Making Crispy Onion Rings

I made these for supper tonight and only changed the liquid, substituting beer for the club soda because I didn't have any. We really enjoyed them so will definitely make them again.

Homemade Taco Seasoning Mix

I quadrupled this recipe and used 2 1/2 tbsp. to make beef fajitas for supper. I sliced red and green peppers and a yellow onion into 1/4 inch slices and then sliced up l lb. of sirloin steak and added the seasoning and a little olive oil. I let it marinade for about an hour and then cooked in a sizzling hot cast iron frying pan. They were delicious. I could add some ground chipotle pepper for a little heat. I might do this next time. With my home made salsa and a dab of sour cream it was a delicious supper. I stored the rest in a glass jar in my spice cabinet.

Whole Egg Mayonnaise

I made this dressing this morning and used 1/3 cup evoo and the rest of the 2 cup measure using canola oil. It tastes ok, but next time I will not use the olive oil as it is a little too heavy tasting. Perhaps I will use coconut oil as a replacement along with the canola. I will make this recipe again although I am not a big fan of mayo and prefer Miracle Whip, as it has more flavour and body.

Whole Wheat Seed Bread

I am going to make this bread today, but I will cheat and use my bread machine to knead the dough initially. (I blew my left shoulder and being left handed just can't do the dough justice by kneading by hand). I will keep with the original ingredients but cut the recipe in half for 2 loaves except I will use Red River Cereal in place of the cracked wheat and flax seeds as Red River Cereal is made up of cracked wheat, cracked rye and flax seeds. I use it all the time in place of cracked wheat! I make bread all the time and wouldn't recommend doubling or quadrupling the grains because this will make the bread too dry and too grainy, spoiling the texture. Ok, so I made two loaves of this bread. It worked very well in my bread machine but I added probably a cup more of the whole wheat flour while it was kneading as it was way too sticky. After trying the bread, toasted for breakfast I recommend cutting back by half the amount of molasses and honey, as I found it way too sweet. Otherwise it is a very good bread and I will definitely make it again.

Banana Chocolate Chip Cake

I give this recipe 4.5 stars. Like Sara, I also increased the sugar to 1 cup, and used 1 cup of chocolate chips. I baked it in a 9 inch pan lined with parchment for easy removal when it was done. I frosted mine with some leftover butter cream icing made with cream cheese. It made for a nice topping. I will definitely make this cake again.

Funco's Salmon Fish Cakes

This recipe is good. I like all the ingredients but I found I had to dip the patties in beaten egg and then in the bread crumbs so they would stay together when frying. I used a combination of Panko bread crumbs, corn flake crumbs and home made bread crumbs and it worked very well. Oh, and I used my own canned fish instead of cooking the fish fresh.

Butternut Squash Soup II

I made this recipe for lunch today and what a great lunch we had. I switched up the butternut squash for buttercup instead and the results were exceptional. I didn't have to add a thing. I doubled the recipe because the squash was so big so now we have enough left for lunch tomorrow too. I made a loaf of French Bread to go with and what a perfect match. I recommend this soup to anyone who likes a good, hearty soup. I will be making this soup again. Thanks for sharing.

Spicy Baked Sweet Potato Fries

I make sweet potatoes too and put them on my large stoneware bar pan, then I don't have to turn them. I put them in a bowl and drizzle with olive oil and lightly season them with salt, gourmet pepper and vegetable seasoning mix. Then I spread them in a single layer on the pan. They are ready in about 30 to 40 minutes.
