Vietnamese Meatballs

Yup, way too wet (I even omitted the Worcestershire sauce, and halved the rice wine). The flavor was lacking, and I didn't like the texture. Not a hit in our house. Sorry.

Tangy Peas And Cauliflower

Shrimp Scampi Bake

I didn't have to time to bake the shrimp (and didn't really see the point of doing so) so I just threw my thawed raw jumbo shrimps into the butter mixture, and simmered til they were pink. This was an ok meal - needs more garlic and seasoning though. I won't make this again. Thx anyway.

Avocado Tzatziki

Don't omit the sour cream. Use lime juice instead of lemon. Up the amount of garlic. Keep an eye on it while it's refridgerating (mine started to discolor surprisingly quickly). I agree, this is a great dip, but can also be used to complement Mexican and Middle Eastern dishes. Thanks!

Chicken Chimichangas with Green Sauce

I didn't have time to puree the sauce so I just diced the olives and jalapenos really finely. The only real significant change I made was to roll the chicken/ cheese mixture in wheat tortillas, place them in a dish, pour the soup mix over the top, then bake at 375 for about 20 mins. Oh, and I skipped the sour cream. Husband couldn't get enough of it! Great recipe, Bobbi. Thanks!

Chicken Fajita Grilled Pizzas

Since I'm unable to bbq where I live, I had to modify the recipe a tad. I cooked the chicken and pob peppers on my Foreman grill, and left the onions raw. For the crust I used a boxed Jiffy pizza base mix, to which I added a handful of chopped fresh cilantro that I'd mixed in a little olive oil. The pizza was good but I wish I'd marinated the chicken in something - lime juice/ fajita seasoning/ Chipotle powder woukld have been good. With a few more adjustments, this could be outstanding. Romaine with Garlic Lemon Anchovy Dressing

Wow. The dressing is amazing!! This recipe is easily worthy of 5 stars, but it's even better if you throw in some halved grape tomatoes, some peeled English cucumber, and grate some Parmesan over it all. Thanks so much, Hong!

Sauteed Mushrooms in Garlic

I've cooked mushrooms with white wine a bunch of times but never thought of using red. For this recipe I used a very robust Chianti, and it turned out fantastic! I added the garlic when the shrooms were partially softened - 10 minutes would have burned it horribly. Thanks!

Pork Chalupas

It's just as well that this turned out so good because it made a TON of food. The only changes I made were to use fresh diced jalapenos instead of canned, and I also added a generous pinch of Chipotle powder and the juice of a couple of limes. My only (minor) complaints are that it was a little too salty, and also the beans were a touch undercooked despite being in the crockpot for 8 hours on High. Otherwise, this was delicious. Thanks!

Grilled Chicken with Ginger and Black Bean Sauce

I made this with a couple of chicken quarters, and pretty much quadrupled the ingredients (I wanted enough to marinate the chix plus have some left over to baste during baking). I marinated them for two hours, and baked in the oven at 350f for about 45 mins. Not bad at all. Thanks!

Angel Hair Pasta with Garlic Shrimp and Broccoli

Phenomenal. This is the kind of dish Husband orders when we eat out, and he said it was better than anything similar he's had at a restaurant :) I made it with fresh broccoli, and I upped the amount of pesto and garlic. I definitely agree that you should double the amount of sauce. With these changes, this is a five star recipe. Thanks so much, Robbie!

Good Good Green Beans

I used olive oil, fresh bean sprouts, and I added Splenda until it was as sweet as I wanted. I refridgerated it for about six hours and served it slightly chilled. Not bad at all. Thanks, Marisa!

Ellen's Buffalo Meatloaf

I ended up making this with half ground buffalo and half ground beef (didn't pay attention when taking it out of the freezer). I added some fresh garlic, and, like others, diced up the canned tomatoes a little more finely. The only other change I made was to mix some prepared English mustard with the ketchup. Although it crumbled when I cut into it, this was a very tasty meatloaf. Nice and moist too. Thanks!

Mango Cashew Salad

I HAD to make this because the ingredients seemed so weird. Wow, what a surprise - this was really good! I made it with a slightly underripe mango and white balsamic vinegar. Next time, I'll cut back on the ginger and cinnamon. Thanks!

Indian Carrots, Peas and Potatoes

If you're a curry fan, you're probably going to find this bland. I upped the spices called for but also browned some cumin seeds in the hot oil before adding the onion. I also added some Madras curry powder for heat/flavor. I made this with leftover peas and baked potato from last night's dinner, and used steamed cauliflower instead of carrots (I LOVE curried cauli). I rolled it up in a paratha with a drizzle of garlic chutney. Nice lunch. Thanks!

Lemon Trout

The only changes I made were to cut back on the amounts of flour and lemon zest, and I added a good pinch of garlic powder. Though I overcooked the fish by a few minutes, it turned out phenomenally - nicely blackened, and bursting with flavor. Delicious! Thanks so much!

I omitted the green bell pepper as we aren't huge fans, and added more tomatoes instead. Four eggs is definitely not enough to hold everything together, so I threw in another two which was perfect. This was filling and pretty healthy. Thanks, Donna!

Awesome Baked Sea Scallops

Pretty good but I think it needs a little more seasoning. I added some lemon juice and a splash of white wine. I was going to throw in a pinch of lemon pepper too but didn't (I will next time). Like other reviewers, I cut back on the breadcrumbs and also turned on the broiler for the last 3 or 4 minutes of cooking time. Served it with asparagus and boiled baby potatoes. Thanks!

Mom's Irish Ziti

This turned out ok but it was kind of a waste of ground lamb (you couldn't taste that it was lamb at all. Next time, I'll stick with ground beef). The only changes I made were to stir the Italian seasoning and red pepper flakes into the meat mixture, and I also added a little ricotta cheese that needed using up. This was a quick and hearty meal on a chilly evening. Thanks!
