Ranch Burgers

Was worried that the saltines would give the patties a meat loafy texture, but they didn't at all. With a dribble of Ranch dressing plus the usual lettuce, tomato and onion, these were some dang good burgers. Thanks!

Smoked Salmon Pizette

I'm not a big fan of smoked salmon (nor capers actually) but these were pretty good. Like others, I made them with toasted mini bagels. I agree though that the sour cream is a bit overwhelming - I'll cut way back next time.

Jamaican Barbecue Sauce

AMAZING! Tweaked it a little bit (less molasses and thyme, a bit more mustard) and also added a couple of cloves of fresh minced garlic. Had it with grilled chicken breasts and corn on the cob. Looking forward to trying it with ribs! Great recipe. Thanks, Lee Ann!

Cheddar and Macaroni Salad

I've made this a couple of times, once as written (really like the crunchiness of the bell pepper and celery) but I prefer it with broccoli instead of peas and celery. Be prepared to add more mayo/ sour cream as it does dry out a lot when you let it sit for 24hrs. Thanks, Karena!

Apple Jack Iowa Pork Chops from Des Moines

I cut back on the thyme and used apple juice with a splash of regular brandy. Turned out great - very succulent and flavorful. Sauce was delicious with mashed potatoes. Thanks!

Zucchini Corn Fritters

Loved these! My 16month old couldn't get enough of them! I usd canned corn as that's what I had on hand, and upped the cumin a little. This recipe makes a TON of batter but the fritters freeze well. Will definitely make them again when fresh corn is at its best. Thanks!

Tuna Fish Cakes

Not the best tuna cakes ever but definitely not bad. They need a sauce/dip of some kind - I serve them with tartare sauce, or a garlicky tzatziki also works well. Very quick and easy. Thanks!

Spicy Cilantro Pesto

Roasted Sweet Potato and Carrot Puree

My 10 month old goes nuts for this! I use a tiny pinch of sugar because they really are pretty sweet already. I also omit the salt and use low-sodium broth. Think I might try adding a little cauliflower, and see how she likes that. Thanks so much!

Korean Braised Short Ribs (Galbi Jjim)

Don't be put off by all the ingredients - these ribs are amazing! I omitted the kiwi and the shiitake mushrooms (forgot to buy them) and could probably have done without the water chestnuts. My only minor complaint is that everything turned out rather salty (and I love salt!). Other than that, we couldn't get enough. Thanks, I'll be making these again!

Tantalizing Turkey and Blue Cheese Meatballs

What a great change from my usual meatball recipe! I didn't bother processing the garlic, onion and jalapeno - just diced it all super-finely by hand. Also used two whole eggs instead of just whites. Needed a little salt in addition to the soy sauce, and maybe some kind of sauce, but we really enjoyed them. Good stuff! Thanks!

Apple Brine for Turkey the Night Before Cooking

Carrot Coconut Lime Soup

Now this is some good soup! I do agree that it needs some salt and pepper, and I cut back on the ginger a bit since 1t a bit much for my taste. I also use canned coconut cream which is way richer than coconut milk - a little goes a long way. Like all soups I make, I find that they are much better if you make them a day ahead. Cilantro Tomato Corn Salad

This is a fantastic recipe for using up left over grilled corn. I also love it because it uses ingredients I always have on hand. I usually make it with olive oil instead of butter, and, if I have it, a splash of fresh lime juice adds some great extra flavor. Quick, easy and inexpensive, not to mention really tasty. Thanks!

Southern Coleslaw

I omitted the eggs as I didn't like the idea of them with the other ingredients. Glad I did - this is some really really good slaw. Definitely refrigerate and leave for a few hours before you eat it - it's not nearly as good straight out of the mixing bowl. Thanks!

Chinese Braised Spare Ribs

These were very tender but there wasn't a lot of flavor. Apart from doubling up on the seasonings, I don't know how to improve this. Marinate the ribs in something? I won't be making these again. Thanks anyway.

Shrimp Chowder

This is a bit watery and bland as written, but with a few tweaks it turned out great. I didn't use FF milk - used half regular evaporated milk and half heavy cream instead. Added some roasted garlic to the vegetable mix, and also some Old Bay seasoning. Upped the amount of Worcestershire sauce too. This was a very heaty soup - served it with warm crusty bread. Thanks!

Orange Herb Roasted Chicken

I'm not a big fan of fruity meat, but this turned out really well. The combination of herbs and citrus was fragrant without being overwhelming. I roasted carrots in with the chicken, and they were also especially tasty. Thanks, Nellie!

Creamy Roasted Parsnip Soup

Definitely my fave soup recipe of the season so far. I omit the brown sugar and the allspice, and I sometimes throw in some cubed leftover baked potatoes to the puree stage (just use my good old immersion stick blender.) So delicious! Thanks, Alan!
