than those in the dark pan. Also, 20 minutes was too long to cook for my oven so I did 425 for 15min & that worked better. I prepared the night before & arranged all the rolled omelets into a larger pan, sprinked that with a little cheese & then reheated before going to work. It looked really nice & reheated well.
