Slow Cooker Chicken Taco Soup

This is an easy, GREAT recipe ... especially if you use about 1 1/2 pounds chicken tenders in place of the boneless breasts BUT ... FORGET THE BEER! Next time I'll use a can of chicken broth. Beer gives an unusual flavor that we did NOT care for.

Zucchini Pepperjack Casserole

While we really like the texture of this, the flavor was very, very bland. Next time I'll try sharp Cheddar cheese in place of the Monterey Jack and perhaps add some sun-dried tomatoes. This makes a hearty main dish so it is well worth playing with this recipe until you find the seasonings that you prefer.

Calico Squash Casserole

Excellent recipe. Because I was out of them I made the following very acceptable substitutions: a can of drained corn in place of the water chestnuts, cream of celery soup in place of cream of mushroom soup and seasoned bread crumbs in place of the Ritz-type cracker crumbs. I used a 2-ounce jar of chopped pimentos and they added great color contrast. Next time I'll probably opt for the 4-ounce jar and leave out the carrots!

Snickerdoodle Mix in a Jar

Outstanding ... especially when I added 1 tablespoon (YES ... tablespoon!) of pure vanilla extract with the butter and eggs. YUM ... made 5 dozen ... cookies will spread slightly so leave space between them.

Creme Brulee French Toast

Good but I recommend using a 15 to 16-ounce loaf of French bread cut or torn into small pieces and forget about taking off the crust. No need for any additional syrup with this but you might want to add some pecans.

Hot Cocoa Mix in a Jar

Fantastic! True chocaholics will LOVE this! I used a 9 oz. box of powdered milk and a 3.4 oz of cook 'n serve pudding mix as well as the suggested amounts for the other things included non-dairy creamer that was French vanilla.

Autumn Salad

Prepared this for a dinner party last night and it received RAVE reviews. I used red leaf lettuce for GREAT eye appeal and I used 1/2 of the amount of French Dressing called for and substituted real mayonnaise for the other half ... helps to cut the "tangy" taste of the French dressing. Excellent! I used one package of Lipton's Beefy ONion soup mix (dry) instead of the gravy mix because that's what I had on hand. I think this would serve at least 8. Thanks, Jessica!

Pork Butt Roast with Vegetables

Very easy, very good. I seared this as directed then put it in the crock pot and let it cook for 7 hours. Used 2 cans of vegetable broth and 1 lb. bag of baby carrots and 2 lbs of tiny new potatoes. Highly recommend.

Definitely 5 stars PLUS ... delicious combo of flavors and so easy to prepare. 1 pint blueberries, 1 pint strawberries, capped & sliced, 1 16-oz. bag quick-frozen raspberries AND 1 /4 cup cornstarch + the sugar and you've got a winner!
