Thai Peanut Burgers

Reviewed: May 7, 2010
Husband liked them more than I did. The flavors work well together but I wasn't a fan of the texture - I might try making them with smooth pb next time. Ok for a change but not something I'd want regularly.

Peanut Butter Cream Pie

Reviewed: May 7, 2010
I made this with a chocolate graham crust, and I ended up having to add another cup of Cool Whip ("extra creamy") because there wasn't really enough filling. This was SO good! Not too sweet, not too rich, but surprisingly decadent and satisfying. I'll definitely be making this again. Thanks!

Malidzano Eggplant Spread

Reviewed: Apr. 30, 2010
I don't like eggplant but Husband does, and he really enjoyed this spread. I halved the recipe, and it still made A LOT! It is also INCREDIBLY garlicky - almost too much! As others have noted, a splash of fresh lemon juice adds a lot to the flavor. I'll probably make this again with a couple of modifications. Thanks!

Anna's Amazing Goulash

Reviewed: Apr. 30, 2010
Phenomenal! I adjusted the seasonings according to personal preference and omitted the red bell pepper as we aren't big fans. The stew was thick enough so I didn't bother to add the bread crumbs. If I were to make it again, I would leave out the pork (we preferred the lamb and beef by far) and the celery (again, we aren't fans). This was a wonderful meal for a chilly Spring night. It smells amazing while its cooking too. Thanks, Anna - this is now one of my favorite stews!

Broccoli and Provolone Quiche

Reviewed: Apr. 30, 2010
I used two whole eggs and maybe 1/4 cup of cream. I also ended up adding some extra-sharp Cheddar cheese for a little more flavor. It turned out ok but I wish I had cut the broccoli smaller. Next time I will add more of the Cheddar. Thanks!

Pork Chops Deluxe

Reviewed: Apr. 27, 2010
This was a wee bit salty due to the soup but we still really enjoyed it. I used apple juice to de-glaze the pan, and I omitted the parsley as we don't like it. I was surprised how flavorful it turned out - the sauce would work well with chicken, I think. Thanks, Sandy!

Habanero and Goat Cheese Meat Loaf

Reviewed: Apr. 27, 2010
I made this with one small finely-diced green bell pepper which was plenty, and added the Cheddar in with the goat cheese. I also didn't bother to sprinkle bread crumbs over the top of the loaf. It was too spicy for me but Husband loved it - so nice to have a meatloaf recipe that's a bit different from the norm. Thanks, AnimalsTasteGood!

Meaty 'Cuban Black Bean' Soup

Reviewed: Mar. 29, 2010
I used canned black beans and Andouille sausage as that's what I had on hand. It's pretty good made as written but I threw in a good pinch of Adobo seasoning and also some fresh cilantro for extra flavor. Next time I'll add a fresh jalapeno or two. Thanks, Judi!

Melt In Your Mouth Pork Chops

Reviewed: Mar. 26, 2010
Decent. I made the recipe as written for two pork chops, and used half the mixture as a marinade. Marinated them for 6ish hours, then simmered in the rest of the sauce for about 45 mins. Turned out great - very tender and pretty flavorful. Thanks!

Arkansas Green Beans

Reviewed: Mar. 25, 2010
I cut wayyy back on the sugar but it was still much too sweet for my taste. Husband wasn't very enthusiastic, and the leftovers went uneaten. Oh well, thanks anyway!

Habanero Pepper Cream Pasta

Reviewed: Mar. 25, 2010
Like others, I used fresh habaneros. Also threw in a handful of sliced mushrooms that needed using up. Served it with garlic bread and salad. Not bad at all. Thanks!

Taco Bake

Reviewed: Mar. 25, 2010
This is a great basic recipe that can be tweaked in any number of ways (other reviewers make some fab suggestions). I usually add lime juice and chopped fresh jalapenos to the meat mixture, top it with a mixture of cheese and breadcrumbs, and sprinkle on some sliced green onion when it's done. Ok it's nothing fancy, but it's quick and easy, and super hearty. Thanks!

Lisa's Best Baked Clams

Reviewed: Mar. 23, 2010
I'm not a huge fan of clams but I enjoyed this dish. I omitted the parsley, and added some finely grated Parm to the crumb mixture. The fresh lemon is a must! Thanks!

Amazing Shrimp Stuffed Mushrooms

Reviewed: Mar. 23, 2010
I didn't simmer the mushrooms (just drizzled them with olive oil before the final baking) and I used regular cooked shrimp that I roughly chopped up. Great little appetizer - quick, easy and tasty! Thanks, Kara!

Row Jin Wo-Jiuh - Spicy Lettuce Rolls

Reviewed: Mar. 23, 2010
Not bad. I thought the over all flavor was lacking something but I'm not quite sure what (sesame oil maybe?). I wasn't overly keen on the pine nuts and celery. This was ok for a change but isn't something I'd make again. Thanks anyway!

Salmon and Asparagus with Penne and Light Cream Sauce

Reviewed: Mar. 22, 2010
Husband absolutely loved it! Apart from using fresh dill instead of dried, I followed the recipe pretty much exactly. Next time I'll add more Parmesan - 1/4 cup wasn't cheesy enough for us!

Chinese Chicken Soup

Reviewed: Mar. 22, 2010
I made this with bagged fresh stir fry veggies and some left-over rotisserie chicken. Also garnished it with a pinch of sliced green onion. Turned out great - better than many Asian restaurant soups I've had. Really easy too. Thanks!

Lamb and Winter Vegetable Stew

Reviewed: Mar. 22, 2010
I omitted the bnut squash, and used a combination of sweet and regular potatoes. I simmered the meat mixture for about 45mins, which was perfect. Served it with warm crusty bread and the rest of the red wine. Good stuff. Thanks!

Andouille and Poblano Quesadillas

Reviewed: Jan. 18, 2010
Husband loves these! I usually make them with canned corn, fresh jalapenos and grated extra-sharp Cheddar since I always have them on hand. A sprinkle of fresh cilantro doesn't hurt either. These are great for when you don't have much time in the kitchen. Thanks, Stephanie!

Blackened Shrimp Stroganoff

Reviewed: Jan. 18, 2010
I omitted the capers as we hate them, and I used regular onions instead of shallots as that's what I had on hand. I've only eaten jarred roasted peppers a couple of times previously, and I have to say I'm not as fan of the squishy texture - next time I will roast my own. I recommend adding the Cajun seasoning a little at a time until it's as spicy as you like - 1T might be way too much for some people. Nice recipe though. Thanks!
