Thai Peanut Chicken

Yum!! I doubled the sauce, and as we didn't have white wine vinegar, I just used regular vinegar. I also used super chunky peanut butter, and increased the garlic a lot in addition to massively increasing the cayenne pepper as my husband is from India and looooves spice. We used peas instead of broccoli as we didn't have any... delish! Very filling. I will certainly make it again, as it is easy, relatively quick and flexible. Thanks!

Keema (Indian-Style Ground Meat)

This was great!! I did, however, make a few changes. First I heated some olive oil and added about a tsp of cumin seeds, a broken cinnamon stick and 2-3 cloves (let them crack/pop). Then added onion, sauteed, followed by garlic (we use heaps of minced garlic). Added ground turkey (healthy and an amazinggg substitute in so many dishes!) and mashed it. I left in those juices from the turkey as we did not have broth. Then added salt and a can of diced tomatoes (not drained), and followed up with about 2 tsp of garam masala (essential ingredient!!!), 1/2 tsp tumeric, 1 tsp coriander powder and red chili powder to taste. Simmered on low for 20 minutes. My hubby is FROM India and he loved it!!! Definitely a quick tasty recipe... but go easy on the spices if you aren't a huge spice person!!

Salmon with Lemon and Dill

Yum!!! Made this twice already, and my hubby loved it both times! I used minced garlic from a jar (and lots of it- hubby is from India and loooves flavour!). Sometimes we add red chili flakes for an extra kick! And after reviewing other ratings, I secured foil around the fish to keep the sauce in and then poured it on the plates after... had it with peas and rice. Mmm!
