White Chocolate Raspberry Cheesecake

This was my first cheesecake ever and it turned out really good. (I even used the 1/3 less fat Neufchatel cheese.) However, despite the 2 cups of white chocolate in the recipe, you can't really taste a white chocolate flavor. It just tasted like a great raspberry swirl cheesecake. Don't worry if it doesn't look set up when you take it out of the oven. It will set as it cools. Just bake until it barely starts to brown on the top edges. Mine did crack as it cooled. Maybe I should have tried the water bath method? I wasn't sure how to do that.

Roasted Garlic Cauliflower

This is a great way to eat caulflower. I think next time I'll add brocolli, too. I didn't have enough fresh garlic, so I substituted garlic powder (1/2 tsp per clove) and it worked okay. If your head of cauliflower is a little smaller, cut down the parmesan. It was a tad overpowering for me.

Dressed-Up Broccoli

Yummy! I thought the bread crumbs were probably unneccesary. But, parmesan on broccoli was tasty. Also, steaming in the microwave worked perfectly. Quicker than my usual method in the steamer.

Excellent and Healthy Cornbread

I was excited to try a healthier version of my son's favorite "dinner." But, this was a little HEAVY for me. It was okay...but not light and fluffy like we're used to. Good concept, but I'll probably keep searching for a different low fat corn bread.

Black Bean Vegetable Soup

This is delicious. I added a bit of chopped green pepper along with the other veggies. It is pretty spicy with 2 tsp of chili powder. I think 1 tsp is just right for me. Yummy soup!

Cinnamon Apple Pancakes

I loved how healthy this recipe looked. But, it wasn't a hit with my family. The pancakes didn't cook completely around the apple chunks. And, I didn't think they were very sweet at all--even WITH syrup! Sorry!

Baked Chicken with Peaches

This smelled wonderful (like peach pie!) but didn't have as much flavor as I hoped. I would use lots more peaches for that amount of chicken. I didn't try thickening the drippings for a sauce, but wish I would have. It is very watery otherwise. Served with rice. It was alright.

Fabulous Zucchini Grinders

I liked these a lot. The bread did get soggy. Next time I might melt the cheese onto the bread under the broiler, then put the hot filling onto the buns just before serving. Great way to use all that garden zucchini!

Honey Almond Chicken

This did not turn out well at all for me. I used chicken breasts and they got very dry and chewy--I think 1 hour was too long to bake! I agree that the sauce was greasy (and I even used less butter) and didn't have much flavor. I don't recommend this. Sorry.

Tuna Noodle Casserole I

This didn't turn out as well as I thought it would. The cheese sauce looked great before I mixed everything in...then it just seemed to disappear! Maybe I used too many noodles? It got pretty dry after baking. Should have skipped that step, I think.

Mexican Bean Salad

Very yummy! I made it just as written except left out the hot pepper sauce. Served over a bed of Romaine with the option of crushed tortilla chips and sour cream on top. Everyone at the party loved it, too.

Aztec Casserole

I did not enjoy this casserole very much. The tortillas got so soggy that they almost disappeared. It was pretty mushy. Crushed tortilla chips on top were a great improvement, though.
