Love this soup! I had never made potato soup, but I thought I would give this a try. It was amazing! I did make a few adjustments to the recipe and wanted to share them because I can't imagine making it any other way now. First of all, I sautéed all of my finely diced carrots, onion, celery, bacon (I didn't have ham on hand) and 2 cloves of garlic (minced) in my stockpot before adding the potatoes. After I added the potatoes I covered everything in 1 large carton of chicken stock to boil.(I also used the boulion for extra flavor) I did have to add one cup of water to cover everything though.I would highly reccomend doing this because I really believe this is what gave the soup such an amazing flavor. When I made the roux I used a few teaspoons more flour than called for just to make sure it would be thick enough. I cannot tell you how awesome this soup is! My 3 and 7 year olds cleared their bowls and asked for seconds immediately! My husband, who dislikes celery and onion,loved this and asked to take a huge bowl to work the next day! I did double this recipe because I knew I would want more. We are still eating this soup two days later and it's even better now. This is the ONLY recipe I will ever use for potato soup!
