Mmmm good! Tricky to get the oil to the right temperature in a skillet, but once it was there (thanks to a candy thermometer!) they worked perfectly!

Whole Grain Breakfast Cookies

Kids couldn't believe they were getting cookies for breakfast! I can't believe I'm saying this (since I have a sweet tooth) but next time maybe I'll cut back on the sugar so it seems less like a treat and more like a breakfast! Can't do without the chocolate, though! Delicious! I was worried when the dough wouldn't hold together, but just plop them in balls and it works out.

Cranberry Orange Wheat Scones

I did half white flour, half whole wheat as others suggested. Also added a glaze (powdered sugar with orange juice) which I think they needed for sweetness. Delish!

Carrot Cake Cookies

I left out the raisins since we don't care for htem. I pureed the carrots with the pineapples and drained out the juice. (I didn't want my kids to freak out at the chunks.) Also used ALL whole wheat flour. Texture was great. Especially yummy with cream cheese frosting! We made them into "nest" cookies (with jellybeans and green coconut) for Easter.

Buttermilk Oatmeal Muffins

I made these with less sugar and whole wheat flour instead of white. I agree that they could use a little more flavor...I forgot to add vanilla, cinnamon or nutmeg as suggested. But, they are also good as-is or with blueberries or chocolate chips inside.

Tomato Chicken Parmesan

very good. I didn't cook the chicken 8-10 min per side because the crust was getting too brown. So, I'm sure it wasn't cooked all the way through at that point, but by the end of 20 minutes in the oven, it was.

Whole Wheat Biscuits

these turned out really dry for me. I love to use whole wheat flour in things...but won't be trying these again. 2ND try - nice flavor, but really crumbly. Family complained.
