Mini Cheesecakes III

These are delicious and very easy. Mine only needed to be baked about 15 minutes. I was using the foil cupcake liners and this might be why. I have made them a couple times now. My husband wouldn't mind if I omitted the lemon but I leave it in because I like it. The topping possibilities are endless! If you are looking for an easy dessert that will impress people, this is it.

Taco Casserole

This is a good "starter" recipe in my opinion, meaning it might be better if you add a few additional items you like in your tacos! I liked it, my husband liked it, but in the end it just seemed like it was missing something. I keep looking at the ingredients to see if I skipped something. I did substitute fresh diced tomatoes for canned, but that's it.

Rosemary Ranch Chicken Kabobs

The marinade is super easy to make. I followed the recipe, and only difference is my chicken marinated in the fridge for about 24 hours before cooking. The chicken was moist and tender and really retained the flavor or the marinade. We will make again for sure!

Cheesy Ham and Hash Brown Casserole

This was a yummy casserole! It is fairly easy to put together as well. My husband liked it better as leftovers - the thought after the flavors had sat overnight everything tasted better.

Blueberry Sour Cream Coffee Cake

The cake taste good, and is fairly easy to make. Mine just came out way too moist. Maybe it should have baked longer. Half of it fell apart after I took it out of the pan. I would also consider using less better next time.

Baked Coconut Shrimp

The shrimp taste good. They didn't look great, after flipping they would get real messy, and I felt it was hard to get the coconut to stay stuck to the shrimp. Would possibly make again as an appetizer. I served with the orange marmalade / horse radish sauce others recommended.

Zucchini Bread

This was a success for me! I cut the recipe in half since I only have one loaf pan, and I did make some substitutions. Since I didn't have half an egg, I used one egg and one half banana. I also used reduced fat sour cream, and half white sugar and half brown sugar (I do this for most of my baking.) The bread was moist and delicious. It only needed to be cooked for 55 minutes in my Bosch oven. Based on other reviews, I started checking it at 45 minutes to make sure I didn't over do it. I liked the chocolate, and the zucchini taste still came through. I will make this again.

Tomato Basil Pasta

Outrageous Warm Chicken Nacho Dip

It was good, as expected. My party goers would have preferred to skip the chicken, so next time I would probably just make it as a cheese dip. Or they suggested ground beef. They just though the shredded chicken was too chewy with the dip.

Cinnamon Swirl Bundt Coffee Cake

Very easy and delicious cake to make! My husband is German and while he likes cookies and brownies, what he really loves is cake. He was craving a cake one afternoon and I found this one. I had all the ingredients on hand. My husband would not stop talking about how good it was! It has a great texture and it is not too sweet. Perfect with coffee. I did not add icing. Baked at 45 minutes at 350 degrees in our Bosch on convention bake. I also used brown sugar for the swirl in the center.

Romantic Chicken with Artichokes and Mushrooms

The recipe is fairly easy. I listened to other reviewers and dredged the chicken in flour with salt and pepper, and added herbs de Provence to the cooking mushrooms and artichokes. I sprinkled Wondra to thicken the sauce some and simmered on low-medium heat, but the sauce was still quite thin. I probably could have added more Wondra. I served it with noodles and steamed cauliflower. It was good, and I would make it again. My husband is not a fan of acidic flavors and did not like the artichoke marinade. Next time I might substitute chicken broth for that portion.

Easy Chicken Tetrazzini

This recipe is easy to prepare and delicious. I cut the recipe in half since it is just two of us. I cooked the chicken with onion, and I also added peas to the spaghetti as it was finishing cooking. I used two chicken breasts (since that is how they come packaged from Costco.) I was very pleased with the result. The spaghetti was moist and creamy. I used an Italian cheese blend lightly sprinkled on the top and it was yummy.

Slow Cooker Chicken Taco Soup

This recipe is sooo easy to follow, and the result is delicious! To save calories, I swapped one cup of chicken broth for the beer. I put everything in the crock pot before bed, set it to seven hours, and shredded it when I woke up the next morning (probably about 9 hours later.) It turned out fantastic. It had just the right amount of spice. It does make a lot, so I froze some which I will use again for lunches in a week or two.

Magic Cookie Bars II

I couldn't be more pleased with how these turned out. They look just like the photo! They are easy to make and taste so yummy! I used an extra 1/2 cup of graham cracker on the bottom because it looked a little sparse after I used what the recipe called for. They got many positive reviews at the office. I can't wait to make them again.

Pumpkin Chocolate Chip Muffins

I'm really pleased with how these turned out. I did make some slight modifications. I used 1 cup pumpkin puree (trying to use up what I had open,) and I was out of cinnamon so I only used Pumpkin Pie spice. Additionally, since I used extra puree, I used 3/4 teaspoons additional spice than what is listed in the recipe. Finally, I used brown sugar and also added 1/2 teaspoon vanilla. They were simple to make and bake quickly.

Cranberry Sauce

It's good, I've made it twice and been pleased. Use the full sugar amount! I reduced it 1/4 cup this last time because 1 cup seemed like so much, but you really need it to balance out the tartness of the cranberries.
