Pork Chops with Raspberry Sauce

I thought this sounded interesting and was pleased with the result. I followed the recommendations to double the sauce (except the vinegar) and add a little butter to it. Served with rice.

German Pancakes II

A family favorite! We use only 2 T. butter, whip batter with beaters or blender, then bake at 425 for 20 minutes. Serve with lemon juice and powdered sugar! Yum!

Golden Sweet Cornbread

This DID have a sweet flavor, but the consistency was pretty dry...maybe because it has more corn meal than the recipe I usually use. Anyway, I think I'll go back to my old one.

Hot Vanilla

My kids loved this! It only needs 30-40 seconds in the microwave for them. We squirted whipping cream on the top and add sprinkled only a dash of cinnamon and a bit of chocolate milk mix (or chocolate syrup) on top of that!

Mandarin Orange Chicken

This is pretty good. We have made it twice and will probably do so every once in a while. I would like to try adding more vegetables (broccoli, carrots, etc) and maybe some garlic next time. I agree that the oranges, green onions and cashews should be added at the very end or sprinkled on top.

Fruit Dip II

Easy and delcious! I add a teaspoon of lemon or orange juice and sprinkle it with a dash of nutmeg before serving. Also, I've colored it pink for baby showers, etc. Cute and yum!

Broccoli with Garlic Butter and Cashews

This was really good. I think the hardest part is to avoid over-cooking the broccoli. Once the water was boiling, mine took only about 3 MINUTES! Just watch for the bright green color and then test for tender cripsness! Yum!

Sweet Potato Oranges

I loved this idea for a fancy side dish. It was time-consuming and messy to prepare and I think people at the party were afraid to try them! They tasted good, but I don't think the orange peel really added much flavor. And leftover, the peel started to disintegrate and made the potatoes bitter! Fun idea, but not worth it. Next time I'll just make the "Sweet Potato Classic" casserole. It's delicious!

Fusion Chicken

This was definitely DIFFERENT. It turned out pretty watery after adding the onions and apples. It seemed like the spices got mostly washed off the chicken into the water. So, it didn't have a lot of flavor without the salsa. I don't think we'll try it again.

Chicken Tortilla Soup I

Not great. There wasn't much flavor. It seems like it needs more of a tomato flavored base. We didn't like the hominy in it, either. I won't make it again.

Squash Potatoes

I thought these were great. The filling was a little runny (I didn't let my squash drain very long) but it ended up fine after the final baking time. I think I'll see if I can get by with less butter next time and still make them taste flavorful and good. Great combination! Thanks!

Easy Mint Chocolate Chip Ice Cream

This was pretty good...but not GREAT. I used a grated Hersheys Special Dark candy bar for the chocolate but otherwise followed the recipe. The texture was AWESOME--it stayed soft and scoopable even in the freezer, almost like store-bought. But, something about it tasted sort of "waxy" to me. I'll try a different recipe next time.

French Cafe Summer Salad

My husband wanted me to make potato salad, but I wanted a healthier version without so much mayo. I was VERY disappointed! I should have read the reviews before making it. I agree that it needs LOTS more dressing! I couldn't taste ANY! Adding vinegar is also a good idea, since olive oil doesn't have much taste anyway. There was definitely something missing. I was embarassed to show up at a picnic with it. Sounded like a great idea for something different. But, I don't think I dare try it again.

Easy Chicken Enchiladas

I used 6 oz of lite cream cheese, but I think 4 oz would be plenty. The tortillas got a little tough when baked dry. I'll add the enchilada sauce on top next time and the cheese at the end (it was pretty crispy!)

White Chocolate Raspberry Cheesecake

This was my first cheesecake ever and it turned out really good. (I even used the 1/3 less fat Neufchatel cheese.) However, despite the 2 cups of white chocolate in the recipe, you can't really taste a white chocolate flavor. It just tasted like a great raspberry swirl cheesecake. Don't worry if it doesn't look set up when you take it out of the oven. It will set as it cools. Just bake until it barely starts to brown on the top edges. Mine did crack as it cooled. Maybe I should have tried the water bath method? I wasn't sure how to do that.

Roasted Garlic Cauliflower

This is a great way to eat caulflower. I think next time I'll add brocolli, too. I didn't have enough fresh garlic, so I substituted garlic powder (1/2 tsp per clove) and it worked okay. If your head of cauliflower is a little smaller, cut down the parmesan. It was a tad overpowering for me.
