About this Cook
I'm a stay-at-home mom to 3 on-the-go kids. I like to cook, but find I have very little time to devote to that passion. I'm most interested in quick meals that I can get on the table in a pinch. While I am truly a Southerner (think butter, and lots of it), I'm trying very hard to change my evil ways and learn to cook healthier. I love to collect cookbooks even if I never cook anything out of them - currently completing the entire set of Southern Living annual recipes 1979-present. And, my knitting needles, like my kids, are always close at hand!
My favorite things to cook
I really love desserts, unfortunately. I don't like to make things like pies and rolled cookies - I much prefer things that all get dumped in and don't require so much time - instant gratification. I bake a good bit of bread, but I must admit that I use a bread machine to make the dough.. Okay, I'll admit it: I love carbs!

Sugar Cookie Frosting
This was very yummy! My kids enjoyed licking the leftovers out of the bowl and frosting the cookies! :)

Marinade for Chicken
Loved it! Grilled boneless chicken breasts were excellent and so juicy, I'll be keeping this one! I only made 1/4 of the recipe for 6 boneless breasts.

Fluffy Pancakes
As others stated, this recipe needs to be doubled to feed a family. I also added a little vanilla, only 2 tablespoons of vinegar for a doubled recipe (I usually use 1 T vinegar per 1 cup of milk), and a little extra milk because I thought the batter was too thick. These were much better than a box mix, and I always have these ingredients on hand. They were a great Sunday evening breakfast for supper, with fresh strawberries and whipped cream.
