Classic Macaroni Salad

Classic. Excellent. To improve the nutrition of the salad, I prefer to cut the sugar to 1/4 cup and the salt to 1 tsp as well as use reduced-fat mayo. It still tastes wonderful. We also mix up what we use as add-ins. Current fav: cheddar cubes, blanched broccoli florets, fresh English peas and a small amount of diced red pepper (mostly for colour).

Peppermint Patties

Not sure if this has already been mentioned ... but I use the peppermint patty part of this recipe to fill chocolates. I use melting wafers to coat a mold. That goes in the freezer and then it is very easy to squish a pat of the peppermint patty in the mold and top with more melted chocolate. I think that dark melting wafers (I buy bulk at the grocery store)would work really well if you wanted to make dip the patties like the recipe suggests. Melting wafers are fairly fool-proof :)

Apple Pumpkin Muffins

Wow! I don't review too many recipes on this site ... but this one I had to. The muffins were amazingly moist and flavourful. And I love my muffins! I halved the recipe, used "Pumpkin Pie Spice II" recipe from allrecipes for the pie spice and added about a Tablespoon extra oil. I was worried the batter was too dry -it is quite dry for a muffin batter but worked very well regardless. I'm going to try this in a loaf pan tonight.

Oriental Vinaigrette

I thought this was wonderful! I followed the recipe as is, except used Calorie Wise Mayo. It worked on pasta salad as well as green.

Shepherd's Pie VI

I will make this recipe again. Although, the beef mixture wasn't quite flavourful enough for my taste. Next time I will add garlic, worchestershire and maybe steak sauce instead of ketchup.

The Best Meatloaf

I don't make meatloaf often, but after finding this recipe - I plan to make it a lot! I loved it. It was moist and flavourful, and best of all, it doesn't have ketchup in it (which I hate:) Although, if you don't like steak sauce, this recipe might not be for you.

Grilled Salmon Kyoto

Wonderful flavor! I broiled instead of BBQ'd it and we loved it. I'm not too sure that the tomato sauce adds a lot to it though ... I will try next time with out.

Attitude Chicken

A creative use of cream soup to make something other than the typical casserole. We didn't love it, but it was definitely tasty and quick to make. I made one change to simplify things - threw fresh broccoli in with the pasta for the last 2-3 minutes and didn't put lemon and butter in the water. I don't agree that this recipe uses a lot of pots - it is pretty typical to use 3-4 pots & pans when making pasta and sauce.

Beef Tenderloin With Roasted Shallots

My husband and I used this recipe for our first ever pot roast and really impressed the inlaws! We used top sirloin and it tasted wonderful. We also left out the bacon but it was still great. Next time I might try adding the bacon and a few less shallots. It was more of a shallot sauce than a gravy with shallots for flavour.

Chicken and Broccoli Braid

This recipe is quick and a great idea for using the crecent dough. Vary the ingredients and kids will love it! I made it as described except without dill. I wasn't hugely impressed though - almond and onion tasted strange together.
