Kiki's Borracho (Drunken) Beans

This isn't my kind of dish at all, but Husband really enjoyed it. I made it with Amber Bock beer (nice flavor, not too heavy) plus I threw in some finely diced fresh jalaps as well as the jarred kind. I omitted the oregano, and added a few good shakes of Adobo seasoning. I mashed everything up a little, and served it with flour tortillas and sour cream. It would be great with some homemade guac too. Like I say, I wasn't wowed by it, but Husband was extremely appreciative. Thanks, Kiki!

Mushroom and Mascarpone Ravioli

Although several of the ravs fell apart during cooking, the ones that stayed intact were really delicious. I made them with regular yellow onion, and a combination of button and chestnut mushrooms. I'm glad I didn't omit the fresh chives like I'd intended - they added a really nice flavor to the mix. Thanks!

Win's Shrimp and Spaghetti

I cut back on the butter, upped the amount of creole seasoning, and also added some fresh minced garlic. It was absolutely superb! This is so quick and easy to make yet it looks and tastes like you've spent all day on it. Thanks so much!

Pasta Primavera with Italian Turkey Sausage

This turned out better than I thought. The only changes I made were to use turkey kielbasa (as that's what I had on hand) and I omitted the yellow squash as I had a few zucchini that needed using. The dish was filling but also very light. Very easy to throw together too. If I were to make it again, I would add a few more seasonings. Not at all bad as written though. Thanks!

Cabbage Jambalaya

Great basic recipe. I forget to defrost some ground beef so I omitted it. Also left out the celery as Husband hates it. It was a tad bland so I added an onion bouillon cube and some crushed red pepper flakes. It turned out ok - nothing really to rave about, but it was hearty and filling on a chilly Colorado night. Thanks!

Pretty Chicken Marinade

Apart from using full-sodium soy sauce, and also adding some prepared Colman's English mustard, I made this as written (I was a bit worried about the amount of liquid smoke but it actually turned out to be very subtle. Probably because it was a year or so old). I marinated the chicken breasts for about 8 hours, and, while I thought the flavor was decent, it was a little bit tart/sour for my taste. If I were to make it again, I would add a good-sized pinch of brown sugar. Thanks though!

Curried Chipotle Potato, Spinach and Cheese Wraps

Not bad but kinda bland. I used sour cream instead of cream (increased it quite a bit) plus a combination of crumbled queso fresco and a Mexican cheese blend. Not really sure what I could have done to make it more flavorful - maybe add cumin to the cream mix, or sprinkle on some fresh cilantro. Thanks anyway!

Asian Beef with Snow Peas

I marinated the beef for about 2 hours in a mixture of soy sauce, sesame oil and chili/garlic sriracha, then followed the recipe. Talk about quick and easy! Served it over brown rice with a couple of store-bought egg rolls. Not bad at all. Thanks!

Erin's Indonesian Chicken

I used lime juice instead of lemon, and also garnished the dish with lime wedges, plus a sprinkle of freshly-snipped cilantro. I just added the green beans and sauce mixture to the browned chicken chunks. Part from that, I made this pretty much as written. Delicious. Thanks!

Peppered Corn Bread

I omitted the red pepper because I didn't have any. Doesn't matter - Husband went CRAZY for this!! I'm not much of a baker (actually, I'm horrible at baking), but these turned out amazingly light and fluffy. I think the key is to not over-work the batter; just fold everything in together gently. I baked the mixture in a muffin cup sheet thing for about 20 mins. Perfect. As I type, he's eating them cold, drizzled in honey...

Slow Cooker Baked Beans

Traditional American-style baked beans are always way too sweet for my Brit palate, so I cut back significantly on the brown sugar and syrup (just a pinch/splash of each). After stirring in the ketchup, it was still a bit too sweet for me so I added a smidge of apple cider vinegar. The sweet/tart vinegar perfectly complemented the spicy Colman's English mustard I used. The smokey ham hock flavor took it to another level. Thanks!

Chiles en Nogada (Stuffed Poblano Chile Peppers)

I made a few changes due to personal preference and what I had on hand. I used chicken breasts, and omitted the raisins, nutmeg and walnuts (we're not huge fans, and I didn't really like the idea of them in this recipe). I upped the amount of garlic, and also added some Adobo seasoning. I topped the sauced peppers with some Mexican cheese blend, and broiled them til the cheese was bubbly. Served it with tomato/cilantro rice. Wow, what an awesome meal! Husband couldn't get enough. Thanks, Lucy Loo!

Grilled Mahi Mahi with Roasted Pepper Sauce and Cilantro Pesto

The only things I did differently were to use ahi tuna steaks, and I cooked them on the Foreman grill. This dish is quite a lot of work but, man, it is so worth it! The sauce and pesto work beautifully together, and look so pretty. Really amazing flavors. I can't recommend this enough. Thanks so much!

Amy's Cilantro Cream Sauce

I made this with one large bunch of cilantro, and fresh tomatillos. I also threw in a couple of small jalapenos for some kick. The flavor is great but it is a little too thin/runny. I'm going to add another half block of cream cheese tomorrow. Thanks!

Vietnamese Aromatic Lamb Chops

I marinated the chops for about 8 hours because I didn't want the lamb flavor to be overwhelmed. I roasted them for 30 minutes but 20 would have been ample. They turned out a little dry, but the flavor was amazing. Thanks!

Grilled Tropical Tuna Steaks

I made this with Apricot-Pineapple preserves as that's all I could find at the store, and I increased the amount of fresh cilantro. I marinated the fish (a shark steak) for two hours, which was perfect for us. The shark had a super firm/ dense texture which I wasn't especially crazy about, but the flavors came together really well. I reserved a couple of Ts of marinade to pour over the cooked fish. Served it over soba noodles with sesame green beans. Not bad at all. Thanks, dakota!

Butter Chickpea Curry

I fiddled around with the seasonings a bit, plus I threw in some cauliflower florets that needed using up. I also didn't bother pre-cooking the potatoes - just diced them into small cubes, browned them in the oil along with the onion and garlic, then simmered everything for about 30 mins until they were done. If I were to make this again, I would omit the tomato soup, and use tomato paste and water instead - the soup made it too sweet for me. It still turned out good though - don't forget to sprinkle on some fresh cilantro. Good stuff! Thanks!

Rice Pudding (Kheer)

This is a great basic recipe but if you're going to make this kheer, please read the other reviews!! Mostly, cut back on the milk and sugar, and rinse but don't soak the rice. I make this with full fat milk, and I also like to add a few small strips of orange peel to the mix (just personal preference). I'm not a dessert person, but I can eat kheer for lunch and dinner every couple of months.

Green Onion Biscuits

Turned out ok but needed more salt, more onion powder, and I used a combination of green onions and fresh chives. If I were to make them again, I would add garlic powder to the biscuit dough, and brush the tops with garlic butter.

Thai Chicken Pizza

This didn't work for us. We love Thai food, we love chicken satay... It was just too weird on a pizza crust. I'm glad other people liked it but I guess we'll stick with our usual pepperoni/ bacon/ onion/ cheesefest combo. Thanks anyway!
