Mondi's Super Simple Chicken

Loaded Baby Reds

Disgracefully good! I made it with crumbled real bacon, and fat-free cream cheese. The only thing I wish I'd done differently was to use less cayenne - it was a touch too spicy for me. Other than that, this was really good. Would be great with some sliced green onion in it too. Thanks!

Winter White Soup

I pretty much just eyeballed the ingredients (more garlic, less ginger etc), and I omitted the pear as the ones at the store were rock hard and kinda sorry looking. I used my immersion stick blender to puree, and had to use chicken broth to thin the soup out a little. I intended to have it for lunch the next day but I couldn't stop eating it. Delicious and hearty! Thanks!

Baked Beans, Texas Ranger

I was really surprised how much I loved these BBs! I cut back a little on the sugar and didn't bother with the cayenne pepper. I cooked it in the slow cooker for a few hours on Low - turned out great! The only thing I would change next time would be to use dried beans (pinto maybe) so that they had a firmer texture. Black-Eyed Pea Salad III

This was super quick, easy and inexpensive but that's about it. The semi-mushy canned B-EPs just didn't hold up with the firmer textures of the tomatoes and onion. Maybe it would work better with, say, garbanzo beans? Thanks anyway!

Cassandra's Yummy Lamb Chops

I misread the recipe, and added the red wine to the marinade. I cut back on the olive oil since 1.5 cups sounded like way too much. Marinated the chops for about 8 hours, and cooked them in a skillet for about 4 minutes per side. They turned out perfectly - tender, juicy, and the marinade didn't overwhelm the flavor of the lamb. Absolutely Delicious Baked Root Vegetables

I cut back on the amount of chili sauce (and would probably omit it altogther next time). The carrots ended up a little burnt so I would probably add them a few minutes after the other veggies next time also. I added a little kosher salt. Very good. Thanks!

Creole Mexican Catfish

Super easy and very tasty! I simply drizzled the fish with olicve oil then sprinkled the seasonings on top. I served it with rice and beans, and ended up having the leftovers in flour tortillas. Good stuff! Thanks, Nick!

Italian Style Meat Roll

Not bad but not something I'll do again. It doesn't matter how hard I try, I always end up losing most of the cheese when making stuffed meat loaves. The meat itself is pretty bland as written, and needs more seasoning. Thanks anyway.

Amazing! Like others, I used butter instead of marg, and also added a little cornstarch to thicken. I'm no frosting expert, but this was some of the best I have ever tasted. Thanks, Carol!

Not bad as written, but much better with a generous pinch of snipped fresh dill sprinkled on top. If I make this again, I will leave out the leek - just personal preference - and perhaps use asparagus instead. Thanks, Annas!

Potato Soup with a Kick

Great basic recipe, but it needs a little additional seasoning. I added some garlic and onion powders as well as a little beef bouillon. Next time I'll add more veggies. Not bad at all. Thanks!

Fish in Foil

No smell, no mess, no major clean-up... It doesn't get much better than this! Husband likes things spicy so I added two sliced jalapenos to his foil packet. Also used lemon pepper instead of the regular variety. This was a super easy mid-week meal. Thanks, Denyse!

Avocado and Bacon Soup

I wasn't sure about this the first time I tasted it, but it definitely grew on me! I used an immersion stick blender til it was the consistency I wanted. Ate it for lunch with lightly-toasted Italian bread. Really good! Thanks!

Chicken Sandwiches with Zang

Like others, I pound the chicken breasts thin so they absorb more flavor, and I marinate the chicken in bbq sauce and a sprinkle of dry Italian dressing for a few hours. I cook them on the Foreman grill, and it takes no time at all. This is a great, filling sandwich for lunch - keeps me going all day! Thanks, Heather!

French Vanilla Cream Puffs

Soooo good! The puffs fluff up beautifully, and the vanilla filling is so rich and creamy. I prefer to melt the chocolate and drizzle it over the top - looks kinda pro! I'm not much of a baker but these come out perfect every time. Thanks so much, Lean!

Thai Green Curry Prawns

I had to omit the lemon grass as it was way too woody to put through the food processor. The only other changes I made were to add more soy sauce (low-sodium) and a splash of fish sauce. I'm not a big fan of canned baby corn but they worked great in this recipe. Served it over wide rice noodles as that's what I had on hand. Good stuff! Thanks, Lee!

Crispy Cheese Twists

This is a great recipe for using up puff pastry. I add a little salt and up the amount of Parm. I also squirt some cooking spray on the baking sheet so the seasoning doesn't stick to it. This is a tasty little snack. Thanks!
