Pickled Bologna

Made this after stumbling across yet another 2 lb tube of bologna in the freezer. Husband had been reminiscing about the pickled bologna his best friend's mom made for them when he was a kid. I thought it sounded revolting, but I gave it a try anyway. Have to say that while it's not up there with my all-time favorite things to snack on, it IS pretty darn good. I made it with apple cider vinegar and fresh sliced jalapenos. Haven't reached the 90 day mark yet but I agree that it definitely gets better the longer you let it steep. We have it summer sausage-style with cheese and crackers. Good stuff. Thanks!

Soft Oatmeal Cookies

I'm not much of a baker but these turned out really well. Since my cookies always end up flattening out and spreading quite a bit, I didn't press them down with a fork. I took them out after 10 minutes, and they were still really gooey and floppy, but they firmed out nicely while retaining a chewy center. My only minor complaint is that they weren't quite sweet enough for me, so next time I will add some raisins or choc chips. Really good though. Thanks!

Amazing Spicy Grilled Shrimp

Amazing is right! Cut back on the sesame oil, and used cilantro instead of parsley (hate parsley). Used sriracha for the hot sauce, and kinda wished I'd used lime juice instead of lemon - will do that next time. Marinated for 12 hours which was perfect for us - imparted tons of flavor, and a really nice spicy kick. Thanks for an easy but super flavorsome recipe, Pat!

Fried Bologna Casserole

Discovered a 2lb tube of bologna in the freezer and didn't know what to do with it. Had some spuds that needed using up, and, BINGO!, stumbled upon "Fried Bologna Casserole." This is one of those dishes you feel hideous for eating because pretty much nothing about it is good for you, but yet it tastes sooo delicious! Thanks, Jenn! (I think!)

Adzuki Bean Mango Stir Fry with Cilantro Lime Coconut Sauce

I absolutely love the combination of lime, coconut milk and ginger, so I knew I had to try out this recipe. I used canned coconut cream which is thicker and richer than regular coconut milk. Also used canned red beans as time didn't allow for a trip to the Asian store. Definitely agree that the sauce needs a salty element - I added fish sauce and a pinch of salt. The mango I used was slightly underripe, which I think worked well. Husband wasn't crazy about it, but my 2 year old and me scarfed it down. Served it with plain steamed white rice. Thanks, Tori!

Tortilla Beef Bake

Added a packet of low-sodium taco seasoning mixture. Would definitely recommend throwing in some onions too. Obviously this is nothing fancy, but it made for a quick, easy and pretty decent Saturday night snacky meal.

Butternut Squash Bisque

Good soup but not something I can eat a lot of, nor do I ever get a craving to make it. Cut way back on the brown sugar, and it was still a little bit sweet for my taste. My 2 year old really loved it though. Not super crazy about the leeks either. Thanks anyway!

Enchiladas Suizas

Minus the olives, this is one of my 2 year old's favorite meals. I usually add a couple of diced tomatillos to the salsa verde mixture; also use what cheese I have on hand. I prefer flour tortillas, but the rest of the family likes the corn. Great recipe. Thanks!

Apart from using a little more garlic, I make this as written, and it is phenomenal. Awesome as a dip, but also REALLY good poured over grilled chicken and/or salmon. I always make a big batch of it because it never lasts long. Thanks!

Coq au Vin alla Italiana

Pretty good. Prefer it with white wine, and thyme as well as rosemary (just a little bit of each). With some nice crusty bread, this makes for a hearty comforting meal. Thanks!

Calico Beans

Really great basic recipe you tweak to your liking. I usually omit the butter beans (hate them) and double up on the kidney beans. It's a bit sweet made as written so I also cut back on the sugar. Really good if you add some garlic powder and a bit of paprika too. My 22 month old loves it with steamed rice. Thanks, Kathy!

Classic Minestrone

Great basic recipe you can tweak according to personal taste and what you have on hand. Personally, we prefer it with kidney beans, but cannelli beans are pretty good. I cut way back on the thyme, and usually use Italian seasoning. Fresh minced garlic and a couple of bay leaves add some nice flavor too. Thanks, Michelle!

Not bad. Agree that the balsamic really only adds a bit of a twang to the carrots. I made this with some really thick carrots that I halved lengthwise, and they were done in about 45 minutes. Thanks anyway!

Faye's Pulled Barbecue Pork

This was the first barbecue pork recipe I used after moving to the US. It's pretty good made as written but I now prefer to omit the cayenne, and use chipotle powder instead. I also use V8 juice instead of water for a bit more flavor. Thanks, Faye!

Easy Grilled Lemon Chicken

I've made this at least 10 times this summer - so easy and it tastes amazing! I tried it with lime juice instead of lemon but didn't like it nearly as much. Also did it on the Foreman grill but it wasn't nearly as good as on the charcoal grill. I marinate it for about 24 hours, and the flavors just pop in your mouth. Even my 19 month old loves it! Thanks!
