Pecan Pie Surprise Bars

Reviewed: Oct. 10, 2004
Something is wrong here ! I tried these yesterday, and 1/2 cup of melted butter and one egg to 1/3 of the cake mix does not equal "crumbly" It was DOUGH ! That was way too much liquid. I can not believe the others made this by the recipe and came out with such rave reviews. After seeing the results of all that liquid, all I could do to salvage it was to add the additional eggs, etc. called for on the box of cake mix and just bake a plain yellow cake. I was very disappointed as I was baking these for company. After reading the response. I wish to say that I did not misread the directions. My only thought is that perhaps they meant "softened butter" as opposed to "melted butter." I still say that 1/3 box of cake mix, 1 egg, and 1/2 cup of melted butter was not crumbly.

Zucchini Tomato Pie

Reviewed: Oct. 12, 2004
This is really good, although the first time I made it we thought it was a bit bland. When I made it the next time I added some crumbled bacon and finely chopped jalapeno pepper. Oh my, what a difference! I will be making this again and again. There are probably endless ways to adapt it to your family's taste buds.

Alison's Slow Cooker Vegetable Beef Soup

Reviewed: Oct. 12, 2004
I left out the salt and used only half as many bouillon cubes, and it turned out great. The had only large bouillon cubes. I'm not sure of the difference. I think this would be good served with corn bread.

Chicken Enchiladas III

Reviewed: Nov. 10, 2004
This is similar to the way I make my chicken enchiladas, but almost every recipe at this site I have seen for these uses flour tortillas. We live in South Texas and no one has ever heard of using flour tortillas for enchiladas. We use only corn tortillas. I'll bet if you try them you will never go back to the flour ones.

Broccoli Cheese Cornbread

Reviewed: Feb. 6, 2005
I made this exactly by the recipe and my family thought it was yummy. If you are looking for traditional cornbread, you may want to try another recipe as this is more like a broccoli casserole because of the soft inside texture. It would make an excellent and different side dish for a pot-luck. I used jalapeno cornbread mix.

Pistachio Bread

Reviewed: Feb. 6, 2005
I made this exactly by the recipe. Is is very good and would be great to make for St. Patrick's day. If I were making it for Christmas, I would probably add more cherries just for the contrast. We don't care for overly sweet treats so this was perfect for our taste. It reminds me of a pound cake and would probably be good served with fresh fruit.

Cinnamon Chips Muffins

Reviewed: Feb. 14, 2005
These were easy enough and had a pretty good taste, but they were so dry, you had to have something to wash them down. I too, would like to add something to make them more moist.

Pineapple Angel Food Cake I

Reviewed: Feb. 14, 2005
This was absolutely delicious. I will make it again and again. Just one word of caution. Although the directions clearly stated 9 x 13 pan, I made it in a tube pan. The directions on the cake mix stated in big bold letters, DO NOT GREASE PAN, so I did't. BIG, BIG, MISTAKE. The cake stuck to the pan and came completely apart. Sooo, I just took the pieces, put them in a 9 x 13 pan and spread the Cool Whip topping over them. Everyone still loved it. I did add a small can of pineapple to the Cool Whip, along with a couple of drops of yellow food coloring, just for a little added touch. Thanks so much for posting this recipe.

Pink Stuff

Don't get me wrong, this was good, but if you are not a "sweet" person, try something else. It is very, very, sweet! Of course, kids love it.

Sad Cake

Reviewed: Feb. 22, 2005
I have made this twice now. It is a real winner, easy, quick, and everyone loved it. I cut it into bars like brownies. OK, something has gone awry. Since first making this with great success, the last 2 times, it has been a total flop. It did not rise, much less fall, and it was dry and tasteless. I can account for part of the problem, since I did not use chocolate chips that I normally put in, but am wondering if the baking mix could be outdated? I am going to try one more time using a fresh box of baking mix and adding the chocolate chips as I hate to abandon a recipe that I previously used with such success.

Busy Day Chicken Rice Casserole

Reviewed: Feb. 28, 2005
I didn't have cream of mushroom soup, so used, cream of chicken and cream of celery, and used about 1/2 of the onion soup mix. I'm glad that I did because it would have been way too salty for our taste with the whole pkg. It took about longer than the time specified, but the rice did get done and it was pretty tasty.

Texas Christmas Pickles

Reviewed: Sep. 9, 2005
This is similar to a recipe I have used, except we purchased gallon jars of hamburger slices at Sam's instead of having to slice the pickles. As you described, they are dark green, crisp and yummy. Everyone loves them. My recipe calls them "cheater pickles." We packaged them in small containers with a red plaid ribbon for Christmas gifts. A big hit! Mine did not call for the hot sauce.

Pecan Tassies

Reviewed: Nov. 19, 2005
I followed the recipe exactly, but these didn't turn out well. There is not enough filling to even taste. What a waste of ingredients, and butter and pecans are not cheap. Also, if you make them, use a LARGE not a MEDIUM bowl or you will have flour all over your kitchen.

Chocolate-Almond Fudge

Thought this was an excellent recipe. Very easy. I cooked it in my teflon electric skillet which made it easy to control the heat. Ready in no time, and everyone thought it was delicious.

A great cranberry dish. Something light, cool and refrishing to go with the heavy turkey, dressing and gravy. Can be prepared in advance. Also a plus!

Hamburger Soup I

Reviewed: Dec. 11, 2005
I made 2 pots of this at once, and made a couple of changes. I did not have any frozen corn or ketchup, so had to omit those, but added a few potatoes in place of the corn. I used only 3 boullion cubes and 1 can of beef boullion in place of some of the water. After adding the tomato sauce, I was afraid the soup would be too tomatoey, so didn't put the sauce in the 2nd pot. They both turned out equally good. We enjoyed this immensely and I plan to make it again and again. I thought the celery added a lot to the taste, and am surprised that so many left it out. I served this with toasted French bread. The flavor only improves the next day and the soup thickens a bit more. Yummy, yummy, yummy !

Mexican Rice III

Reviewed: Jan. 2, 2006
This is an easy recipe and has an excellent flavor. My husband said it was the best rice I ever made, but as a couple of others mentioned, it is rather mushy. I prefer a firmer textured rice, but that is a personal preference. Overall, quite good, and I will make again.

Banana Loaf Cake II

Reviewed: Apr. 20, 2006
Sorry, but I was terribly disappointed with this recipe. It was so similar to the Pistachio bread recipe at this site that our family loves that I was expecting similar results. It turned out extremely dry and did not even have a very good flavor. I will not make again. One star may be too generous.

My Little Secret

Made this over the weekend. I forgot to add the eggs, but it was good without them. Used real bacon bits just for convenience and added some of the onion tops for color. Will make again. Thanks Lisa for sharing your secret!
