Broccoli Cheese Cornbread

Reviewed: Feb. 6, 2005
I made this exactly by the recipe and my family thought it was yummy. If you are looking for traditional cornbread, you may want to try another recipe as this is more like a broccoli casserole because of the soft inside texture. It would make an excellent and different side dish for a pot-luck. I used jalapeno cornbread mix.

Coconut Poke Cake

Reviewed: Apr. 26, 2012
I love this cake because not only is it delicious, but you can prepare it ahead of time and freeze until needed. It is great to make ahead and have ready to take to barbeque's or family cookouts.

Tex-Mex Corn on the Cob

Reviewed: Jun. 19, 2009
I love corn on the cob cooked on the grill, but sometimes if I am in a hurry I don't have time to do a receipe from scratch, so have tried mixing a few shakes of taco seasoning into the melted butter. Not as good as the recipe, but a quick fix ifyou are in a hurry.

Ham Salad Spread

Reviewed: May 16, 2008
I made this with left over ham, and only wish there had been more left-overs. I did leave out the egg, just a personal preference, but it was delish! Thanks so much for sharing.

We thought this was an excellent recipe. The bread was moist and flavorful. We especially enjoy it with morning coffee. Thanks for posting!

Amy's Cilantro Cream Sauce

Reviewed: Apr. 24, 2006
Excellent! Do not wait to try it, or you will be missing out. I am not the biggest fan of cilantro, so only put in about 1/2 a bunch and it was fine. As someone else mentioned, it does thicken in the refrigeration. When you first make it, it is pourable, more like a sauce, but after chilling, it is more "dip like." Either way, very good.

My Little Secret

Reviewed: Apr. 24, 2006
Made this over the weekend. I forgot to add the eggs, but it was good without them. Used real bacon bits just for convenience and added some of the onion tops for color. Will make again. Thanks Lisa for sharing your secret!

Chocolate-Almond Fudge

Reviewed: Nov. 19, 2005
Thought this was an excellent recipe. Very easy. I cooked it in my teflon electric skillet which made it easy to control the heat. Ready in no time, and everyone thought it was delicious.

Jalapeno Pepper Appetizers

Reviewed: Jun. 10, 2012
Make these often, but since the size of jalapenos vary, instead of measuring the cream cheese teaspoon by teaspoon, I just use how ever much it takes to fill each one. I use regular, not whipped cream cheese as it is firmer. Normally, I cut, prepare the jalapenos and stuff them one day, then refrigerate overnight and bacon wrap on the following day. I do a large batch each time, layer them on foil and freeze. After they are frozen, I package them in plastic bags until needed. Allow to defrost slightly before placing in 350 degree oven on a wire rack so grease will drain off.

Pistachio Bread

Reviewed: Feb. 6, 2005
I made this exactly by the recipe. Is is very good and would be great to make for St. Patrick's day. If I were making it for Christmas, I would probably add more cherries just for the contrast. We don't care for overly sweet treats so this was perfect for our taste. It reminds me of a pound cake and would probably be good served with fresh fruit.

Chicken Enchiladas III

Reviewed: Nov. 10, 2004
This is similar to the way I make my chicken enchiladas, but almost every recipe at this site I have seen for these uses flour tortillas. We live in South Texas and no one has ever heard of using flour tortillas for enchiladas. We use only corn tortillas. I'll bet if you try them you will never go back to the flour ones.

Alison's Slow Cooker Vegetable Beef Soup

Reviewed: Oct. 12, 2004
I left out the salt and used only half as many bouillon cubes, and it turned out great. The had only large bouillon cubes. I'm not sure of the difference. I think this would be good served with corn bread.

Zucchini Tomato Pie

Reviewed: Oct. 12, 2004
This is really good, although the first time I made it we thought it was a bit bland. When I made it the next time I added some crumbled bacon and finely chopped jalapeno pepper. Oh my, what a difference! I will be making this again and again. There are probably endless ways to adapt it to your family's taste buds.

Cinnamon Chips Muffins

Reviewed: Feb. 14, 2005
These were easy enough and had a pretty good taste, but they were so dry, you had to have something to wash them down. I too, would like to add something to make them more moist.

We have to omit the salt because of dietary restrictions, but it is still a great mix.

Pineapple Angel Food Cake I

Reviewed: Feb. 14, 2005
This was absolutely delicious. I will make it again and again. Just one word of caution. Although the directions clearly stated 9 x 13 pan, I made it in a tube pan. The directions on the cake mix stated in big bold letters, DO NOT GREASE PAN, so I did't. BIG, BIG, MISTAKE. The cake stuck to the pan and came completely apart. Sooo, I just took the pieces, put them in a 9 x 13 pan and spread the Cool Whip topping over them. Everyone still loved it. I did add a small can of pineapple to the Cool Whip, along with a couple of drops of yellow food coloring, just for a little added touch. Thanks so much for posting this recipe.

Cake Mix Cookies IV

Reviewed: Mar. 14, 2012
Excellent quickie recipe. I made these for a family member to take to the beach on spring break. Used a lemon cake mix and sprinkled with powdered sugar immediately after taking out of the oven. The powdered sugar adhered to the top as they cooled, and made a pretty presentation. They would be nice for a baby or wedding shower too. Everyone loved them.

Texas Christmas Pickles

Reviewed: Sep. 9, 2005
This is similar to a recipe I have used, except we purchased gallon jars of hamburger slices at Sam's instead of having to slice the pickles. As you described, they are dark green, crisp and yummy. Everyone loves them. My recipe calls them "cheater pickles." We packaged them in small containers with a red plaid ribbon for Christmas gifts. A big hit! Mine did not call for the hot sauce.

Hamburger Soup I

Reviewed: Dec. 11, 2005
I made 2 pots of this at once, and made a couple of changes. I did not have any frozen corn or ketchup, so had to omit those, but added a few potatoes in place of the corn. I used only 3 boullion cubes and 1 can of beef boullion in place of some of the water. After adding the tomato sauce, I was afraid the soup would be too tomatoey, so didn't put the sauce in the 2nd pot. They both turned out equally good. We enjoyed this immensely and I plan to make it again and again. I thought the celery added a lot to the taste, and am surprised that so many left it out. I served this with toasted French bread. The flavor only improves the next day and the soup thickens a bit more. Yummy, yummy, yummy !

Frozen Cranberry Salad

A great cranberry dish. Something light, cool and refrishing to go with the heavy turkey, dressing and gravy. Can be prepared in advance. Also a plus!
