Zaz's Oatmeal Shortbread

Not terribly shortbready but still very good. The only change I made was to use regular butter. They took about 10 mins to cook. Not bad at all! Thanks, Zaz!

Banana Waffles

Like others, I added mashed bananas to the mixture, and also added a little cinnamon. Topped them with maple syrup and a wee sprinkle of chopped pecans. Wonderful! Thanks, Jennifer!

Sesame Shrimp

I quadrupled the amount of marinade for 2 servings, and simmered it for about 15 minutes before throwing in the marinated shrimp. I also added some sliced green onions. It turned out great but would be even better with broccoli, mushrooms etc. Not bad at all though. Thanks, Jennifer!

Puff Pastry Salmon

Apart from topping the salmon with some finely diced fresh mushrooms, I made this as written, and it turned out pretty well. If I were to make it again, I would roll out the pastry - it was a bit too much for the piece of fish I used. Oh, and definitely cook it on a rack - this avoids the soggy bottom that other reviewers complained about. Not bad though. Thanks, danigirl!

Tomatoed Pork

Made this with pork tenderloin and serrano chilis as that's what I had on hand. Tweaked the seasonings a little and simmered for about an hour until the meat was melt-in-the-mouth tender. Turned out great - very hearty and flavorful. Thanks!

Bocconcini Salad

The store didn't have endive so I had to omit that. I'm not a big fan of raw bell pepper but it worked really well in this. Think I'll try it with goats cheese next time. Thanks!

Cut way back on the milk - or, better yet, stir in heavy cream a little at a time - to avoid ending up with nasty watery turnips. I also like turnips and cauliflower mashed together. Thanks!

Lemon Meringue Pie III

Absolutely perfect! I added a little more lemon juice and zest. It took just over 20mins for the meringue to brown evenly. One of the best LMPs I have ever tasted. Thanks so much, Rhonda!

Spicy Tortilla Roll-Ups

I only really made these because I had things in the fridge that needed using up. They were an unexpected hit! I used jarred roasted red peppers instead of pimentos, and jarred jalapeno slices instead of canned chiles. I upped the amount of olives as they weren't terribly flavorful. Turned out great. Thanks!

Burmese Chicken Curry (Gaeng Gai Bama)

I omitted the sugar since it was sweet enough already, and I had to add a little green Thai paste since my jar of red paste had had dried up at the bottom. Other than that, I made it pretty much as written. Served it over brown rice. Not bad at all. Thanks!

Spicy Mango Sweet Potato Chicken

I used baked sweet potatoes, decreased the amount of honey, and ended up adding a little salt as it was still too sweet. It turned out ok but not something I'd make again - the flavors just didn't work well together for us. Thanks anyway.

Chicken Eugene

The only change I made was to pound the chicken breasts flat, place two or three slices of dried beef on the chicken, roll it up, then wrap in bacon. I then poured a mixture of FF sour cream and low-sodium CoMushroom soup over the top. This was a rich and satisfying meal - served it with steamed broccoli and buttered baby potatoes. Thanks!

Rosemary Ranch Chicken Kabobs

I omitted the rosemary as a) I'm not a huge fan, and b) I didn't want to buy an entire package when I was only using it for one recipe. Even without the rosemary, the meat turned out amazingly tasty and flavorful. I marinated the chicken for about 24 hours, threaded the cubes onto skewers, and cooked it on my Foreman grill. I served it in warm pitas with lettuce, tomato and onion, with a little more Ranch dressing. Absolutely delicious!! I'll definitely be making this again. Thanks so much, Theresa!

The Best Stuffed Mushrooms

I don't want to even think about how many of these I ate... The only change I made was to lightly sprinkle the mushrooms with a mixture of breadcrumbs and Parmesan. These were absolutely delicious! Thanks so much, Leslie!

Tequila Steak

I halved the amount of cayenne pepper, and it was still a bit too spicy for my wimpy taste buds. The flavor, however, was fantastic - I marinated the steak for about 10 hours, and it was perfect. This would work great with chicken too, maybe as a kabob marinade. Thanks!

Goat Cheese Arugula Pizza - No Red Sauce!

I admit that I'm a pepperoni and mushroom pizza kinda girl, but even I thought this was pretty darn good. Apart from using sliced grape tomatoes, and also adding a little cracked black pepper, I made this as written - not bad at all! I still prefer a red sauce base, but this was really nice for a change. Peach Muffins

Absolutely delicious! I read through all the reviews for ideas on how to improve the recipe. This is what I did: Used 1/2 wheat flour, 1/2 AP flour; 1/2 melted butter, 1/2 olive oil; 1/2 white sugar, 1/2 brown sugar; added a good glug of vanilla extract, and a handful of walnut pieces. The recipe made 12 large muffins which I baked at 395f for about 22mins. Next time, I'll add more peaches and walnuts. Thanks!

Tuscan Bean 'Goppel'

The only recipe change I made was to use fresh tomatoes instead of canned. I let the simmered mixture cool before adding the feta and cilantro. This was a light but really filling lunch (had it with a slice of crusty bread). Thanks, ScooterMom!
